- Place arugula in bowl. Quarter the pear lengthwise and remove the core. Cut into quarters and then in half again. Dress the pear with the juice of 1/2 lemon, thyme leaves, olive oil, salt and pepper. Place a few leaves of dressed greens on each slice of prosciutto with a slice of pear and roll up into a tight bundle. Cut each bundle in half, to make 16 pieces.
PEAR PROSCIUTTO AND ARUGULA FLATBREADS
Steps:
- Preheat oven to 425 F degrees.
- Top each flatbread with 1/2 cup of shredded Asiago cheese. Arrange the prosciutto slices evenly over each flatbread then top with slices of pear.
- Drizzle about a tbsp of BBQ sauce on top of each flatbread.
- Bake for about 8 to 10 minutes or until the flatbreads turn brown.
- Top each flatbread with 1/2 cup of baby arugula, slice and serve.

- Make the Pizza Sauce (if using): Heat olive oil in a large saucepan over medium heat. Add the garlic and cook, stirring for about 45 seconds. Add the (hand-crushetomatoes, the dried oregano and basil and a healthy sprinkling of salt and some freshly ground pepper. Bring to a boil, then reduce heat to medium-low and simmer until thickened, 30-45 minutes. Allow to cool completely before using. Cover and refrigerate if making ahead.
