ROASTED ZUCCHINI



Roasted Zucchini image

This is the simplest of side dishes, endlessly customizable. Try it when you have an abundance of zucchini in the garden.

Number Of Ingredients 9

1 pound zucchini, cut into 2-inch strips
1 ½ tablespoons grapeseed oil
1 pinch salt and ground black pepper to taste
1 pinch garlic powder
1 pinch cayenne pepper
1 serving cooking spray
½ lemon
1 tablespoon chopped fresh parsley
1 pinch sea salt flakes to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Place a rimmed baking sheet in the oven to heat up.
  • Place zucchini in a bowl. Add oil, salt, pepper, garlic powder, and cayenne; toss to coat.
  • Carefully remove the hot baking sheet and spray lightly with cooking spray. Spread out zucchini in an even layer.
  • Roast in the preheated oven until browned, turning halfway, about 20 minutes. Squeeze lemon juice on top and garnish with parsley. Sprinkle sea salt on top.

4 cups mushrooms, sliced
4 cups zucchini, sliced
1/4 cup margarine
1/2 cup spaghetti sauce
1/4 lb Velveeta cheese, cubed
2 teaspoons dried oregano leaves, crushed

Steps:

  • In large skillet, saute vegetables in margarine until crisp-tender. Drain.
  • Reduce heat to low. Add sauce, Velveeta cheese and oregano; stir until Velveeta is melted.

  • Cacio e Pepe; Cook spaghetti al dente, in a bowl, add a good amount of Pecorino Romano, and lots of freshly coarse ground pepper. When the pasta is done, drain it and add it to the bowl with a 1/2 ladle of pasta water.
  • Garlic, Extra Virgin Olive Oil & Peperoncino (hot pepper flakes); Boil pasta in boiling salted water. While the pasta is cooking sauté all ingredients in a large pan, when pasta is al dente, add it to the pan with a ladle of pasta water, stir for a few minutes.
  • Butter, fresh Lemon juice and zest; Melt butter in a large pan, add the lemon juice, salt & pepper to taste, add pasta and a ladle of pasta water, stir for a few minutes.
  • Fresh Tomatoes & Italian Tuna in Olive Oil; (I like Genova), capers, extra virgin olive oil, and zest of one lemon; No pan needed for this dish. While the pasta is cooking add the chopped fresh tomatoes, tuna, capers (be careful not to use too much as they are very salty), zest of a lemon, olive oil, finish off with some freshly ground pepper.

  • Olives, Capers, Cherry Tomatoes: In a large pan, sauté garlic and olive oil; add the olives, capers and cherry tomatoes, cook for a few minutes till the tomatoes are still somewhat wilted, add pasta, mix and serve with or without the cheese.
  • Cream of Peppers: in a food processor add roasted bell peppers (homemade are the best, or you can buy in a jar), add oil, salt, plenty of pepper and 5 walnuts; When pasta is done al dente, drain the pasta and mix.
  • Mushroom Alfredo with Ham and Spinach; in a large pan add a little olive oil and butter, sliced mushrooms, cook the mushrooms till you start to see a little caramelization.
