TOMATO BASIL SOUP



Tomato Basil Soup image

Tomato Basil Soup is a healthy classic soup that's simple to make from scratch and full of flavor! It only takes just over half an hour.

1 tablespoon olive oil
2 tablespoons butter
1 medium onion ((chopped))
1 clove garlic ((minced))
1 dash Italian seasoning
2 (28 fluid ounce) cans whole San Marzano tomatoes ((with juices))
1.5 cups chicken or vegetable broth
1/2 cup heavy cream ((or to taste))
12 leaves fresh basil ((torn))
Salt & pepper ((to taste))

Steps:

  • Add the oil, butter, and onion to a soup pot over medium-high heat. Sauté the onion for 5-7 minutes or until it's lightly browned.
  • Stir in the garlic and Italian seasoning, followed by the tomatoes and chicken broth.
  • Increase the heat to high and bring the soup to a boil. Reduce the heat and simmer for 8 minutes, covered, with the lid slightly ajar.
  • Blend the soup (I like to use an immersion blender) until it's smooth (you may want to let it cool a little bit first). Stir in the cream and basil and season with salt & pepper as needed.

2 cups fresh tortellini ((meat or cheese filled))
1 cup fresh chopped spinach ((uncooked) optional)
Fresh Basil for garnish
28 oz diced tomatoes (canned with juice)
2 cups Progresso™ Chicken Broth
2-3 teaspoons sugar (or to taste)
¼ teaspoon garlic powder
½ teaspoon onion powder
1 cup heavy cream
2 cans Progresso™ Vegetable Classics Tomato Basil Soup

Steps:

  • Combine all soup ingredients in a saucepan except cream. Bring to a boil, reduce heat and simmer 8 minutes.
  • Meanwhile, cook tortellini according to package directions. Add chopped spinach to the boiling water 30 seconds before the tortellini is finished. Drain well.
  • Blend soup mixture with a hand blender. Add in heavy cream and simmer an additional 5 minutes.
  • Stir in tortellini and spinach if using.
  • Place in serving bowls and top with fresh basil and parmesan cheese if desired.

TOMATO BASIL MEATBALL SOUP

Italian tomato basil meatball soup made with baked mini meatballs

1 lb ground beef
1 egg
1/2 cup almond flour
1 tsp salt
1/4 tsp crushed red pepper
2 tbsp avocado oil
4 cloves garlic
1 yellow onion
2 tsp salt
1 tsp dried basil
1/2 tsp dried oregano
1/2 tsp black pepper
4 cups vegetable broth (1 qt container)
2 cups water
2 tbsp tomato past
28oz can of diced tomatoes
3 cups cauliflower rice (fresh or frozen)
Optional: fresh basil for garnish

Steps:

  • Preheat oven to 350F and line a baking sheet with parchment paper
  • Combine ground beef, egg, almond flour, salt and crushed red pepper in a large mixing bowl until a smooth mixture remains
  • Using a 1/2 tbsp scoop, scoop our 40 scoops onto the baking sheet and roll into tight small balls
  • Bake for 12 minutes
  • While the meatballs bake, mince the garlic and dice the yellow onion
  • Heat your soup pot over medium-low heat and add oil, garlic, and onion to the warm pot
  • Saute the garlic and onions until soft and fragrant, about 4 minutes
  • Add salt, pepper, dried basil, and dried oregano to the pot and mix
  • Mix in the tomato paste
  • Pour in the vegetable broth, water, diced tomatoes, and cauliflower rice
  • Bring the soup to a boil, reduce to a simmer, cover the pot and simmer for 20 minutes
  • After the soup simmers for 20 minutes, turn off the heat
  • Either blend the soup directly in the pot with an immersion blender or blend in a standard blender in batches and return to the pot
  • Add the cooked meatballs back into the soup pot and simmer for an additional 10 minutes
  • Garnish with fresh basil and enjoy!

7 cups cold water
1 (12 ounce) can tomato paste
1/3 cup wondra gravy flour
4 tablespoons granulated sugar
3 tablespoons light corn syrup
1 tablespoon cornstarch
4 teaspoons balsamic vinegar
2 teaspoons dried sweet basil leaves
2 teaspoons dried parsley flakes
2 teaspoons olive oil
1 1/2 teaspoons butter flavor seasoning (Butter Buds)
1 1/4 teaspoons salt
1 teaspoon lemon pepper
3/4 teaspoon morton salt substitute
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/8 teaspoon ground fennel
1 small bay leaf (removed)

Steps:

  • NOTE: USE ONE 12-OZ CAN TOMATO PASTE, OR TWO 6-OUNCE CANS. USE VERY COLD WATER. (STEP 1): VIGOROUSLY whisk ingredients in a 2 1/2 quart saucepan until smooth.
  • BRING mixture to a boil for one minute while whisking then reduce heat.
  • SIMMER soup for 15 minutes, then remove bay leaf.
  • LADLE into serving bowls and garnish as desired.
  • SERVE and enjoy.

This is the closest I have managed to copying the Tomato Basil soup at La Madeline. This is the best soup for cold winter nights, and I have yet to meet anyone who did not like it.

Number Of Ingredients 7

4 cups whole canned tomatoes (or 8-10 fresh peeled, and chopped)
4 cups tomato juice, & broth mix of (50/50, I used vegetable broth to make the recipe vegetarian)
8 basil leaves, chopped finely or 1 tablespoon dried basil
1 cup cream
8 tablespoons sweet unsalted butter
1/4 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Combine tomatoes, tomato juice and broth in a saucepan and simmer for 30 minutes.
  • Puree with basil in the blender. Make sure that this is smooth - I always strain it.
  • Return to saucepan. Add cream and butter while stirring over low heat.
  • Serve and enjoy!

  • In a large heavy-bottomed pot over medium heat, melt butter. Stir in onions and cook until softened, about 5 minutes. Stir in flour cook, stirring frequently, until paste begins to darken, 1-2 minutes.
  • Slowly whisk in chicken broth. Then, stir in crushed tomatoes, baking soda, ½ teaspoon salt, bay leaf, and brown sugar and bring to a boil.
  • Reduce heat to medium-low and simmer until slightly thickened, about 4-5 minutes. Remove from heat.
  • Discard bay leaf, and puree soup in batches to desired consistency. Return pureed soup to the pot and stir in cream. Season with salt and pepper, and serve with garnishes (optional).
