Steps:
- In a small bowl, stir together flour, baking soda, baking powder and salt. Set aside.
- In a large mixing bowl, cream together butter and sugar until smooth. Beat in the egg, Princess emulsion and juice. Gradually blend in dry ingredients.
- Scoop the dough into about 18 1-1/2" inch balls (about 53 grams each) and place on an ungreased cookie sheet. Slightly flatten the top of each cookie with the bottom of a glass that has been dipped in sugar.
- Refrigerate the cookies for at least 1 hour.
- In a small bowl, combine the heavy cream and vinegar. This mixture will get very thick and curdle. Use a pastry brush to brush this mixture on top of the cookies.
- Sprinkle the top of the cookies with extra granulated sugar or sprinkles.
- Bake at 375 degrees for 10 minutes, removing the cookies just before the edges get brown.
- Allow the cookies to cool for 5 minutes, then move them to a flat surface to cool.
- Store in an airtight container.

PRINCESS COOKIES
This recipe gets its name from a story that I read to my son about a princess whose only wish is to find a prince that can make a cookie that is as tiny and delicate as she is. This is a delicious little lemon cookie that will not disappoint! They can either be drizzled with a lemon glaze made of confectioners sugar and fresh lemon juice, or rolled in sugar before baking for a more subtle lemon flavor.

- Whisk together the flour, baking soda, and salt in a bowl until thoroughly combined. In a mixing bowl, beat the butter and sugar with an electric mixer until creamy, about 5 minutes, then beat in eggs, one at a time, incorporating each before adding the next. Beat in the lemon juice, lemon zest, and vanilla extract. Gently mix in the flour mixture until just incorporated. Chill the dough about 30 minutes.
- Scoop up about 1 1/2 teaspoon of dough per cookie, gently form into a ball, and place the balls onto baking sheets about 2 inches apart.
- Bake in the preheated oven until the cookies are set and just beginning to brown at the edges, about 8 minutes; cool on baking sheets for 1 minute before removing to finish cooling on racks.

Steps:
- Preheat the oven to 350 degrees Fahrenheit and prepare a sheet pan by lining it with parchment paper or a silicone baking mat.
- In a large bowl, stir together the cookie mix, melted butter, and egg until fully combined.
- Separate the cookie dough evenly into four small mixing bowls.
- To each bowl, knead in 3 Tablespoons of each color of flavored gelatin. You should have four different colored doughs when you finish. (I found it was easier to use my hands for this part)
- Place the sugar in a shallow bowl, you will be rolling your cookies in it as you prepare them.
- Scoop out the cookies using a 2 Tablespoon cookie scoop and roll them into balls. Roll them in the sugar until completely covered.
- Place the balls on the prepared sheet pan with 2 inches between each cookie. Bake in the oven for 10-13 minutes or until the tops of the cookies get firm to the touch. You may begin to see a golden color on the tops of the cookies, if so take them out so that they don't overcook.
- Let cool on the baking sheet for 3-5 minutes and enjoy warm or cooled!
