1 whole uncut ribeye (about 12 oz. per person)
Marinade:
2 Tablespoons black pepper
2 Tablespoons sugar
1/2 cup kosher salt
1/4 cup garlic (chopped)
1/4 cup liquid smoke
1/4 cup soy sauce

Steps:

  • The first step is to make the marinade. You will need to prepare this two days in advance. To make, mix all ingredients for marinade. Mix well until combined and refrigerate overnight. This allows enough time to integrate all those wonderful flavors together.
  • The second step is to marinade the ribeye. Place the prime rib on a rack in a large pan. Pour half the marinade over the top side and rub it all over. Next, flip the meat over, pour the rest of the marinade, and rub all over. Cover the pan and refrigerate overnight.
  • Preheat your oven to 450 degrees Fahrenheit. Bake the meat for 30 minutes just until the outside of the meat is brown and seared. Then, lower the heat to 250 degrees Fahrenheit. Continue baking for another two hours or until your meat thermometer says 120 degrees.
  • That's the temperature for medium-rare. If you want to increase the level of doneness, wait until the reading is 10 degrees higher for each state (i.e. 130 for medium, 140 for medium-well, etc.).
  • Give your meat at least an hour to rest before slicing. This will give the juices time to settle in the meat, resulting in an even juicier and tastier prime rib.
  • Slice and enjoy. Congratulations, you did it! It's time to reap your rewards. Carve that tender meat, have a taste, and serve with Au jus.

DIRECTIONS
FOR THE RUB:
3 12 all of the fat from the prime rib. Evenly spread the rub all over the prime rib. Cover with plastic wrap and refrigerate for at least 3 hours or as long as 12 hours.

1 4-bone prime rib, bones and excess fat removed and reserved
4 teaspoons kosher salt
Freshly ground black pepper
4 sprigs fresh rosemary
4 cloves garlic, unpeeled, smashed
4 ounces arugula (optional)
2 teaspoons extra-virgin olive oil (optional)

Steps:

  • Liberally season the prime rib with the salt and some pepper and refrigerate overnight.
  • An hour before cooking, remove the roast from the refrigerator to allow it to come to room temperature.
  • Meanwhile, preheat the oven to 400 degrees F.
  • Put the reserved ribs in a roasting pan bowed-side up (the ribs will be acting as the roasting rack). Scatter any fat and meat trimmings in the pan around the bones. Roast the bones and trimmings for about 30 minutes, or until the fat starts to render.
  • Remove the pan from the oven, put the rosemary sprigs on top of the bones, then top with the prime rib. Put the smashed garlic in the bottom of the pan with the trimmings. Baste the beef with the fat drippings and return the pan to the oven.
  • Cook for 30 minutes and then baste the roast again.
  • Reduce the heat to 350 degrees F and cook until the meat is medium rare (an internal temperature of 125 degrees F to 130 degrees F), about 1 hour, 15 minutes, basting the roast every 30 minutes until it is done. Keep in mind that the roast will continue to cook while resting.
  • Remove the roast from the oven and put it on a cutting board to rest, uncovered, for 20 minutes. Slice the prime rib to the desired thickness and garnish with the arugula and olive oil.

1 teaspoon herbes de Provence

Steps:

  • Place rib roast on a plate and bring to room temperature, about 4 hours.
  • Preheat an oven to 500 degrees F (260 degrees C).
  • Combine butter, pepper, and herbes de Provence in a bowl; mix until well blended. Spread butter mixture evenly over entire roast. Season roast generously with kosher salt.

½ cup Dijon mustard

Steps:

  • Preheat the oven to 500 degrees F (260 degrees C).
  • Make slits all over the roast by pricking with a small knife. Insert slivers of sliced garlic. Season the roast with salt and pepper, then spread generously with mustard. Place on a rack in a roasting pan, and cover.
  • Roast for 60 minutes in the preheated oven. Turn off oven. Leave oven closed, and do not peek for 90 minutes. The internal temperature of the meat should be at least 140 degrees F (60 degrees C) for medium-rare, or 155 degrees F (68 degrees C) for medium.
