Categories     Main Course

Time 30m

Number Of Ingredients 14

2 tablespoons butter
1 tablespoon olive oil
1 small zucchini ((diced))
1/2 cup frozen peas
1/2 bell pepper ((use any color))
5 ounces tomatoes ((I prefer grape or cherry, cut into halves))
1 small carrot ((use a vegetable peeler to cut into ribbons))
3 cloves garlic ((minced))
1 teaspoon fresh lemon juice
1 dash Italian seasoning
1 tablespoon fresh basil ((torn/sliced thin))
1/2 cup freshly grated parmesan cheese
8 ounces uncooked pasta
Salt & pepper ((to taste))

Steps:

  • Prep your ingredients and boil water for your pasta (cook it al dente according to package directions). Add the oil and butter to a skillet over medium-high heat.
  • Once the pan is hot, add the vegetables and garlic and sauté, stirring often, for about 5 minutes until the vegetables are tender-crisp.
  • Stir in the lemon juice, Italian seasoning, and basil.
  • Before draining the pasta, add a splash of the pasta water (a tablespoon or two) to the skillet. Drain the pasta and add it to the pan and toss. Just before serving, stir in the parmesan cheese. Season with salt & pepper as needed.

Provided by Giada De Laurentiis

Categories     main-dish

Time 45m

Yield 6 servings

Number Of Ingredients 12

3 carrots, peeled and cut into thin strips
2 medium zucchini or 1 large zucchini, cut into thin strips
2 yellow squash, cut into thin strips
1 onion, thinly sliced
1 yellow bell pepper, cut into thin strips
1 red bell pepper, cut into thin strips
1/4 cup olive oil
Kosher salt and freshly ground black pepper
1 tablespoon dried Italian herbs or herbes de Provence
1 pound farfalle (bowtie pasta)
15 cherry tomatoes, halved
1/2 cup grated Parmesan

Steps:

  • Preheat the oven to 450 degrees F.
  • On a large heavy baking sheet, toss all of the vegetables with the oil, salt, pepper, and dried herbs to coat. Transfer half of the vegetable mixture to another heavy large baking sheet and arrange evenly over the baking sheets. Bake until the carrots are tender and the vegetables begin to brown, stirring after the first 10 minutes, about 20 minutes total.
  • Meanwhile, cook the pasta in a large pot of boiling salted water until al dente, tender but still firm to the bite, about 8 minutes. Drain, reserving 1 cup of the cooking liquid.
  • Toss the pasta with the vegetable mixtures in a large bowl to combine. Toss with the cherry tomatoes and enough reserved cooking liquid to moisten. Season the pasta with salt and pepper, to taste. Sprinkle with the Parmesan and serve immediately.

INSTANT POT MEAT SAUCE RECIPE

Instant Pot Meat Sauce Recipe image

This Instant Pot meat sauce is thick, hearty, and flavorful. Make this pasta sauce recipe tonight for a quick and easy family favorite meal.

Provided by Olivia Ribas

Categories     dinner     Sauces

Time 40m

Number Of Ingredients 17

1 ½ tablespoons olive oil
½ cup white onion (diced)
1 cup carrot (diced)
½ cup celery (diced)
½ cup pancetta (diced)
2 pounds grass-fed ground beef
½ tablespoon clove garlic - minced
1 ½ tablespoon tomato paste
1 teaspoon dried basil
1 ½ teaspoons Italian Seasoning
1 teaspoon salt
black pepper to taste
½ cup beef stock
28 oz 1 can crushed tomatoes
2 cups any tomato sauce you prefer
2 bay leaves
2 tablespoons chopped fresh parsley leaves

Steps:

  • Set a 6-qt Instant Pot® to the high saute setting. Add olive oil, onion, carrot and celery. Cook, stirring occasionally, until onions in the pot are translucent, about 4-5 minutes.
  • Add pancetta and cook for 2 minutes or so. Add ground beef and cook it until it's browned about 7-10 minutes. Don't forget to use a wooden spoon to break the meat up into small pieces in the pot; drain excess fat.
  • Stir in garlic, tomato paste, dried basil, Italian seasoning, salt and black pepper.
  • Stir in beef stock, scraping any browned bits from the bottom of the pot. Stir in crushed tomatoes, tomato sauce and bay leaves.
  • Put on the lid, lock it and check to see if the vent is at sealing. Then, select manual setting; adjust pressure to high, and set time for 20 minutes. Mine took about 15 minutes to reach pressure. After the 20 minutes is up, do a Quick Release, which means move the valve to venting to release the steam.
  • Select low sauté setting and simmer the sauce uncovered for about 5 minutes. Don't forget to stir often. Garnish with fresh chopped parsley and serve immediately.

  • Saute the veggies: Heat 2 tbsp olive oil in a large skillet or wok pan over medium heat. Add 1 minced garlic clove and cook, stirring, for one minute. Keep an eye on it so it doesn’t burn. Add the broccoli, red pepper, and peas, and cook for one minute, stirring occasionally. Add ¼ cup of the broth and continue cooking (and occasionally stirring) the vegetables for about 5 – 7 minutes, or until cooked but not mushy. Go ahead and taste them to see if they are how you like and cook them more if you want them softer. I like them to stay a little crunchy.
  • While the veggies cook, heat the remaining 3 tbsp olive oil in a saucepan over medium. Add 1 clove minced garlic and saute for 1 minute, stirring. Add in the wine and simmer for about 5 – 8 minutes, or until the liquid has reduced by about half. Add in 1/2 cup broth and stir. Remove from heat and add the butter, stirring until melted.
  • When the vegetables are done, add in the spinach and stir to combine, until just slightly wilted. Add in the zoodles and stir just to combine/warm (the zoodles are served raw here, you are just warming them slightly). Remove from the heat and add the sauce. Sprinkle generously with parmesan and serve!
