PRIMANTI-STYLE SANDWICHES
Anyone who has been to Pittsburgh can tell you about the wonderful Primanti Brothers sandwiches which are a local delicacy. Coleslaw, fries, cheese, and meat (or no meat for you veggies) on thickly sliced Italian bread brings a taste of Pittsburgh to wherever you may be. You can substitute your favorite meat for the capicola.

Steps:
- Whisk together the mayonnaise, milk, white vinegar, and white sugar in a large bowl; add the cabbage and toss to coat. Chill in refrigerator at least 1 hour.
- Heat oil in deep-fryer or large deep pan to 375 degrees F (190 degrees C); add the potato slices; cook until crispy and golden brown, 5 to 6 minutes. Drain on paper towels.
- Place a large skillet over medium heat. Arrange the capicola in four separate stacks in the skillet and top each stack with 1 slice mozzarella cheese, provolone cheese, and Swiss cheese; heat until the cheese begins to melt.
- Arrange 4 slices of Italian bread on 4 separate plates. Top each slice with a stack of capicola and melted cheese; about 1 1/2 cups of the cabbage mixture, 1 slice onion, 1 slice tomato, and about 1/4 of the fried potatoes. Top with the remaining bread slices. Cut each sandwich in half to serve.

PRIMANTI'S SANDWICH FROM PITTSBURGH RECIPE BY TASTY

Steps:
- Slice the Italian loaf, cutting slices about an inch (2 cm) in thickness. (Make sure the bread is room temperature for the best taste!)
- Place 8 slices of capicola, all stacked on top of each other, on a pan or griddle. Cook over medium heat for 3-4 minutes.
- Flip the capicola over and add the provolone cheese. Cook until the cheese melts.
- Place the capicola and cheese on one slice of bread.
- Top with fries, coleslaw, tomato slices, and top with the other slice of bread.
- Enjoy!

PRIMANTI BROS. STYLE SANDWICH
My tasty take on a Pittsburgh Original. I live just north of Pittsburgh, and not far form a Primanti's. We go there quite often, but when I want to save money or am really craving a sandwich, I just make one. Or course it's not as god as the original, but pretty darn close! For the recipe I put corned beef as my meat, but you an use any meat you prefer. Primanti's offers up Pastrami, Ham, Cappicola, steak, fried egg, turkey, and much more on thier sandwiches. This recipe is for two sandwiches.

- Make the cole slaw by mixing the cole slaw, vegetable oil, sugar, onion powder, salt, and pepper together in a bowl.
- cook your fries. I use the ore-ide oven chips, those can be cooked like normal in the oven, or microwaved. To get the true primanti's fry texture I microwave these oven chips for about three minutes. It works best with these because they are pre-cooked, and tase well when microwaved.
- assemble your sandwich by putting the meat on the bottom piece of bread.
- put the cheese on the meat.
- put the french fries on.
- put as much cole slaw as you like on.
- place two slices of tomato on top
- place your top piece of bread on.
- cut in the middle, and viola.a Primanti!

PRIMANTI BROS. SANDWICHES
Anyone who has spent time in Pittsburgh probably has heard of Primanti Bros.

- 1 For the slaw: Combine the cabbage, sugar, salt and celery seed in a colander set over a medium bowl
- 2 Let stand at least 1 hour and up to 4 hours; the cabbage will be wilted (about 4 cups total)
- 3 Discard the draining liquid in the bowl; rinse and dry the bowl, then transfer the wilted cabbage to the bowl
- 4 Add the oil and vinegar; toss to coat
- 5 Season with pepper to taste
- 6 Cover and refrigerate until ready to serve
- 7 For the twice-fried potatoes: Preheat the oven to 200 degrees
- 8 Line a few large baking sheets with several layers of paper towels
- 9 Fill a large bowl with cold water
- 10 Cut the (unpeeled) potatoes lengthwise into 1/4-inch-thick sticks
- 11 Submerge in the cold water
- 12 Rinse in subsequent changes of cold water to remove all visible starch, then drain in a colander and spread the potatoes on the paper towels, patting the potatoes dry
- 13 Heat the oil in a large, heavy pot over medium-high heat, until the oil temperature reaches 320 degrees
- 14 Fry the potatoes in 4 batches; each batch will take 2 to 4 minutes
- 15 Stir occasionally as they cook, until the fries are soft and cooked through but still pale
- 16 Allow enough time for the oil to return to 320 degrees between batches; use an instant-read thermometer to monitor the oil
- 17 Use a slotted spatula to transfer the potatoes to the lined baking sheets
- 18 Increase the heat to high (or as needed) so that the temperature of the oil reaches 375 degrees
- 19 Preheat the oven to 200 degrees
- 20 Refresh the paper towels on the baking sheets as needed
- 21 Cook the fries a second time, working in 4 batches; each batch will take 2 to 3 miinutes, until the fries are crisp and golden brown
- 22 Transfer to the lined baking sheets
- 23 Immediately season lightly with salt, then place in the oven to keep the fries warm
- 24 For the meat and cheese: Melt the butter in a heavy skillet over medium heat
- 25 Have ready a large baking sheet
- 26 Separate the ham slices and add to the skillet, turning them as needed until the slices are warmed through
- 27 Transfer the slices to the baking sheet, creating 8 equal portions
- 28 Top each with a slice of provolone cheese
- 29 Place in the oven (along with the fries) just until the cheese has melted
- 30 For assembly: Place the portions of cheese-topped ham on 8 bread slices
- 31 Top with a large handful of the warm fries, then pile about 1/2 cup of the slaw on each portion
- 32 Garnish with 2 tomato slices for each portion; use the remaining 8 pieces of bread to finish each sandwich
- 33 Serve warm

- Cole Slaw: Combine the shredded cabbage, shredded carrots, and onion in a bowl. Place in refrigerator for at least an hour. You'll need 1/2 cup per sandwich. In a pot, dissolve the sugar into the vinegar and oil over low heat. Add in salt and pepper and cool. Wait until completely cool before pouring over cabbage mixture, chill in refrigerator for at least an hour. Sandwich: In a pan, over medium heat, add just enough oil to coat the bottom of the pan. Add sliced meat and heat for about a minute. After flipping, add slices of provolone cheese and cover until melted. Place your meat and cheese slices on the first piece of Italian bread, then place one cup of fries on top of the meat. Pile on the cole slaw. Then add your sliced, fresh tomatoes. And finally, top it off with the other slice of Italian bread.

The Primanti Brothers opened their restaurant in Pittsburgh in the 1920s. Their idea was to create an eating place that was simple but offered tasty food. It is no wonder that the Primanti Sandwich was the result -- it's a whole meal in each bite. Ham, french fries, tomato, provolone cheese, and coleslaw are stuffed between two slices of Italian bread and served on wax paper. You can't get it any simpler than that.

PRIMANTI'S SANDWICH

- Toss together the cabbage, vinegar, olive oil, celery seed, salt, and sugar in a large bowl. Let the slaw sit and the flavors mingle while you make the fries.
- Cut unpeeled potatoes into sticks about 1/4 to 1/2 inch thick. Heat 1 inch of vegetable oil in a deep skillet over medium heat. The oil is ready when the tip of a potato really sizzles on contact. Carefully slide the potatoes into the oil to fry over moderate heat, turning occasionally with tongs, until crisp, golden brown, and cooked through, about 8 to 10 minutes. Don't let the fries brown too quickly! (They might remain raw on the inside and burned on the outside if they are cooked too fast.) Drain on paper towels, and season with salt.
- Heat another large skillet over high heat. When the skillet is hot, sear the sliced capicola until crisped on both sides, about 1 minute per side. Remove skillet from heat, and make two stacks of capicola on a side plate, laying the sliced provolone on top, to get it started melting while you assemble the sandwiches.
- To assemble, lay two slices of bread on your work surface. Top with the capicola and melted cheese. Top with the fries, slaw, and sliced tomatoes.Top with the remaining bread, cut in half, and serve immediately.
PRIMANTI BROTHERS SANDWICH
Steps:
- Mix all ingredients together in a large container, making sure that the pepper is evenly distributed throughout the mixture. Cover and refrigerate for at least two hours before serving. Prior to serving, give the container a good shake. Sear a large portion of veggie deli meat on a hot griddle or in a frying pan. Once the meat is hot and has been flipped over at least once, cover it with a thick slice of provolone. Keep heating it until the cheese melts. Remove meat from the pan and place on a slice of bread. Top it off with a handful of hot fries, coleslaw, and a slice of tomato. Hold it all together with a second slice of bread. Enjoy!!

Yinz can go to dahntahn Pittsburgh and get a Primanti's® sandwich or you can create it yourself. You can choose a different type of meat (capicola, turkey, roast beef, etc.) if you prefer.

- Make the slaw by mixing together the cabbage, 2 tablespoons of vegetable oil, the vinegar, sugar, adobo seasoning, and black pepper until thoroughly combined. Cover and refrigerate.
- Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- Cut the potatoes into 1/4-inch thick fries, and fry until they float and are golden brown, 4 to 5 minutes. Set the fries aside.
- Preheat oven to 225 degrees F (110 degrees C).
- Place the bread on a baking sheet, and toast to a light brown in the preheated oven, 3 to 5 minutes. Remove half the bread slices.
