1 cup packed brown sugar
1 cup shortening
1 cup flaked coconut
½ teaspoon salt
3 cups rolled oats
1 teaspoon vanilla extract
1 cup white sugar
2 eggs
1 teaspoon baking soda
1 teaspoon baking powder
2 cups all-purpose flour
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • Cream together shortening and sugars. Mix in flour, salt, soda, baking powder, and oatmeal. Stir in coconut, eggs, vanilla, and nuts. Drop by teaspoonfuls onto cookie sheets.
  • Bake for 15 minutes. Cool on wire racks.

1 cup shortening (NOT BUTTER!!)
2 eggs, beaten
2 cups flour
1/2 tsp salt
1 tsp baking soda
1 tsp baking powder
1 tsp vanilla
1 cup flake coconut
3 cups quick oatmeal
1/2 cup chopped nuts (optional)

Steps:

  • Cream together sugars and shortening. Add eggs. Sift together flour, salt, baking soda, baking powder - add to mixture. Add remaining ingredients.
  • Form dough into small balls. Place on cookie sheet and press flat.
  • Bake at 350 degrees F until brown approx. 10-12 minutes.

1 cup firmly packed brown sugar
1 cup granulated sugar
2 large eggs, beaten
2 cups all-purpose flour, sifted
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon vanilla extract
1 cup flaked coconut
1/2 cup walnuts, chopped
3 cups quick-cooking oats

Steps:

  • Cream oleo and sugars until fluffy.
  • Beat in eggs.
  • Sift flour with baking soda, baking powder and salt.
  • Stir flour mixture into creamed mixture.
  • Add vanilla extract.
  • Mix in coconut, nuts and rolled oats until uniformly blended.
  • Roll into 1 1/4 inch balls and space 2-inches apart on lightly greased baking sheets.
  • Using your fingers, flatten balls into patties about 1/4" thick, evening up ragged edges.
  • Bake in 375°F oven 8-10 minutes or until pale golden brown.
  • Remove to wire rack to cool.
