PRETZEL-CRUSTED FISH & CHIPS
Pretzel-crusted cod fillets bake up crisp and delicious in this easy fish and chips recipe. Get out the potatoes and let's get started!

Steps:
- Heat oven to 425ºF.
- Toss potatoes with 1/4 cup dressing; spread onto rimmed baking sheet sprayed with cooking spray. Bake 27 min.
- Meanwhile, empty coating mix into pie plate. Brush both sides of fish fillets with remaining dressing. Dip, 1 at a time, in coating mix, turning to coat both sides of each fillet. Place in single layer on separate baking sheet sprayed with cooking spray.
- Add fish to oven with potatoes. Bake 10 to 13 min. or until fish flakes easily with fork and potatoes are tender. Meanwhile, combine remaining ingredients.
- Serve fish with potatoes and mayo mixture.

PRETZEL COATED FRIED FISH
Steps:
- Heat the oil in a deep fryer to 350 degrees F (175 degrees C).
- Mix the flour, salt, and pepper in a large resealable plastic bag. Place cod in the bag, and gently shake to coat. Place eggs and crushed pretzels in two separate shallow dishes. Dip coated cod in the eggs, then in the crushed pretzels.
- Fry coated fish 10 minutes in the preheated oil, turning once, until golden brown and easily flaked with a fork.

- Sprinkle catfish with salt and pepper. Whisk the eggs, mustard and milk in a shallow bowl. Place flour and pretzels in separate shallow bowls. PRETZEL CRUSTED COD WITH APRICOT DIJON SAUCE
Steps:
- COMBINE salad dressing and seasoned salt in a small bowl. Pulse pretzels in a food processor until pretzels are finely chopped, leaving some small pieces; this makes about 1 cup. Place in shallow dish.
- SPREAD each side of fish with salad dressing mixture; coat with crushed pretzels. Heat 2 tablespoons oil in large nonstick frying pan over medium heat. Saute fish slowly, cooking 3 to 4 minutes per side (or until golden brown and internal temperature reaches 145 degrees F) adding additional oil if necessary. Keep fish warm.
- WHISK apricot preserves, Dijon mustard and half-and-half together in a small saucepan over medium-high heat. Cook until sauce is creamy and thickens slightly. Serve sauce over fish. Garnish with fresh chopped parsley, if desired.

- Make the sauce: Mix the onion, both mustards, the mayonnaise, paprika, garlic powder and salt to taste in a bowl. Set the sauce aside.
- Make the chips: Heat 1/2 inch vegetable oil in a large skillet over medium heat. Gently pat the pickle slices dry with a paper towel.
- Put the pretzels in a large resealable plastic bag and crush into coarse crumbs using a rolling pin or heavy pan; transfer to a plate. Whisk the eggs in a shallow bowl and put the flour in another bowl. Dredge the pickle slices in the flour, shaking off any excess; dip in the beaten eggs, then dip in the pretzel crumbs, turning to coat. - Beat eggs in a bowl. Pour pretzels into a separate bowl. Pour flour into a shallow bowl.
