All-in-One Cookie Dough
1 large egg white
1 teaspoon water

Steps:

  • Preheat oven to 350 degrees. On a lightly floured work surface, drop All-in-One Cookie Dough by heaping tablespoons. Using hands, gently roll each mound into an 8-inch rope.
  • Gently bend one end of each rope into a loop.
  • Bring other end of rope over first loop, forming pretzel.
  • In a small bowl, whisk 1 large egg white with 1 teaspoon water. Brush cookies with egg wash. Sprinkle with desired topping.
  • After forming cookies, place on parchment-lined baking sheets, 1 inch apart. Bake until pale golden, 13 to 15 minutes, rotating sheets halfway through.

1/2 cup large flake oats (not instant or quick oats) 125 mL
1 tsp baking soda 5 mL
pinch of salt
1 cup Classic Mini Twists Pretzels, broken into large pieces 250 mL
1/2 cup semi-sweet chocolate chips and chunks 125 mL
1/2 cup puffed rice cereal 125 mL

Steps:

  • Preheat oven to 375°F (190°C). Using a hand mixer on medium speed or a whisk, cream together butter and sugars until light and fluffy, then add the egg and vanilla. Mix until just combined.
  • In a large bowl, combine flour, coconut, oats, baking soda and salt. Add the flour mixture to the butter mixture, stirring with a wooden spoon until combined. Blend in pretzels, chocolate and cereal until just combined.
  • Drop about 30 spoonfuls of cookie dough, roughly 2 in. (5 cm) apart, onto parchment paper-lined baking sheets. Bake in centre of oven, 8 min. for chewy cookies, 10 min. for crisp ones. Cool on wire racks.

1/2 cup mini chocolate chips
3 tablespoons brown sugar
1/8 teaspoon cinnamon
1 egg yolk, whisked
1 1/2 tablespoons soft pretzel salt

Steps:

  • Preheat the oven to 375 degrees F.
  • Roll the pizza dough into a 14-by-16-inch rectangle. With the longer side facing you, cut the dough into 3 even pieces horizontally. Sprinkle the chocolate chips, brown sugar and cinnamon evenly over each piece of dough, leaving a 1/2-inch border around the edges. Roll each piece of dough into a long tube and pinch along the seam to seal. Twist into a pretzel shape and place on a parchment-lined baking sheet. Repeat with the remaining 2 pieces of dough.
  • Brush each pretzel with the egg yolk. Sprinkle evenly with the salt. Bake until golden brown, about 25 minutes.

Steps:

  • Preheat oven to 170 degrees.
  • Open the bags of pretzels and remove all the unbroken pretzels.
  • Place them on waxed paper-lined cookie sheets in a single layer.
  • Unwrap Hershey's Kisses, place one on each pretzel, repeat for an entire cookie sheet.

Pretzel shortbread was created by Lost Bread Co. in Philadelphia as a way to use up stale pretzels and has since gained a cult following. To create our own version, we started with a classic shortbread base and tested it with a variety of pretzel styles to find our favorite. Butter pretzels were the winners--though regular pretzel thins and old-fashioned pretzels also work. A baking soda and egg wash gives these cookies a deep brown color and shine--like a pretzel rod--and pretzel salt really drives home this cookie's origins (although coarse salt or even demerara sugar will work too). The resulting cookie is salty, sweet, buttery and crunchy.

1 heaping cup butter-style pretzels, such as Snyder's Butter Snaps (about 46 pretzels; about 2 ounces)
2 1/2 cups all-purpose flour (see Cook's Note)
3 tablespoons cornstarch
3 tablespoons confectioners' sugar
1/4 teaspoon fine salt
3 sticks (1 1/2 cups) unsalted butter, at room temperature
3/4 cup packed dark brown sugar
1 tablespoon baking soda
1 large egg, lightly beaten
1 tablespoon pretzel salt or coarse salt
1 1/2 cups semisweet chocolate chips
1 tablespoon coconut oil

Steps:

  • Process the pretzels in a food processor until finely ground and the consistency of flour. Measure 1/2 cup of the ground pretzels into a bowl (discard any remaining ground pretzels). Whisk in the flour, cornstarch, confectioner' sugar and fine salt.
  • Add the butter and brown sugar to a stand mixer fitted with the paddle attachment and beat on medium speed, scraping down the sides of the bowl as necessary, until light and fluffy, about 2 minutes. Add half of the flour mixture and mix on low just to combine, about 20 seconds. Add the remaining flour mixture and mix on low until it comes together to form a dough.
  • Turn the dough out onto a 14-inch piece of parchment and form into a ball. Place the parchment in a 9-by-13-inch jelly roll pan or baking sheet and press the dough into an even rectangle the size of the pan using the bottom of a measuring cup. Cut the dough in half horizontally, then cut in half vertically to make 4 quarters. Cut each quarter into 10 slices to make 40 narrow rectangles (the ends might be less than perfect, but that's ok). Freeze for 20 minutes.
  • Position a rack in the middle of the oven and preheat to 350 degrees F.
  • Add the baking soda to 1/2 cup warm water and mix well.
  • Brush the dough evenly with the baking soda mixture and then with the beaten egg. Sprinkle with the pretzel salt.
  • Bake, rotating the pan halfway through, until the shortbread is deep brown and cooked through, 45 to 55 minutes. Let stand for 5 minutes in the pan, then carefully lift the shortbread onto a cutting board. Using the previous cuts as a guide, carefully cut into bars. Let cool completely, about 25 minutes.
  • Melt the chocolate chips and coconut oil in a double boiler over low heat. Transfer to a small bowl. Dip the lower third of each cookie in the chocolate and place on a clean piece of parchment. Refrigerate for 10 minutes to allow the chocolate to harden. Store the cookies in an airtight container for up to 5 days.

  • In a large bowl, using an electric mixer, or a stand mixer, cream butter and the sugars together. Add in the vanilla, corn syrup, and eggs. Beat until just combined.
  • Add the dry ingredients to the wet ingredients and mix until well combined.
  • Fold in the caramel bits, chopped walnuts, and chopped pretzels.
  • Roll cookie dough into 1 inch balls and place them on your prepared baking sheet. Press dough balls slightly and add additional toppings into the dough.
  • Bake for 9-10 minutes or until the edges are slightly browned.
  • Remove from oven and let cool on baking sheet for 5 minutes then transfer to a wire rack to cool completely.
