PENNE PASTA BAKE RECIPE
Pure comfort food, this Penne Pasta Bake recipe has a meaty, creamy sauce and lots and lots of cheese. It is perfect for a busy night, and is perfect for feeding a crowd.

Steps:
- Bring a large pot of salted water to a boil. Add the pasta and cook until al dente. Drain.
- Meanwhile, in a large skillet, brown the ground beef. Add the onion and cook until softened. Add the spaghetti sauce and allow to simmer for 15 minutes. Stir in the sour cream. Add the drained pasta and stir to coat.
- Preheat the oven to 350F. Spray a 2 quart baking dish with nonstick cooking spray. Pour half of the pasta into the baking dish. Top with half of the Provolone and half of the Mozzarella. Pour the remaining pasta on top and top with the remaining Provolone and Mozzarella, and sprinkle the Parmesan on top.
- Bake until the cheese is melted and bubbly, about 30 minutes. Sprinkle with chopped parsley before serving.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
- Bring a large pot of lightly salted water to a boil. Place pasta in the pot, cook for 8 to 10 minutes, until al dente, and drain.
- Heat the oil in a saucepan over medium heat. Stir in the mushrooms, cook 1 minute, and set aside. Melt margarine in the saucepan. Mix in flour, garlic, and basil. Gradually mix in milk until thickened. Stir in 1 cup cheese until melted. Remove saucepan from heat, and mix in cooked pasta, mushrooms, spinach, and soy sauce. Transfer to the prepared baking dish, and top with remaining cheese.
- Bake 20 minutes in the preheated oven, until bubbly and lightly brown.

- Cook pasta according to package directions; drain. Meanwhile, in a large skillet, heat oil and butter over medium-high heat. Add ham, red pepper and onion; cook and stir 4-6 minutes or until ham is browned and vegetables are tender. Add garlic and herbs; cook 1-2 minutes longer., Stir in broth and lemon juice. - 1. One hour before. Cut pork tenderloin against the grain into 1 inch medallions and then pound flat and thin. Marinate in you favorite Italian dressing. You can do this up to 24 hours before.
- 2. You will need three pans for this. One to boil your pasta. A large skillet to make you pasta sauce and combine with the pasta. A large saute pan to brown and cook the tenderloin.
- 3. Bring a pot of water to boil and cook you pasta per directions on package.
- 4. While the pasta is cooking. Heat large skillet and add oilve oil, onions and garlic and saute over medium heat until onions soften.
- 5. Add peppers drained, tomato and green beans and saute until tomato dissolves into sauce this is usually about 10 minutes. Stir frequently you don't want anything to brown, just soften.
- 6. Turn off heat Add about 1/4 cup of shredded asiago cheese. If you want more cheese use it as garnish. If you try to mix it into the sauce it will clump.
- 7. When pasta is done, drain and add to sauce. Stir to coat everything. Cover and set this aside
- 8. In the Saute pan add olive oil. Shake off excess marinade from tenderloin medallions dredge in flour and parmesean mixture and brown on each side. Do not crowd in pan, if you have to take out to make room for others please do. When all are browned return to pan add 2-3 tablespoons of water and cover to continue cooking for 5-6 minutes. Do not over cook
- 9. Reheat the pasta, add a little more olive oil or just water and stir until warmed.
- 10. Put your pasta on a large platter with pork medallions arranged in an attractive way, add some shredded asiago. Open a bottle of white wine and enjoy!

- Crush the garlic cloves with your fist. Heat the olive oil in a pan. Tilt the pan a little so that the garlic can “swim” in the oil. Once you can smell the oil and the garlic has a golden brown colour, remove the cloves immediately. Add the peeled, chopped tomatoes and slightly mash them with a fork. Cut the chilli into thin slices and add to the sauce. Depending on how hot they are and how spicy you like your food, either remove the seeds beforehand or cook them with the chilli.
- Cook the sauce at low heat for 15-20 minutes. In the meantime, bring a large pot of salted water to the boil for the pasta. Cook the pasta until they are still very firm to the bite. Add a few spoonfuls of pasta water to the tomato juice of the sauce. This will give the sauce a creamy consistency and makes it stick even better to the pasta. Season the sauce with salt.
- Strain the penne and immediately add to the sauce in the pan. Cook for 1-2 minutes so that the pasta fully absorbs the flavour of the sauce. Serve with grated Pecorino, chopped parsley and a shot of olive oil.

- In a large pot, bring 2-2.5 quarts/liters of water to a boil. Add ½ tablespoon salt, followed by the pasta. About 1-2 minutes before the pasta is ready, drop the frozen peas into the pot and cook it together with the pasta. Cook pasta until al dente (slightly firm to the bite, not crunchy nor soft). Drain well.

- Before I cook the pasta. I put the spinach into the pot of boiling water. I let the spinach wilt a bit, only a few seconds. Take the Spinach out with a slotted spoon and put it all in a strainer and run cold water over it. Then I ring out the excess water out of the spinach. - Put the Pasta mixture in a foil casserole dish or even a plastic gallon freezer bag. Thaw the night before. Preheat oven to 350° degrees Fahrenheit. When ready to pop in the oven. Take it out of the fridge and keep covered. Cook for 15 minutes covered and then remove foil. Cook for 10 minutes uncovered. Or if using a plastic bag dump the thawed pasta mixture and heat covered in a pan and then once it's warm remove lid and serve.
