8 ounces tri-colored pasta, any shape
1 cup grated parmesan cheese, from the deli
1 cup fat-free Italian salad dressing
1 red bell pepper, chopped
1 red onion, chopped
1/2 lb cheddar cheese, cut in 1/2 inch cubes
2 cups broccoli florets, steamed til barely tender
1/2 cup sliced ripe olives

Steps:

  • Cook and drain the pasta.
  • Toss all the ingredients together in a large bowl.
  • Chill for a minimum of four hours.
  • Put in your prettiest clear glass bowl, and serve.

This is a wonderful pasta salad which I have been making for at least 15 years. In fact when I first moved to Greece and my mother visited me a year later, one of the first things she asked me was about how to make this recipe. I have made it for buffets and even for my engagement party and it tastes as good as it looks which is saying something! Enjoy.

350 g spiral penne (tri-coloured is wonderful) or 350 g wheel pasta (tri-coloured is wonderful)
225 g ham (chopped)
225 g peas
3 tablespoons parmesan cheese (freshly-grated)
2 tablespoons parsley (finely-chopped)
1/3 cup olive oil (can reduce this amount to your personal preference)
2 tablespoons balsamic vinegar
2 tablespoons red wine vinegar
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
salt and pepper

Steps:

  • Boil pasta in a large pot of salted water until firm. (I always add a stock cube to the water to improve the flavour-Maggi pasta stock cubes are ideal.).
  • Boil or microwave the peas until tender.
  • Add drained pasta, peas, parsley and ham in a large bowl and toss well.
  • Shake dressing ingredients together in a jam jar and pour over pasta salad.
  • Add parmesan cheese and serve.
  • Note: This tastes great the next day.

3 tablespoons butter
1 onion, diced
10 ounces (2 cups) frozen peas
1 cup half-and-half
1/2 pound cooked ham
Grated Parmesan cheese, for serving

Steps:

  • Cook pasta in a large pot of boiling salted water until al dente, according to package instructions. Drain pasta; return to pot.
  • Meanwhile, heat butter in a saucepan over medium heat. Add onion; cook, stirring, until soft, 3 to 4 minutes. Add peas and half-and-half; season with salt and pepper. Simmer until thickened, 3 to 4 minutes.
  • Cut ham into strips. Add to sauce; cook until heated through, 1 to 2 minutes. Toss sauce with pasta. Serve with grated Parmesan.

1 (12 ounce) package penne pasta
½ cup butter
2 cups 1-inch strips cooked ham
1 (8 ounce) package sliced fresh mushrooms
½ cup all-purpose flour
1 bay leaf
2 cups milk
½ teaspoon dried basil
1 cup grated Parmesan cheese
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry

Steps:

  • Stir 1/2 teaspoon salt into a pot of water; bring to a boil. Stir penne pasta into the boiling water and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes; drain.
  • Melt butter in a large skillet over medium heat. Cook and stir ham and mushrooms in hot butter until the mushrooms are softened, 3 to 4 minutes.
  • Stir flour, remaining salt, and bay leaf into the ham mixture; cook and stir until flour begins to bind butter into a paste, about 2 minutes. Stream milk into the skillet while stirring. Melt Parmesan cheese into the milk mixture; add basil and continue cooking and stirring until the milk thickens into a sauce, 2 to 3 minutes.
  • Remove skillet from heat and immediately stir spinach into the sauce; add to drained pasta and stir to coat the pasta.
