BASIC GRANOLA RECIPE



Basic Granola Recipe image

This basic granola recipe is pretty perfect as is, but feel free to swap out ingredients to customize it to your taste (see Cook's Notes below for sample substitutions).

3 cups rolled oats
2 tablespoons light brown sugar
1/2 teaspoon ground cinnamon (see Cook's Notes)
1/2 teaspoon kosher salt
1/3 cup honey (see Cook's Notes)
1/4 cup canola oil (see Cook's Notes)
1 teaspoon vanilla extract (see Cook's Notes)
1/2 cup coarsely chopped almonds (see Cook's Notes)
1/2 cup dried cranberries (see Cook's Notes)

Steps:

  • Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper.
  • In a large bowl, mix together the oats, light brown sugar, cinnamon and salt. Stir the honey, oil and vanilla extract into the dry ingredients. Use your hands if necessary to make sure it's well combined.
  • Spread the mixture in an even layer on the prepared baking sheet. Bake for 20 minutes and then remove from the oven and stir; add the chopped almonds. Return to the oven and bake until everything is toasted and evenly browned, an additional 10 minutes.
  • Allow the granola to cool on the baking sheet, then add the dried cranberries and toss to distribute. Store in an airtight container at room temperature for up to 2 weeks.

One 14-ounce can sweetened condensed dairy milk or coconut milk
1/2 cup unsweetened nut or seed butter (I love cashew butter, almond butter and tahini the best!)
1 tablespoon vanilla extract
1/2 teaspoon kosher salt
3 1/2 cups quick-cooking oats
1 cup roasted salted nuts
3 tablespoons flax seeds, or a mix of different seeds (chia, millet, sunflower, etc.)
3/4 cup candy-coated chocolates, such as M&M's or muted-color ones from Whole Foods or Trader Joe's
1/2 cup dried apricots

Steps:

  • Preheat the oven to 350 degrees F. Line an 8-inch square baking dish with enough parchment paper so that it comes up the sides and hangs over by 1 inch.
  • Stir together the condensed milk, nut or seed butter, vanilla and salt in a large mixing bowl. Add the oats, nuts and seeds and mix to combine. Scrape into the baking dish and spread it out evenly. Press the candy-coated chocolates and dried apricots into the top. Bake until lightly browned around the edges, about 25 minutes. Let cool in the pan for 10 minutes, then remove to a rack to cool completely. Chop into squares. Store in an airtight container in the refrigerator for up to a week. You can also freeze these.

How to Make Granola image

Homemade granola is so easy to make (seriously, it takes all of five minutes from pantry to oven), and it's so, so, so much cheaper to make it at home than buy it in the store. Plus, you can customize it to your heart's content.

Number Of Ingredients 9

1 cup sweetener such as: 1 cup clover honey OR 1 cup pure maple syrup OR 1/2 cup honey + 1/2 cup brown sugar OR 1/2 cup pure maple syrup + 1/2 cup brown sugar OR you can even use 1 cup brown sugar
1/2 cup organic coconut oil or vegetable oil
3 tablespoons unsalted butter (or substitute more oil for a vegan version)
1/2 teaspoon ground cinnamon (optional)
Pinch kosher salt
1 teaspoon vanilla extract (optional)
5 cups rolled grains (usually oats, but five-grain rolled grain cereal is also great)
4 cups nuts and seeds (any combination of sunflower seeds, flaxseeds, sliced almonds, chopped pecans, walnuts, pepitas, cashews, etc.)
1 cup of dried fruit (dried blueberries, chopped dried apricots, chopped dried mango, raisins, dried cranberries, etc.)

Steps:

  • Preheat oven to 325 degrees Fahrenheit. Line two large rimmed cookie sheets with parchment paper or silicone mats.
  • In a large bowl, toss together the rolled grains and/or oats, nuts, and seeds. Don't add the fruit yet! You'll add that after you've baked the granola. (The dried fruit is added after it's baked).
  • In a small saucepan over low heat, combine the honey, syrup, or brown sugar (or a combination), butter, and vegetable oil, stirring occasionally, until butter is melted and ingredients are fairly well combined. Add the cinnamon, pinch of salt, and/or vanilla extract if using.
  • Pour the honey/butter/oil mixture over the grain/nut/seed mixture, and toss until evenly coated.
  • Spread granola on cookie sheets and bake for 30-40 minutes, stirring every 10 minutes, until the granola turns golden brown.
  • Let cool, then toss in the dried fruit.
  • Store in an airtight container (it should keep for up to a month at room temperature).

  • Place beans in a large saucepan and cover with water. Bring to a boil. Cover and cook for 4-7 minutes or until crisp-tender., Meanwhile, in a large nonstick skillet, saute the pepper, mushrooms and onion in oil until tender. Drain beans; stir into vegetable mixture. Sprinkle with almonds.
