PRETTY LAYERED SALAD

- In a large bowl, layer the spinach, bacon, carrot, eggs, romaine, red pepper, croutons and Parmesan cheese. In a jar with a tight-fitting lid, combine the dressing ingredients; shake well. Serve with salad.

This is a wonderful recipe which can have ingredients added or subtracted. Even if there is only two of you to eat it, don't cut the recipe in half because I'm sure you'll want more.

Steps:
- Place eggs in a large saucepan and completely cover with water. Bring to a boil. Cover and remove from heat. Let stand for 12 minutes. Remove eggs and chill.
- In a 9x13 inch dish, layer the lettuce, onion, water chestnuts and peas.
- In a medium bowl combine the mayonnaise, sugar, seasoned salt and garlic powder. Mix until smooth. Spread over the top evenly over the top of the peas. Cover and refrigerate overnight.
- Peel and chop hard-cooked eggs.
- Remove salad from refrigerator and top with the bacon, eggs and tomato. Serve.

- Whisk together dressing ingredients. Taste and add more sugar or seasoning salt if needed.
- Divide ingredients between 2 mason jars (about 2 cup capacity), starting with lettuce, then 2-3 tablespoons salad dressing, tomatoes, peas, onion, cheese and finally the bacon.

- 1. Layer above ingredients in glass bowl being sure to have enough of first 9 ingredients to make a full layer to fit in your size bowl. It should look very attractive from the outside. I slice or chop or cut mine rather large so they are forkable and viewable.
- 2. Place the meat you choose on top of vegetables.
- 3. Spread with enough MAYONAISE (not salad dressing) to spread 1/2 inch or more making a full layer.
- 4. sprinkle sugar or splenda on top of mayonaise .
- 5. sprinkle cajun seasoning as much as you like on top of this (I use a liberal amount but you can still see through it)
- 6. put all cheese on top (this is home grated cheese not out of bag)
- 7. sprinkle with crumbled bacon.
- 8. cover and refridgerate at least 2 hours before serving but over night is even better !

- Use a 9 x 13 glass dish. (or a trifle dish...I recommend anything glass so you can see the salad!)
- Have your bacon cooked and crumbled.
- Peel and slice the cooked and cooled hard boiled eggs.
- Combine the mayonnaise, sour cream and sugar. I like to use a hand blender to mix it well. Set aside.
- Layer the ingredients: lettuce, celery, green pepper, frozen peas, water chestnuts, green onions.
