INSTANT POT® PORK LOIN IN CRANBERRY-DIJON SAUCE

Instant Pot® Pork Loin in Cranberry-Dijon Sauce image

Cranberry sauce, Dijon mustard, tarragon, and onion combine to make a flavorful and easy pork loin. Serve with sweet potatoes and veggies. This recipe makes enough sauce for 2 pork loins in case you have additional meat; I just love lots of sauce.

Time 55m

Yield 4

Number Of Ingredients 9

1 pound boneless pork loin roast
salt and pepper to taste
1 tablespoon butter
1 (14 ounce) can whole cranberry sauce
½ yellow onion, sliced
2 tablespoons Dijon mustard
2 tablespoons chopped fresh tarragon
1 packet dry onion soup mix
1 tablespoon cornstarch

Steps:

  • Pat pork loin dry and season on all sides with salt and pepper.
  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add butter and let melt. Add pork loin and cook on all sides until just a little bit of color shows, about 1 minute per side. Turn off Saute function and add cranberry sauce, sliced onion, Dijon mustard, tarragon, and dry onion mix. Gently combine and spoon some of the sauce over the pork loin.
  • Close and lock the lid. Select high pressure according to manufacturers' instructions; set timer for 9 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, about 10 minutes. Check internal temperature of the pork loin; an instant-read thermometer inserted into the center should read at least 180 degrees F (82 degrees C). Temperature will continue to rise slightly after the pork loin is removed from pot.
  • Place on a cutting board to allow to rest for 8 to 10 minutes before cutting into thin slices.
  • While pork loin is resting, select Saute function again and stir cornstarch into sauce. Whisk until sauce thickens, 2 to 5 minutes. Serve pork loin with cranberry-Dijon sauce.

ROAST PORK LOIN WITH CREAMY DIJON SAUCE

Roast Pork Loin With Creamy Dijon Sauce image

This is adapted from Miss Vickie's Big Book of Pressure Cooker Recipes. The original Recipe calls for more sour cream and flour, I reduced them to change the final sauce consistency to my personal preference. The Dijon gives the sauce a slight bite, and the roast is juicy, tender and perfectly done. Miss Vickie's directions specify not to remove the netting, but I find that removing it after cooking pulls off the brown crust, so I remove it and tie with kitchen string before browning.

Time 1h

Yield 4 serving(s)

Number Of Ingredients 8

2 tablespoons olive oil
1 tablespoon butter
2 1/2 lbs boneless pork loin roast, net removed and retied with kitchen string
1 medium onion, chopped
3/4 cup white wine
2 tablespoons Dijon mustard
1/2 cup sour cream
1 tablespoon flour

Steps:

  • In your pressure cooker, heat the oil and butter over medium heat.
  • Add the roast, and brown on all sides, then remove from the pressure cooker and set aside.
  • Add the onions, and cook for a few minutes, until they start to soften.
  • Add the wine and mustard to the onions, and stir to combine.
  • Place the roast back in the cooker, lock the lid, and raise the temperature to high.
  • Once the pot has reached 15psi, lower the heat (still maintaining pressure) and cook for 40 minutes.
  • Release the pressure, and carefully remove the roast from the pot. Cover it and keep in a warm place until the sauce is completed.
  • Skim any excess fat from the liquid in the pot, if needed, then bring back to a boil.
  • Combine the sour cream and flour in a small bowl, then remove the pot from the heat and add the sour cream mixture, whisking to form a sauce.
  • Serve the roast and sauce.

  • Brown Pork Loin in Instant Pot: Heat up Instant Pot with "Sauté More" function. Wait until the screen says "HOT". Add 1 - 2 tbsp (15 - 30ml) olive oil in Instant Pot, and ensure the whole bottom is coated with olive oil. Pat dry the pork loin with a paper towel. Season one side of pork loin with kosher salt and black pepper. Place the pork loin in Instant Pot (seasoned side face down). Brown the first side for 4 minutes. Season the other side of pork loin with salt and black pepper. After 4 minutes, flip over and brown the other side for another 4 minutes. Set aside the browned pork loin.
  • Saute Onion and Garlic: Add 1 tbsp (15ml) olive oil in Instant Pot. Add in sliced onions, then saute for 3 minutes. Add in 1 bay leaf, 1 tsp (0.5g) dried oregano, 1 tsp (1g) dried rosemary, and minced garlic in Instant Pot, then saute for 30 - 45 seconds until fragrant. *Note: Your inner pot should look quite brown. Don't worry! Your pot didn't burn, those caramelized brown bits will add flavors to your pork loin.
  • Deglaze Instant Pot: Pour 1 cup (250ml) unsalted chicken stock in Instant Pot, then deglaze by scrubbing all the flavorful brown bits off the bottom of the pot with a wooden spoon. Give it a quick mix.
  • Pressure Cook Pork Loin: Add in 2 tbsp (30ml) regular soy sauce, then give it a quick stir. Add in browned pork loin. *Pro Tip: Try to get the pork loin to be as close to the bottom of the inner pot as possible & partially submerged in the cooking liquid. Close lid, then turn Venting Knob to Sealing position. For 2" Thick Pork Loin: Pressure Cook at High Pressure for 8 minutes + 30 minutes Natural ReleaseFor 2.5" Thick Pork Loin: Pressure Cook at High Pressure for 8 minutes + 45 minutes Natural Release*Note: Make sure your Instant Pot is in the "Keep Warm" mode during Natural Release.Open the lid, then measure pork loin's temperature at its' thickest part with a meat thermometer.*Pro Tip: For medium-rare pork loin, we're aiming for 143°F - 145°F. If the temperature is too low, simply flip over the pork loin in Instant Pot, then close the lid. Do NOT pressure cook again because we're using the "Keep Warm" mode to slow roast the pork loin. The temperature should rise 8°F - 10°F per 15 min
