4 bacon strips, chopped
1 tablespoon canola or coconut oil
2 large sweet potatoes (about 1-1/2 pounds), peeled and cut into 1/2-inch pieces
1/2 teaspoon salt
1/4 teaspoon chili powder
1/4 teaspoon paprika
1/4 teaspoon pepper
1/8 teaspoon ground cinnamon
2 cups cubed fresh pineapple (1/2-inch cubes)

Steps:

  • In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings., In same pan, heat oil over medium heat. Add potatoes and seasonings; cook and stir 15 minutes. Add pineapple; cook and stir until potatoes are tender and browned, 8-10 minutes. Sprinkle with bacon.

2 cups cubed fresh pineapple (1/2-inch cubes)
1/2 teaspoon salt
1/4 teaspoon chili powder
1/4 teaspoon paprika
1/4 teaspoon pepper
1/8 teaspoon ground cinnamon

Steps:

  • Select saute or browning setting on a 6-qt. electric pressure cooker; adjust for medium heat. Add bacon; cook and stir until crisp. Remove with a slotted spoon; drain on paper towels. Discard drippings., Add oil to pressure cooker. When oil is hot, brown potatoes in batches. Remove from pressure cooker. Add 1 cup water to pressure cooker. Cook 1 minute, stirring to loosen browned bits from pan. Press cancel. Place steamer basket in pressure cooker., Stir pineapple and seasonings into potatoes; transfer to steamer basket. Lock lid; close pressure-release valve. Adjust to pressure cook on high for 2 minutes. Quick-release pressure. Sprinkle with bacon.

With all of the delicious flavors from the peppers, onions, BACON, garlic, and potatoes, start your breakfast out right with our favorite Instant Pot Hash.

Number Of Ingredients 13

1 Tablespoon olive oil
1/2 pound bacon
1/2 yellow onion, diced
1 red bell pepper, diced
1 green bell pepper, diced
2 teaspoons minced garlic
1/2 teaspoon cumin
1/4 teaspoon paprika
salt and pepper to taste
1 pound baby yellow potatoes, halved
2/3 cup chicken broth
chopped parsley, for topping
Eggs, for topping

Steps:

  • Add oil to the Instant Pot, then press the SAUTE button. Add bacon, onion, and peppers to the Instant Pot and saute until vegetables are tender and bacon is cooked. Add garlic, cumin, and paprika and stir until combined and fragrant, about 1 minute.
  • Add potatoes to the Instant Pot, then pour chicken broth over top. Place the lid on top, then turn the vent to SEALING. PRESSURE COOK or MANUAL COOK on high for 8-10 minutes (depending how soft you like your potatoes), then quick release the pressure when timer is finished.
  • Remove lid and stir, then remove potatoes, peppers, and onions with a slotted spoon.
  • Portion into bowls and top each with a sprinkle of parsley and a fried egg.

  • Turn Instant Pot to sauté setting. While it is heating up cut the bacon into ½ inch pieces. I use kitchen shears* for this step. When the display says hot add the bacon and onions into the pot. Cook until bacon is crispy.
  • Pour in the water and scrape the bottom of the pot until clean. Turn off the Instant Pot. Toss the hash browns into the pot and toss well so they are coated in the bacon grease. Salt and pepper well the hash browns.
  • Add the hash browns into a pot-in-pot dish that has been sprayed with non stick spray (I used the fat daddios 7×4 inch pan*). Make 5 small wells in the hash browns with the back of a spoon. Crack the 5 eggs into each of the wells. Sprinkle the eggs with the kosher salt and pepper.
  • Clean out the Instant Pot. Pour 1 cup water into bottom of cleaned out Instant Pot. Place the pot-in-pot dish on top of a trivet/sling*. Lower the sling and dish into the Instant Pot.
