SHRIMP & GRITS
Steps:
- Set Instant Pot to Saute and add Bacon, crisp and remove to paper towel lined plate to drain.
- Use bacon grease to saute peppers and onions for 7-8 minutes until lightly browned.
- Degrease pan with tequila, then add tomatoes and chicken stock. Cancel the Saute setting.
- Mix grits with heavy whipping cream, salt and pepper to taste. (You can add 1 tsp of Old Bay to the mix if you like more spice.)
- Place trivet onto the top of cooked vegetables. Add bundt pan and pour your grits into the pan. Place lid on Instant Pot and cook for 10 minutes and High Pressure Manual.
- While the grits and vegetables cook, remove tails on shrimp and toss in 2 tbsp of Old Bay seasoning.
- When cooking process is done quick release the steam. Use tongs to remove the bundt pan and trivet.
- Place 4 tbsp of butter on top of grits to melt. Then stir in shrimp to the hot vegetable mixture.
- Once butter has melted on grits stir and serve into bowls. Top with a ladle full of shrimp and vegetables.
- Garnish with crispy bacon and Jalapeno slices.
PRESSURE COOKER GRITS
Creamy grits no fuss! Add grit, water butter and into to the pressure cooker or instant pot set time for about 25 to 30 minutes. Sit back and wait for timer to go off!

- 1. Add grit, water and butter into to the pressure cooker or instant pot and stir. Make sure steam is in the off position. Cook on low for 25 minutes release the steam. Stir if the grits need a little more time. Then turn the pressure cooker back on for at least five minutes more.

- Select saute setting on a 6-qt. electric pressure cooker and adjust for high heat. Add the first four ingredients and stir to combine; bring to a boil. Slowly add grits, stirring constantly to avoid lumps. Select saute setting, reduce heat to low and cook about 15 minutes, stirring occasionally. Stir in cheese and butter until melted. Stir in remaining ingredients. Cook for 3-4 minutes or until heated through.

- Allow a 15 minute Natural Release and then manually release the remaining pressure. Remove lid and stir in cheese. Stir well. Grits will thicken up some as they cool slightly.

- Combine the grits and water in a 3-quart saucepan and heat over medium-high heat. Whisk until the grits have a moment to become suspended in the water rather than sinking to the bottom of the pot – about 3 to 5 minutes.
- Once the grits come to the boil, reduce the heat to very low and season with salt. Cook, covered but stirring regularly (every 5 to 10 minutes), for 30 to 40 minutes.
