- Transfer sweetened condensed milk to a glass jar with a sealed lid. Place the trivet in the bottom of the Instant Pot Pressure Cooker and place the jar on the trivet. Fill the Instant Pot with water until it is about an inch beneath the lid of the jar (above where the condensed milk is and below the lid). Close the Instant Pot, making sure the valve is closed, and choose Manual, High Heat, 35 minutes. It will take about 30 minutes to heat up since there is a considerable amount of water in the pot.
- When it's done cooking, quick release the steam, and open the pot. Using tongs, remove the jar from the water, or allow it to cool before removing.
- Transfer the jar to a wire rack and cool completely before opening the lid. The dulce de leche will be bubbling inside the jar for a bit of time. Do not open the jar, as pressure has built. Wait until it cools!

- Pour sweetened condensed milk into a 16 ounce canning jar. Place the lid on the jar and screw on the ring.
- Put a rack in the pressure cooking pot and place the jar filled on the rack. Add 8 cups of water; the water should reach half way up the jar.
- Lock the pressure cooker lid in place, select high pressure and 40 minutes cook time. When the timer beeps, turn off the pressure cooker and let the pressure release for 15 minutes. After 15 minutes, release any remaining pressure.
- Carefully remove the jar from the pressure cooking pot. Let the jar cool for 10 minutes, then using a hot pad, open the lid and whisk until smooth.

- Create Baking Soda Mixture: In a small mixing bowl, combine ½ tsp (3g) baking soda with 3 tbsp (45ml) warm water. Mix very well until all the baking soda has dissolved.
- Combine Ingredients: Pour 1 14oz can (414ml) sweetened condensed milk in a stainless steel bowl (we used a 7" bowl for our 6 quart Instant Pot). Add in the baking soda mixture and combine. Mix well.
- Pressure Cook Dulce De Leche: Add 1 cup (250ml) cold water in the Instant Pot. Place the stainless bowl of condensed milk mixture directly in the water. Close lid and pressure cook at High Pressure for 40 - 90 minutes (Please see notes), then Full Natural Release.
- Create Instant Pot Dulce de Leche: Open the lid carefully. Remove the stainless steel bowl from the pressure cooker. Mix & inspect the dulce de leche with a fork. If it is not caramelized to desired color, simply place it back into the Instant Pot and pressure cook it for another 20 - 30 minutes. The mixture will be lumpy, use an immersion blender or blender to smooth out the lumps.
- Serve: The dulce de leche will thicken up as it cools and thin out as it warms up.

- Spoon condensed milk into a heatproof glass jar. Cover tightly with aluminum foil.
- Place a trivet in a multi-functional pressure cooker (such as Instant Pot®); put jar of condensed milk on top. Fill pressure cooker with cold water up to 1 inch below the top of the jar. Close and lock the lid. Select Manual (High) pressure according to manufacturer's instructions; set timer for 40 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove lid. Beat dulce de leche with a spoon and let it cool completely.

- Place the can of sweetened, condensed milk directly onto the bottom of the pressure cooker and add cold water, enough for the water level to come about 2½-cm (or 1-inch) over the top of the can (not exceeding the 'maximum capacity level' of the pressure cooker). Make sure the can is on its side, otherwise it will start bouncing up and down once the water comes to a boil.
- Lock on the lid and heat over high heat until the cooker starts to whistle to let you know it has reached pressure. Lower the heat, making sure the heat is still high enough for the pressure cooker to maintain the pressure.
- Cook for 40 minutes at high pressure (according to the manufacturer of my pressure cooker, the water in my pressure cooker reaches temperatures of 118°C/244°F under pressure).
- After 40 minutes, remove the pressure cooker from the heat and open the valve to allow the steam to escape and the pressure to come down. I placed the pressure cooker on the balcony for this because I like my kitchen wallpaper to stay on the walls...
- Once the pressure cooker unlocks, carefully pluck the hot can out of the (also very hot) water with some handy kitchen utensil, such as a fork or a slotted spoon. Place the can on a heatproof surface and allow to cool to room temperature before opening (or leave the can in the cooker and allow the water in the pressure cooker and the hot can to cool down together).
- Dulce de leche can be kept in the fridge for about 3 weeks, stored in an airtight container. Don't keep the dulce de leche in the can (once opened), as this can negatively affect the color of the dulce de leche. I've heard that you can keep closed cans of dulce de leche for years and years, but I haven't tried this and - honestly - I wouldn't be able to keep my hands off the stuff for that long!
- Dulce de leche can be softened in the bowl of a double boiler if its too stiff.

- Remove the label and lid from the can of condensed milk and securely cover the top of the can with foil (you ABSOLUTELY MUST remove the lid from the can which is why we place foil over it once the lid is removed – it is super dangerous to cook a can with its lid still sealed on)
