How To Pressure Cook Chicken Gizzards image

Now you can easily make tender chicken gizzards and hearts with your electric pressure cooker.

1 lb chicken gizzards (sometimes come with hearts too)
1 cup water or chicken broth (more if you want to make it into soup)
Salt to taste
Bay leaves
1 inch ginger slices

Steps:

  • After cleaning the gizzards, place them in the inner pot of Instant Pot. Pour in 1 cup of water or chicken stock (or more if you want to make it into soup). Season with a bit of salt or spices/herbs of your choice if you like
  • Close the lid and turn the steam release valve to "sealing". Press "pressure cooker" and make sure it's on high pressure and set the timer to 25 minutes. When it's done, let it depressurized naturally, about 10 minutes. The gizzards are fully cooked and ready to be used in your other recipes

2-1/2 pounds bony chicken pieces (legs, wings, necks or back bones)
2 celery ribs with leaves, cut into chunks
2 medium carrots, cut into chunks
2 medium onions, quartered
2 bay leaves
1/2 teaspoon dried rosemary, crushed
1/2 teaspoon dried thyme
8 to 10 whole peppercorns
6 cups cold water

Steps:

  • Place all ingredients in a 6-qt. electric pressure cooker. Lock lid; make sure vent is closed. Select manual setting; adjust pressure to high and set time for 45 minutes. When finished cooking, allow pressure to naturally release. , Remove chicken; set aside until cool enough to handle. Remove meat from bones. Discard bones; save meat for another use. Strain broth, discarding vegetables and seasonings. Refrigerate 8 hours or overnight. Skim fat from surface.
