PRESSURE COOKER BARBEQUE CHICKEN

Pressure Cooker Barbeque Chicken image

This chicken dish is incredibly easy to make and very delicious. It's a childhood favorite of my partner's; his mom served it with rice and green beans for an easy weekday meal. Feel free to add other hot sauce or spices to jazz it up. Frank's RedHot® sauce is a great addition.

PRESSURE COOKER PULLED PORK

Pressure Cooker Pulled Pork image

The electric pressure cooker (Instant Pot) makes this pulled pork taste like it cooked all day. Our version is made with a Carolina-style sauce.

Provided by Diana Rattray

Categories     Entree     Dinner     Lunch

Time 1h30m

Yield 10

Number Of Ingredients 16

4 to 5 pounds boneless pork shoulder (or Boston butt)
1 tablespoon sweet paprika or smoked paprika
2 tablespoons packed brown sugar
1 teaspoon kosher salt
1 teaspoon ground black pepper
1 teaspoon ground coriander
1 teaspoon onion powder
1/2 teaspoon garlic powder
Optional: pinch cinnamon
1 1/2 cups cider vinegar
1/2 cup water
1/2 teaspoon crushed red pepper (or more, to taste)
10 to 12 hamburger buns (or soft buns for barbecue)
Optional topping: coleslaw (creamy or Carolina style)
Optional topping: sliced onions
Optional topping: sliced dill pickles

Steps:

  • Trim the pork shoulder of any excess fat.
  • In a small bowl combine the paprika, brown sugar, salt, pepper, coriander, onion powder, garlic powder, and cinnamon, if using. Rub the mixture all over the pork.
  • Combine the vinegar, water, and crushed red pepper. Pour the mixture into the pressure cooker insert.
  • Place the pork roast in the pressure cooker. Set the pressure cooker to cook at high pressure for 80 minutes.
  • Turn off the machine or unplug to keep it from going to the "keep warm" setting; let the machine pressure fall to normal naturally, about 20 to 25 minutes (see your pressure cooker manufacturer's instructions for specific guidelines).
  • Strain the liquids into a fat separator, or strain into a bowl and skim the fat off the top.
  • Shred or chop the pork; add the liquids back into the pork and stir to blend.
  • Serve the pork on toasted or warmed split buns with your family's favorite sides for barbecue.

  • Trim off any large pieces of fat from the surface of the pork. Alternatively, you can use a beef chuck roast if you want to make this with beef. The beef has the same directions as the pork so trim it too.
  • In Instant Pot(pressure cooker) insert, add 1 tbsp oil. Turn Instant Pot “ON” then press “SAUTEE”. Sautee/sear meat chunks in batches of medium heat, flipping once to brown each side. This is optional but adds a lot of flavors.

  • In the pressure cooker, put the olive oil and butter. When melted and hot, lightly brown the pieces of chicken in all faces. I make this in two batches. Put all the brown chicken pieces aside.
  • Throw the fat away. Add the onion, garlic, and carrots. Add just a little bit of olive oil if needed so this does not burn. When it is almost soft, add vinegar and scrape the bottom to lift and incorporate all the browned bits. Let it reduce at high heat for approximately 5 min. Add the tomato paste and 150 ml water. Add the chicken.

  • Mix everything together in a bowl or crockpot before adding the chicken. Flip the chicken a few times to fully coat both sides.
  • Cover and cook on low for 1.5-2.5 hours or until the chicken reaches an internal temp of 165F. Be careful not to overcook or the chicken will be difficult to shred and rubbery. (You can cook on high, but the longer cook time will produce more flavorful chicken.)
  • After the chicken is cooked, shred it with two forks or use a stand mixer with a flat beater attachment. (You can also chop the cooked chicken with a knife.)
  • Set the crockpot to its keep warm function and add the chicken back to the crockpot. Let the chicken rest in the juices for an additional hour.
