- Select saute or browning setting on a 6-qt. electric pressure cooker. Adjust for medium heat; add oil. When oil is hot, brown ribs in batches; set aside., Add butter to pressure cooker. When melted, add leek. Cook and stir leek until tender, 2-3 minutes. Add garlic; cook 1 minute longer. Add stock to pressure cooker. Cook 1 minute, stirring to loosen browned bits from pan. Press cancel. , In a small bowl, combine remaining ingredients; spread over ribs. Return ribs to pressure cooker. Lock lid; close pressure-release valve. - Brown Short Ribs in Instant Pot: Heat up Instant Pot using Sauté More. Wait until it says HOT (prevents short ribs from sticking to the pot). Add 1 tbsp (15ml) olive oil in Instant Pot. Season one side generously with salt and black pepper. Add in 5 pieces of short ribs, then brown each side for 4 minutes. While one side is browning, season the other side with more salt and black pepper.*Pro Tip: Avoid overcrowding by browning short ribs in batches.
- Saute Onion & Garlic: Set aside the browned short ribs. Add in sliced onions, and saute until soften (~ 3 minutes). Add in chopped garlic, and saute until fragrant (~30 seconds).
- Saute Veggies & Spices: Add in chopped carrots, celery, a pinch of dried thyme, and 2 bay leaves, then saute for 2 minutes.
- Deglaze Instant Pot: Pour ½ cup (125ml) red wine in Instant Pot and deglaze by scrubbing the flavorful brown bits off the bottom of the pot with a wooden spoon. Give it a quick mix. Let the wine simmer for a minute to allow some of the alcohol to evaporate.
- Pressure Cook Short Ribs: Add 1 tbsp (15ml) regular soy sauce, 1 tbsp (15ml) fish sauce, 1-1.5 tbsp (14-21g) brown sugar, 2 tbsp (30ml) balsamic vinegar, and ½ cup (125ml) unsalted chicken stock in Instant Pot. Carefully add in browned short ribs + meat juice.If you are making mashed potatoes: Cut 3 - 4 potatoes in half, then place them in a stainless steel bowl. Layer the bowl on top of the short ribs. Then, pressure cook:-With Potatoes: High Pressure 42 minutes + Natural Release 15 minutes-No Potatoes: High Pressure 45 minutes + Natural Release 15 minutes
- Optional - Make Mashed Potatoes: Drain & transfer the potatoes to a larger mixing bowl. Mash the potatoes with a potato masher. Mix in 100ml whole milk and 1 - 2 tbsp (14g -28g) unsalted butter. Season to taste with salt & pepper.
- Thicken & Seasonings: Carefully set aside the short ribs. Mix 2.5 tbsp (22.5g) cornstarch and 3 tbsp (45ml) cold water together in a small mixing bowl. Bring the sauce to a simmer and add the cornstarch mixture one third at a time to thicken the red wine sauce until desired thickness. Taste and season with more salt, black pepper, and brown sugar if necessary (For reference: we added 3 large pinches of salt).
- Serve Short Ribs: Carefully place the short ribs back in the sauce to keep them hot. Serve & be prepared for your guests to beg for more of this deliciously beautiful creation!

- Season short ribs with 1 teaspoon salt and 1 teaspoon black pepper. Heat olive oil in pressure cooker set to Sauté on High. Sear short ribs in hot oil until deep golden brown all over, about 3 minutes per side; transfer to a plate. Drain all but 1 tablespoon of remaining fat from the pot. Set pressure cooker to Sauté on Normal. Sauté onion, carrot, celery, and garlic in hot fat until softened, 4 to 6 minutes. Stir broth, tomatoes, wine, vinegar, bay leaves, red pepper flakes, and remaining salt and pepper with the vegetable mixture; bring to a boil and set pressure cooker to Sauté on Low. Lay short ribs into the braising liquid, bone-side up. Lock pressure cooker lid in place and set steam vent to Sealing. Select Pressure Cook (Manual) and cook for 45 minutes on High pressure. Once the cooking cycle has completed, allow pressure to release naturally. Transfer short ribs to a plate. Remove and discard bay leaves. Skim fat from surface of braising liquid; discard. Blend the liquid using immersion blender fitted with the blade attachment on High until smooth, 45 to 60 seconds; season with salt and pepper. Ladle about ⅓ cup of the sauce into each bowl. Lay two short ribs into each portion of sauce; garnish with parsley to serve.
PRESSURE COOKER BEEF SHORT RIBS WITH RED WINE AND CHILE
Prunes are the secret ingredient in this recipe. They practically disappear during cooking, leaving behind their complex sweetness. This recipe was meant for a 6- to 8-quart electric pressure cooker, but to use a stovetop pressure cooker, just cook the ribs a few minutes less than you would if using an electric one. You could also bake this in a covered Dutch oven at 325 degrees for 3 hours. In any case, it is easiest to make the day before, chill it, then skim the fat off the top. - Sprinkle ribs with salt and pepper. Select saute setting on a 6-qt. electric pressure cooker and adjust for medium heat. Add oil. - With lid off, heat bacon on high or brown until almost crisp. Remove and coarsely chop, set aside. Sprinkle ribs with salt and pepper, put in cooker in the bacon grease, brown on both sides, do in batches if needed until all are browned. Add bacon and remaining ingredients except cornstarch and butter to cooker. Secure lid and cook on high for 35 minutes. Let pressure release naturally for 10 minutes then do quick release. Transfer ribs to serving platter and set cooker on high or brown until the liquid is simmering. Whisk the cornstarch mixture into liquid and cook 2 minutes, till thickened. Stir in butter and a pinch of salt and pepper, ladle sauce over short ribs and serve.
