- Release pressure using the natural-release method according to manufacturer's instructions, about 10 minutes. Release remaining pressure naturally. Stir and remove pot carefully with oven mitts.

- Locate an oven-safe, not-too-shallow baking dish (such as Corningware or Pyrex) that will fit in your slow cooker. In the baking dish, place oats, diced apples, apple juice, milk, maple syrup, vanilla, cinnamon, nutmeg, and salt; stir to combine. Carefully place baking dish down in slow cooker and slowly pour water into the bottom of the slow cooker until its level is about 1 inch below the top of the baking dish. Cover and cook on LOW for 8 hours. Stir before serving.

- In a medium Dutch oven or large saucepan (around 3.5 quarts), melt the butter over medium heat (if you’re not using butter, just warm the pan). Add the steel-cut oats and cook until fragrant, stirring often, about 2 minutes (this step enhances the flavor of the oats).
- Add the apple chunks, water and salt. Stir to combine, and raise the heat to high to bring the mixture to a simmer. Once simmering, reduce heat to medium-low and cook for about 35 minutes, until almost all of the liquid has been absorbed and the oats are nice and creamy. Stir every five minutes in the beginning, and more frequently as time goes on (you might need to dial down the heat as well).
- Remove from heat and let the oatmeal rest for 5 minutes before serving so it has more time to thicken up. Carefully taste (it’s hot!) and add maple syrup or honey if you’d like sweeter oatmeal (I used tart apples, so I added 1 tablespoon).
- Divide the mixture into individual bowls and serve with any toppings you’d like. If you’re saving extra portions for later, let them cool to room temperature, then cover and refrigerate for up to 4 days. Leftovers reheat well in the microwave, and would likely reheat well on the stove if you add some extra water to loosen them up.

- Peel and cut the apple. Add all the ingredients to the pressure cooker pot. Make sure lid is on tight, set the pressure release knob to the locked position. Push manual mode, set the pressure to high, and set the timer for 8 minutes. Then push start.
- When the cooking time is over, turn off the pressure cooker and let the pressure naturally release. This will take anywhere from 10-20 minutes.
- When the pressure is high, the red button next to the pressure release knob is elevated. As the pressure drops the red button drops. Wait until the red dot has dropped before attempting to open the pressure cooker.
- The oatmeal may need a quick stir before serving. If it seems a little dry, add a little more liquid.
