- In a small bowl, combine the first 9 ingredients. Place chicken in a 6-qt. electric pressure cooker; pour broth mixture over meat. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 10 minutes. Allow pressure to naturally release for 10 minutes, then quick-release any remaining pressure. , Remove chicken; keep warm. Skim fat from cooking liquid. In a small saucepan, melt butter; whisk in flour until smooth. Gradually add cooking liquid. Cook and stir until sauce is thickened, 2-3 minutes. Serve with chicken.

SLOW COOKER BALSAMIC CHICKEN
So easy and so good. I use frozen chicken breasts and cook on high for 4 hours in the slow cooker. The sauce is not thick, it is a bit runny, but very tasty. Add tomato paste if you want it thicker. Serve on top of pasta and sprinkle with Parmesan cheese. I use one can of crushed tomatoes and one can of diced tomatoes.

- Drizzle olive oil into the slow cooker. Place chicken breasts on top of oil and season each breast with salt and pepper. Top chicken breasts with onion slices, garlic, oregano, basil, rosemary, and thyme. Drizzle balsamic vinegar over seasoned breasts and pour tomatoes on top.
- Cook in the slow cooker set to High until chicken is no longer pink in the center and the juices run clear, about 4 hours.

- Peel the apples, core, and cut into wedges. 8-10 wedges per apple.
- Place all the ingredients in an electric pressure cooker. Stir to coat the apples.
- Lock the lid into place and close the steam valve.
- Set the digital pressure cooker to "steam" or pressure cook for 1 minute. (The pressure cooker will take several minutes to heat before the timer starts.)
- Once the timer goes off, release the steam valve and wait for the safety button to drop. Carefully open the lid.
- Gently stir the apples. Then serve warm as a side dish with chicken or pork chops, or as a topping for ice cream or pound cake.

Steps:
- In a small bowl, mix together the chicken broth, apple juice, lemon juice, and all spices.
- Add the chicken thighs to your electric pressure cooker/instant pot and pour liquid ingredients over top.
- Lock lid and set to high pressure for 9 minutes. When time is up, let pressure naturally release for 10 minutes, then release all remaining pressure.
- Remove chicken and broth from pot into a large bowl.
- In the pot on the sauté setting, melt butter then whisk in flour until a smooth roux forms. Slowly pour chicken cooking liquid back in and stir until a smooth gravy is formed.
- Add chicken back into the pot, stir to coat, then serve over rice.
