- Place carrots into a large saucepan, pour in enough water to reach depth of 1 inch, and bring to a boil. Reduce heat to low, cover, and simmer carrots until tender, 8 to 10 minutes. Drain and transfer to a bowl.
- Melt butter in the same saucepan; stir brown sugar, salt, and white pepper into butter until brown sugar and salt have dissolved. Transfer carrots into brown sugar sauce; cook and stir until carrots are glazed with sauce, about 5 more minutes.

- In a medium saucepan, mix distilled white vinegar, white sugar, salt, pepper and water. Bring the mixture to a boil. Remove from heat and allow to cool slightly.
- Place the carrots in sterile containers. Cover with the vinegar solution. Seal the containers, refrigerate and marinate carrots 12 hours or overnight before serving.

I hate to admit this but I had a case of 'canning fever', my boys ate our carrots from the garden when they were only an inch long and I just felt I 'had' to can something, So bought the carrots from the supermarket...whew it felt good to get that out of my system! Yield varies- 6 pints or 3 quarts

Steps:
- Wash and peel carrots. Wash again. Cut carrots into 3 inch pieces. Slice thicker ends in half lengthwise.
- Combine brown sugar, water and orange juice in a saucepot. Cook over medium heat, stirring until sugar dissolves. Keep syrup hot.
- Pack carrots tightly into hot jars, leaving 1-inch headspace.
- Ladle hot syrup over carrots, leaving 1-inch headspace. Remove air bubbles. Adjust two-piece caps.
- Process pints and quarts 30 minutes at 10 pounds pressure in a steam-pressure canner.

- Preheat oven to 400 degrees and spray a baking sheet with non stick cooking spray. In a medium sized bowl, add the carrots, olive oil, butter, brown sugar, garlic, and salt and pepper and combine.
- Spread the carrots in an even layer on the cookie sheet. Roast for 10 minutes and toss. Then roast for another 10 minutes until the carrots are tender and caramelized. Garnish with fresh parsley if desired.

- Root Cellar. Root cellaring carrots is a great way to go and doesn’t require much work at all, assuming a person has a root cellar. They do like to be kept moist and cool.
- Canning. Pressure can those carrots. Grow a Good Life wrote a great tutorial on this recently, it’s a super easy process and pints only take 25 minutes, so it’s relatively fast, especially raw pack.
- Dehydrate. Carrots can be dehydrated either in slices or grated. Simply lay slices on dehydrator trays and dry until hard (about 6 to 8 hours). Arrange grated carrots no more than 5/8 of an inch thick on dehydrator trays and dry until hard (about 4 to 6 hours).
- Freeze. I’m not always very good at thinning carrots as they grow and so I get several handfuls of these small baby carrots. They’re tough to clean and a ridiculous amount of work to chop for canning or even using in recipes.
- Pickle. Homegrown, homemade pickled carrots look beautiful, taste amazing, and make for great gifts. A batch or two of pickled carrots means tasty snacks and incredible gifts ready for giving.
- Ferment. Fermented carrots are full of probiotic goodness and are mighty tasty too. These won’t keep as long as canned, frozen, or dehydrated carrots but it is a good way to get more fermented foods into the meal rotation and is a fun, tasty way to preserve some homegrown carrots.

- Leave them in the ground. It just doesn’t get much easier than this… If you live in a cooler climate, carrots won’t mind the chilly temps at all. Cover the rows with a thick layer of mulch (like straw or leaves), then add a layer of plastic or a tarp.
- Store them root cellar style. Like most root crops, carrots do wonderfully when stored in a root cellar setting. Trim the greens, but do not wash the carrots.
- Can them. Since carrots are a low acid food, you must use a pressure canner if you wish to can them. (Unless you pickle them– then a water bath canner is fine.
- Freeze them. With a little prep, carrots will freeze surprisingly well. Simply trim, peel, and thoroughly wash. Slice or dice to the desired size, then blanch them for 3 minutes.
- Dry them. If you have a food dehydrator, you can dry your carrots for use in stews or even carrot cake. (Don’t have a dehydrator? Here is a tutorial for using your oven instead.)
