MOM'S APPLE FRITTERS
My mom made these for us after school in the fall with the apples we'd pick and buy from a fruit farm. Warm, crisp, and sweet, a perfect fall treat.

Steps:
- Heat the oil in a deep-fryer or electric skillet to 375 degrees F (190 degrees C).
- In a large bowl, stir together the flour, sugar, baking powder and salt. Pour in the milk, eggs and oil and stir until well blended. Mix in apples until they are evenly distributed.
- Drop spoonfuls of the batter into the hot oil and fry until golden on both sides, about 5 minutes depending on the size. Fry in smaller batches so they are not crowded. Remove from the hot oil using a slotted spoon and drain briefly on paper towels. Toss with cinnamon sugar while still warm.

APPLE FRITTERS
These apple fritters with caramel sauce are a delicious deep-fried taste of fall. Serve with some ice cream of a cup of coffee for a sweet treat any time of year.

Steps:
- Heat some frying oil in a large pot over medium high heat until the oil reaches 340 degrees F.
- In a large bowl, mix the eggs, milk, melted butter, vanilla extract, and sugar until well combined.
- Add the all purpose flour, cinnamon, baking powder, and mix until well combined.
- Fold in the chopped apples.
- Using a mini scoop or two spoons, scoop the batter and drop into the oil.
- Cook for 4-5 minutes or until golden brown.
- Drizzle with homemade caramel and enjoy!
- To make the caramel sauce, combine the water and sugar and cook over medium heat in a saucepan until the sugar dissolves.
- Once the sugar dissolves, keep a close eye on it, sugar burns quickly.
- Once it turns into a copper color remove it from the stove.
- Add the butter and heavy cream and mix until well incorporated.
- Once the caramel thickens nicely and is lump free transfer to a heat proof container.

APPLE FRITTERS WITH CARAMEL DRIZZLE
Steps:
- Heat the oil in the deep fryer to 360 degrees F.
- In a medium bowl combine the 2 1/2 cups flour, cornmeal, brown sugar, baking soda, and salt. Whisk together the buttermilk, water, eggs, and vanilla. Add the wet ingredients to the dry and mix to form a lumpy batter. Dredge the apple rings into the remaining flour, shaking off any excess. Dip the apples in batter and fry until golden, about 2 minutes per side. Remove from the oil and place on a paper towel to absorb the excess oil. Serve with Caramel Drizzle.
- In a medium pot combine the water and sugar. Over high heat bring to a boil and cook until the syrup becomes amber, about 7 minutes. Remove from the heat and whisk in the apple juice slowly, being careful of the steam released. Add the cinnamon and star anise.
- Return to high heat and bring to a boil. Reduce heat to medium and simmer until reduced to 1 cup of liquid, about 20 minutes. Discard the cinnamon stick and star anise and cool.
- Store for up to 1 month in the refrigerator.

Steps:
- Peel, core and chop the apples.
- In large saucepan over medium heat, add the apples, brown sugar, 1/2 teaspoon cinnamon, the cider and vanilla. Bring to simmer, then strain the apples over a mixing bowl to catch the liquid. To the liquid add the sugar, remaining cinnamon, 1/2 cup of beer, club soda and melted butter. Whisk in the eggs. Sift the flours and baking soda into a large bowl. Whisk in the liquid ingredients and let the batter rest for 30 minutes. Adjust thickness.
- In a deep-fryer or heavy-bottomed pot, heat enough canola oil to come halfway up the sides of the pot, to 350 degrees F.
- Stir the apples into the batter. Using and ice cream server, scoop the batter, in batches, into the fryer and cook until golden and fluffy. Remove the fritters from the fryer to a serving platter.
- Make caramel sauce by heating 1 cup brown sugar and 1/4 cup white sugar in a small pan over medium heat. Bring the sauce to a boil, then add 1 cup of heavy cream. Lower the heat and cook until the sauce turns deep amber in color, about 10 minutes. Drizzle the caramel over the fritters, sprinkle with salt, and serve with slice of Cheddar.
APPLE FRITTERS
Steps:
- Add about a quart of vegetable oil into a heavy pot or Dutch oven. Place over medium high heat with a thermometer attached to the side. The oil needs to be heated to about 350F so keep an eye on the thermometer while you prepare the batter and adjust temperature if needed.
- Peel the apples and cut flesh from core. Chop into roughly half inch pieces. Transfer to a bowl, squeeze the juice of half a lemon over them, toss and set aside.
- In a large bowl add the flour sugar, cinnamon, nutmeg, salt and baking powder. Whisk together and set aside.
- In a medium bowl add the eggs, vanilla, and milk. Whisk together well and pour into the dry mixture. Us a spatula to fold the wet into the dry until ALMOST combined.
- Add the cubed apples and mix together so all the apples are coated.
- Pour in the melted butter and mix in.
- Use an ice cream scoop to transfer batched of batter into the oil. I suggest frying about 6 fritters at a time.
- Once the fritters are golden brown on the bottom us a turn them over with thongs or a spider skimmer and fry until golden brown on other side.
- Transfer fritters to a plate lined with a few layers of paper towels and continue frying until better is all used up.

- Fritters - pour oil into a medium saucepan until one-third full.
- Heat over medium high heat until hot.
- Combine the flours and sugar with enough ice cold water to make a batter the consistency of thickened (doubled) cream.
- Coat the sliced apples in the batter and deep fry in batches for 3 to 4 minutes or until golden, remove to a wire rack to drain.
- Cinnamon Sugar - combine the sugar and cinnamon in a small bowl.
- Caramel Sauce - combine the butter and sugar in a small saucepan, place over medium heat and cook 3 - 4 minutes or until sugar is dissolved, stir in the cream and simmer for 2 - 3 minutes until sauce thickens.
- Place the fitters on serving plates, sprinkle with the cinnamon sugar, pour over caramel sauce and enjoy.
