CREAMY GARLIC PRAWNS (SHRIMP)

A few simple tricks give a leg-up to the sauce for a result that's a cut above your basic recipes: deglaze the pan with a little white wine, a splash of chicken stock and sprinkle of parmesan. Steps:
- Place prawns, garlic, oil and pepper in a bowl. Toss to coat, set aside 20 minutes if time permits (no longer).
- Stir through salt just prior to cooking.
- Melt 15g / 1 tbsp butter in a large skillet over medium high heat. Add half the prawns and cook for 1 minute on each side, then remove.
- Repeat with remaining prawns (you shouldn't need more butter), then remove. Scrape out excess remaining garlic from pan and add to cooked prawns.
- Add butter into skillet and let it melt. Add garlic and stir for 30 seconds or until light golden.
- Add white wine, turn up heat to high. Bring to simmer while stirring base of the pan to dissolve all the golden bits into the sauce. Cook 1 minute or until it most evaporates and the winey smell is gone.
- Add chicken stock and reduce until mostly gone and just a thin layer remains on base of skillet.
- Add cream, then simmer on medium heat for 2 minutes until reduced and slightly thickened.
- Stir through parmesan, then add the prawns back in. Taste sauce and see if more salt and pepper is needed.
- Serve sprinkled with parsley, over mashed potato or something to soak up that fabulous sauce!

Simple and fabulous, the 3 tips for top notch garlic prawns is to chop rather than use a mincer for the garlic (it splatters and burns on high heat), only marinate for 20 minutes and the splash of wine gives this a flavour edge as well as stopping the garlic from burning. Serves 2 as a main, 4 as a starter.

GARLIC PRAWNS
This is a great easy prawn marinade, they are great on the BBQ, we put them out as appetizers but they can also be a main course. I've also sauteed them with the marinade and used the sauce with pasta or just lapped it up with French bread! ENJOY.

- In a glass dish, mix together the olive oil, mustard, garlic, lemon juice, orange juice, basil and white wine. Add the prawns, and stir to coat. Cover, and let marinate for 1 hour.
- Heat an outdoor grill to high heat.
- Thread prawns onto skewers. Grill for 3 to 5 minutes, turning once, until pink.
- If desired, reserve marinade; transfer to a saucepan and bring to a boil. Reduce heat and simmer for 5 minutes. Serve with prawns.

PRAWNS IN A DARK SAUCE
This is a great tomato-based Indian dish from one of Madhur Jaffrey's books. Serve with rice and steamed vegetables or fried potatoes.

Steps:
- Blend the onions, garlic, ginger and 3 tablespoons water in an electric blender until you have a paste.
- Put the oil in a wide pan and set over medium high heat.
- When hot, put in the cinnamon, cardamom and bay leaves.
- Stir for 3-4 seconds.
- Put in the paste from the blender.
- Stir and fry for about 5 minutes or until the paste turns a light brown color.
- Add the ground cumin and ground coriander.
- Stir fry for 30 seconds.
- Put in the tomatoes.
- Stir and keep frying until the paste has a nice reddish brown look to it.
- Add 1 tablespoon of the yogurt.
- Stir and fry for about 10- 15 secons or until it is incorporated into the sauce.
- Add all the yogurt this way.
- Add the turmeric and cayenne and stir for about a minute.
- Put in remaining water, salt, and prawns.
- Stir to mix and bring to a boil over medium high heat.
- Stir and cook for about five minutes until you have a thick sauce- do not overcook.
- Sprinkle with garam masala and mix.
- Garnish with fresh coriander.
PRAWNS IN A BUTTER-TOMATO SAUCE
From Madhur Jaffrey's Simple Indian Cookery. My husband made it and it is so elegant and delicious. She called for a 1/2 tsp cayenne in the sauce, but we reduced and you can reduce further if you're sensitive to heat. Serve with basmati rice, naan and green peas.

- Combine all ingredients for the sauce in a bowl, whisk until smooth. Cover and chill until needed.
- Melt butter and oil in large frying pan over high heat. When hot, add cumin seeds and let sizzle for 10 seconds.

- Set a steamer basket into a heavy saucepan and pour in enough water, so the steamer basket sits just on top of the water without touching it. Remove steamer basket and bring water to a boil.
- Meanwhile, butterfly the shrimp with a sharp paring knife, carefully running the knife 1 inch down the bottom of the shrimp without cutting all the way through. Press shrimp open.
- Set shrimp into the steamer basket and sprinkle with salt. Set steamer basket over the boiling water (shrimp should not touch the water).

- Lay each prawn on a cutting board, then cut off and discard the sharp spike at the tip of the head and trim off the antennae. Cut through the shell down the back of the prawn (I use kitchen shears for this), making a shallow slit in the flesh, and pull out and discard the dark vein. Dry the prawns with a paper towel.
- Heat a large skillet over a high flame and, once hot, coat it with 10ml (2 tsp) of cooking oil. Add the white onion and stir constantly for about a minute (or less), until it starts to wilt. Immediately remove the onion from the skillet and spread on a serving plate.
- Put the light soy sauce and crushed sugar into a small saucepan over a medium flame and stir until the sugar is dissolved. Stir in the aged soy sauce, then turn off the flame and add the butter. Swirl the pan until the butter melts and combines with the other ingredients.
