These little gems are super easy to make and taste wonderful. Nice to have a hand in the freezer for unexpected guests or for a quick snack. This recipe comes from my friend Darla!

Number Of Ingredients 5

1 cup brown sugar
1 cup toasted chopped pecans
1/2 cup flour
2/3 cup butter, melted (measure then melt)
2 eggs (beaten)

Steps:

  • Mix all ingredients together . Spoon into prepared pans ( I spray with release spray).
  • Bake @350 degrees for 20 minutes.
  • This batter does not rise so you can fill the muffins tins.

3 bananas, ripe- mashed
1 egg
1/2 cup sugar
1/4 cup oil
1 1/4 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
3 tablespoons brown sugar
1 tablespoon sour cream
1/2 cup pecans, chopped

Steps:

  • Preheat oven to 400°F
  • Mash bananas, add egg, sugar and oil. Beat well. Add flour, baking powder and salt and mix until just moistened.
  • Grease muffin tins, and put equal amount of batter in each.
  • *Praline:
  • Mix brown sugar and sour cream, add pecans.
  • Top each with equal amount of praline mix in center of muffin.
  • Bake for 15 minutes or until golden brown.
  • Makes 12 Regular size muffins or 6 large.

Who needs bakery muffins when you can enjoy warm-from-the-oven, easy-mix muffins? They are so tasty!

1 box Betty Crocker™ banana nut muffin mix
2/3 cup milk
2 tablespoons vegetable oil
1 egg
1/2 cup semisweet chocolate chips
1/3 cup packed brown sugar
1 tablespoon butter or margarine, softened

Steps:

  • Heat oven to 400°F. Place paper baking cup in each of 12 regular-size muffin cups, or grease bottoms only of muffin cups.
  • In medium bowl, stir Muffin Mix, Walnuts, milk, oil, egg and chocolate chips just until blended. Divide batter among muffin cups (each about two-thirds full).
  • In small bowl, stir together brown sugar and butter; sprinkle over batter in each cup.
  • Bake 17 to 21 minutes or until golden brown and tops spring back when lightly touched. Cool 5 minutes (if you did not use paper baking cups, run knife around edges of cups before removing); remove from pan.

1/4 cup packed brown sugar
1/4 cup chopped pecans
1 tablespoon firm butter or margarine
1/2 cup packed brown sugar
1/2 cup milk
1/3 cup vegetable oil
1 teaspoon vanilla
1 egg
1 2/3 cups Gold Medal™ all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup chopped fresh peach
1/2 cup coarsely chopped pecans

Steps:

  • Heat oven to 400°F. Grease bottoms only of 12 regular-size muffin cups or line with paper baking cups. In small bowl, mix 1/4 cup brown sugar and 1/4 cup pecans. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until crumbly. Set aside.
  • In large bowl, beat 1/2 cup brown sugar, the milk, oil, vanilla and egg until well blended. Stir in flour, baking powder and salt just until ingredients are moistened. Fold in peaches and 1/2 cup pecans. Divide batter evenly among muffin cups (cups will be almost full). Sprinkle with topping.
  • Bake 18 to 20 minutes or until golden brown. Immediately remove from pan to cooling rack.

1/3 cup chopped pecans, toasted
3 tablespoons brown sugar
1 tablespoon light sour cream
3 small ripe bananas
1 large egg
1 1/2 cups pancake mix
1/2 cup sugar
2 tablespoons vegetable oil
cooking spray

Steps:

  • Stir together pecans, brown sugar and sour cream. Set aside.
  • Mash bananas in a medium bowl , add egg and next 3 ingredients, stirring just until dry ingredients are moistened.
  • Place paper baking cups in muffin pans and coat cups with cooking spray.
  • Spoon batter into muffin cup, filling three fourths full. Carefully spoon pecan mixture evenly in center of each muffin.
  • Bake at 400F for 18-20 minutes or until golden. Remove from pans immediately and cool on wire racks.
  • Note; You can freeze muffins, if desired. To reheat, microwave at HIGH 1 minute.

I made these muffins for my families Sunday big breakfast. My family really enjoyed these muffins. I loved the topping it really set them off. When I made these muffins I evenly divded the pumpkin batter and I put them in 12 large muffin tins. I think the praline topping needs to be doubled to top the muffins with 2 teaspoons praline topping. I got this recipe from a cookbook years ago.

1 tablespoon sour cream
1/3 cup pecans, broken
2 cups flour
2 teaspoons baking powder
1/2 teaspoon baking soda

1/8 teaspoon ground cloves
1 egg, beaten
3/4 cup buttermilk
3/4 cup canned pumpkin
2/3 cup brown sugar, packed
1/3 cup butter

Steps:

  • Heat oven to 400.
  • Grease muffin tins.
  • Mix together brown sugar, sour cream, and pecans set aside.
  • Mix together flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and ground cloves.
  • Mix into the dry ingredients egg, buttermilk, canned pumpkin, brown sugar, and butter until mixed through.
  • Spoon batter into greased muffin tins.
  • Sprinkle 1 teaspoon of the topping onto each filled muffin tin.
  • Bake for 20 minutes.

1/2 cup firmly packed brown sugar
1/3 cup stick margarine or 1/3 cup butter, softened
1 (3 ounce) package cream cheese, softened
2/3 cup milk
1 egg
1 teaspoon maple extract or 1 teaspoon vanilla
1 cup Quaker Oats (quick or old fashioned, uncooked)
1/2 cup all-purpose flour
1/3 cup whole wheat flour
1 tablespoon baking powder
1/2 teaspoon salt
3/4 cup chopped pecans, divided

Steps:

  • Heat oven to 400°F Line 12 medium muffin cups with paper baking cups.
  • In medium bowl, combine oats, flours, baking powder and 1/2 cup pecans; mix well. In medium bowl, beat sugar, margarine and cream cheese until creamy. Add milk, egg and maple extract; mix well. Add to dry ingredients; stir just until dry ingredients are moistened. (Do not overmix.)
  • Fill muffin cups 3/4 full. Sprinkle with remaining 1/4 cup pecans.
  • Bake 20 to 22 minutes or until golden brown. Cool muffins in pan on wire rack 5 minutes. Remove from pan.

2 cups flour

1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/4 teaspoon ground allspice
1/4 teaspoon ground cloves
1 cup light brown sugar
1 cup cooked pumpkin (not pie filling)
1/3 cup buttermilk
1 large egg
1/3 cup vegetable oil
4 tablespoons orange marmalade

Steps:

  • Praline: Combine ingredients, mixing well then set aside.
  • Combine dry ingredients, mixing well then set aside.
  • Combine pumpkin, buttermilk, oil, egg and marmalade, mixing well.
  • Combine pumpkin mixture with dry ingredients, mixing well.
  • Spoon batter into greased muffin pans or into paper muffin cups, filling 3/4 full.
  • Spoon praline mixture over batter.
  • Bake at 400 degrees for 18 to 20 minutes, checking for doneness by inserting toothpick into middle and coming out clean.
  • Cool in pan 2 to 3 minutes before removing.
