PRALINE YAMS
I found this recipe on the back of a can of sweet potatoes. Everyone seemed to really like them... even those who don't usually like Yams.

Steps:
- Heat oven to 350 degrees.
- Place drained yams in an ungreased 1/2 quart casserole or baking dish.
- In a small bowl, combine remaining ingredients; blend well. Sprinkle over yams.
- Bake at 350 for 35 to 40 minutes or until bubbly.

Steps:
- Butter one 2 quart casserole dish. Preheat oven to 350 degrees F (175 degrees C).
- In a mixing bowl, combine the sweet potatoes, sugar, vanilla extract, eggs and cream. Blend well, and spread evenly in casserole dish.
- Prepare the topping by combining the butter, brown sugar, flour and pecans. Mix until crumbly, and sprinkle over sweet potato mixture.
- Bake for 30 minutes in the preheated oven.

PRALENE YAMS

Steps:
- In large mixing bowl mash potatoes until smooth
- Add orange juice, salt, pepper, ginger, 1/2 butter, 1/3 cup brown sugarand egg yolks
- Blend till light and fluffy
- Grease a 9x13 pan (can use glass or tin)
- Pour in mixture until smooth on top
- Topping for yams: mix the remaing brown sugar, 1 stick butter, pecans and cinnamon spread evenly over yams
- Bake at 350 degrees for 45-50 minutes
- Let stand for 10 minutes before serving
PRALINE YAMS
I cut this recipe out of the Denver Rocky Mountain News Food Section 30-some years ago. I've made it every Thanksgiving and Christmas since. It's quick and simple to prepare (right on the stove), and a nice addition to a big dinner.

Steps:
- Heat yams, in their liquid, till hot.
- Keep hot on low heat while you mix up Praline sauce.
- Mix together the brown sugar, heavy cream, butter/oleo, pecans, salt, cinnamon, and nutmeg in a saucepan.
- Stir over medium heat till mixture comes to a gentle boil.
- Keep hot on low burner while you drain liquid off yams.
- Place yams in serving bowl.
- Pour hot Praline sauce over yams.
- Serve and enjoy!

ORANGE PRALINE YAMS (TNT)
I make these every Thanksgiving. So far,it's the best yam casserole I've ever tasted.

- 1. In mixing bowl, with mixer, beat yams or sweet potatoes until smooth. Mix in remaining yam casserole ingredients, beating until mixture is light and fluffy. Butter a 12 inch porcelain quiche dish or a shallow 2 quart casserole (7 x 11 inches). Pour in yam mixture, smoothing top evenly. Make praline topping by mixing all ingredients together in small bowl. Spread evenly over yams. May be refrigerated covered overnight at this point. Bake at 350 for 45 to 50 minutes or until golden brown and bubbly. Remove from oven and let stand 10 minutes before serving. - Preheat oven to 350.
- Combine yams, sugar, salt, eggs, vanilla, rum (if using), and milk. Whip until smooth. Fold in raisins if using. Spoon mixture into a greased 2 quart casserole.

CHEF JOHN'S CANDIED YAMS
Sure, everyone knows orange-fleshed sweet potatoes aren't really yams, but it makes for a shorter name. I'm not a huge sweet side dish person, but I make an exception for these candied yams that use lemon instead of orange juice as a sweetener.

- Stir salt into 2 quarts cold water in a large pot. Transfer sweet potato pieces to pot and place over high heat; bring to a simmer. Reduce heat to medium-low and simmer until potatoes are not quite tender but still cooked, 5 to 7 minutes. Use the tip of a knife to test for doneness. Drain.
- Place brown sugar, butter, lemon juice, maple syrup, ginger, cinnamon, cayenne, and pinch of salt in a skillet. Place over medium-high heat, stirring until glaze ingredients melt and start bubbling. Continue cooking, stirring occasionally, until mixture begins to thicken up, 4 to 6 minutes.
- Transfer drained sweet potatoes to skillet. Raise heat to high and cook and stir until potatoes are coated with glaze and very tender, and glaze has thickened, 5 to 8 minutes. Transfer to serving dish; garnish with chopped nuts.
