AUTHENTIC CANADIAN POUTINE
Authentic Canadian Poutine featuring deep-fried fries, poutine gravy and white cheddar cheese curds all tossed together. Do be careful with deep frying. A proper deep fryer is recommended.

Steps:
- Prepare the gravy: In a small bowl, dissolve the cornstarch in the water and set aside.
- In a large saucepan, melt the butter. Add the flour and cook, stirring regularly, for about 5 minutes, until the mixture turns golden brown.
- Add the beef and chicken broth and bring to a boil, stirring with a whisk. Stir in about HALF the cornstarch mixture and simmer for a minute or so. If you'd like your gravy thicker, add a more of the cornstarch mixture, in small increments, as needed, to thicken. Season with pepper. Taste and add additional salt, if necessary, to taste. Make ahead and re-warm or keep warm until your fries are ready.
- For Deep-Fried Fries: Prepare your potatoes and cut into 1/2-inch thick sticks. Place into a large bowl and cover completely with cold water. Allow to stand at least one hour or several hours. When ready to cook, heat your oil in your deep fryer or large, wide, heavy cooking pot to 300° F.
- Remove the potatoes from the water and place onto a sheet of paper towel. Blot to remove as much excess moisture as possible.
- Add your fries to the 300°F oil and cook for 5-8 minutes, just until potatoes are starting to cook but are not yet browned. Remove potatoes from oil and scatter on a wire rack. Increase oil temperature to 375°F Once oil is heated to that temperature, return the potatoes to the fryer and cook until potatoes are golden brown. Remove to a paper towel-lined bowl.
- To Prepare Poutine: Add your fried or baked fries to a large, clean bowl. Season lightly with salt while still warm. Add a ladle of hot poutine gravy to the bowl and using tongs, toss the fries in the gravy. Add more gravy, as needed to mostly coat the fries.
- Add the cheese curds and toss with the hot fries and gravy. Serve with freshly ground pepper. Serve immediately.

STUFFED CRUST POUTINE PIZZA
This classic Canadian dish just got better! This Poutine Pizza is topped with poutine gravy, shredded mozzarella and white cheddar cheese, crispy fries, steak and chunks of white cheddar cheese curds! To take it to the next level, the crust is stuffed with cheese!

- Prepare 1/2 recipe of my Homemade Pizza Dough up to Step 6.
- Preheat oven to 475° F and allow to heat for at least 30 minutes. Grease a pizza pan with cooking spray and sprinkle with cornmeal.
- Using a rolling pin, roll out dough into a circle larger than your pizza pan. Place dough on prepared baking pan with excess hanging over the edge.
- Line mozzarella sticks around the edge and fold the excess dough over the sticks, pressing to seal tightly. Let dough rest for 10-15 minutes before topping. Meanwhile, make the Poutine Gravy.
- Add the butter and flour to a saucepan over medium heat and whisk until butter is melted and a paste is created.
- Slowly pour in the broth while whisking constantly. Continue to whisk until the gravy has thickened, about 3-5 minutes. Set aside.
- Brush the crust with olive oil, top with about 1/2 cup of the poutine gravy. Save the rest for dipping! Top with the shredded mozzarella and white cheddar cheeses.
- Bake in preheated oven for 15-18 minutes or until the edges of the crust are golden brown.
- Remove pizza from the oven and top with fries, steak pieces and cheese curds. Place pan onto the top rack and broil for 1-2 minutes, or until cheese curds begin to melt. Slice and serve!

- Place the potato strips in a bowl of cold water for 20 minutes.
- After the potatoes have soaked for around ten minutes, preheat oven to 400°F.
- Thoroughly dry potatoes and place on a baking sheet sprayed with cooking spray (Pam).
- Drizzle with about two tablespoons of olive oil, and season with salt and pepper.
- Roast the potato strips for 30 minutes, tossing after 15 minutes, until golden brown.
- Transfer the fries to a plate.
- Wipe the browned bits from the pan and unroll the pizza dough onto the cookie sheet.
- Slide dough into the hot oven to partially bake for about 8 minutes.
- Lightly brush the crust with oil, sprinkle with mozzarella cheese and deli beef.
- Bake another 6 to 10 minutes, or until the cheese has melted and is browning and bubbly.
- Arrange the fries evenly on the pizza and drizzle with the hot gravy.
- Garnish with parsley, slice and serve immediately.

- Place flour in a large bowl. Whisk water, egg, yeast, and sugar together in a cup. Make a well in the flour and pour in yeast mixture. Stir until mixture forms a smooth dough, adding a small amount of flour or water if needed. Cover bowl with a towel; set aside to rise until doubled in size, about 30 minutes.
- Preheat oven to 425 degrees F (220 degrees C). Spread French fries in a single layer on a baking sheet.
- Bake fries in the preheated oven until golden, about 20 minutes. Reduce oven temperature to 350 degrees F (175 degrees C).
- Heat a large skillet over medium heat and fry bacon pieces until browned, about 5 minutes; remove to drain on a paper towel.
- Spray a round pizza pan with baking spray.
- Punch down dough, and flatten onto pizza pan. For a stuffed crust, sprinkle about 1/4 cup shredded Mexican cheese blend around the edge of the dough, roll dough inward over cheese, and pinch dough to seal.
- Spread a thin layer of pizza sauce over dough. Spread fries over dough; pour gravy over fries as needed to cover. Top with remaining Mexican cheese blend. Sprinkle bacon pieces evenly over pizza.
- Bake in the preheated oven until cheese is bubbly and crust is golden, about 20 minutes.

- Make your dough by mixing the sourdough starter, bread flour (adding a bit of flour at a time until it takes shape but is still a little sticky) and salt together. Knead the dough for 30 seconds, flour lightly as needed.
- On medium heat melt butter in large saucepan, careful not to burn. Add flour and whisk furiously for 30 seconds, still being careful not to burn. Add beef, chicken broth and pepper and whisk until smooth, cook until desired consistency. Remove from heat, let cool slightly and reserve 2 x ¾ cup of gravy.
- Preheat oven to 550 degrees F° with baking steel or pizza stone inside the oven for 1 hour. (Since the oven is preheated from cooking the fries, just preheat until oven is 550°F)
