CHEF JOHN'S POURABLE PIZZA
Besides being kind of fun to make, this pourable pizza method doesn't require kneading or rolling/stretching/spinning. So it's an easy way to achieve a really thin-crust pizza. Plus you get that crispy, near-charred bottom you usually get only from a pizza oven.

Steps:
- Place flour in mixing bowl with dry yeast, salt, honey, olive oil, and warm water. Whisk together for about 5 minutes. This will be a very thin batter-like dough. Cover and let rise 1 1/2 hours. Dough should be bubbly. Stir with a ladle to eliminate the bubbles.
- Generously oil a cast-iron skillet with olive oil off heat. Pour batter in a squeeze bottle or zip-top bag with a bottom corner snipped. Slowly pour the batter into the skillet starting from the center of the pan and working in circles toward the edge. Try to avoid mixing batter with the oil. If small bubbles of oil appear on the surface, use the tip of a paring knife to gently stir them into the dough.
- Place pan over medium-high heat. Wait for the dough to form bubbles over the entire top surface and the crust starts to dry out a bit. Flip over and continue cooking one side and the next. The bubbly side should be dry and achieve a golden brown color; the bottom should be well browned, about 4 to 5 minutes total per side. Doneness times will depend on how thickly the batter was poured. Remove from heat.
- Spread with pizza sauce and top with your favorite pizza toppings: mozzarella cheese, grated Parmigiano-Reggiano cheese, pepperoni, etc. Try to avoid topping too heavily.
- Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Place pizza under broiler until toppings are cooked, 3 to 4 minutes.

DEEP DISH PIZZA
This deep dish pan pizza recipe is super simple and tastes amazing! The 4 ingredient crust is a breeze to stir together and ends up thick, chewy and delicious.

- The night before you'd like to serve pizza (or the morning before), mix up the pizza dough. Stir together the flour, yeast, water, and salt in a medium bowl. Mixture will look shaggy and a little dry. Cover bowl with plastic wrap and leave dough out on counter to rise for 8-24 hours.
- About an hour before you'd like to serve the pizza, move an oven rack to the lowest position and preheat the oven to 400 degrees.
- Optional: for a crunchy crust, place 2 tbsp oil in the bottom of a 9x13 pan (glass works best). When the oven is almost at 400, place the baking dish in the oven for 5 minutes to heat.
- Remove 9x13 pan from oven. (OR, if skipping the step to make crust crunchy, lightly grease a 9x13 pan.) Using a spatula or scraper, pour the pizza dough into the 9x13 pan. Lightly grease your hands and use your fingers to stretch the dough out until it mostly covers the bottom of the pan. If the pan has been in the oven, be careful not to touch it as it will be hot.
- Spread pizza sauce on top of the dough, all the way to the edges. Sprinkle cheese on top of the sauce, all the way to the edges. Top with pepperoni and a little more cheese if desired.
- Spray a piece of foil with nonstick spray and use it to cover the baking dish. Place dish in oven and bake for 30 minutes. Remove foil and bake for 5-10 more minutes, until bottom crust of pizza and cheese is lightly browned.
- Remove from oven and allow pizza to rest about 10 minutes before removing from pan and slicing into squares.

Pizza cooked in a pan, no yeast required. Where I found this recipe remains a mystery. The recipe is yellowed with age! Very, very simple to make.

HOMEMADE PAN PIZZA DOUGH
Steps:
- Gather the ingredients.
- Mix water, yeast, and salt in a large bowl and stir until everything has dissolved.
- Stir in olive oil.
- Mix in flour.
- Turn dough out onto a floured board and knead for about 5 minutes.
- Grease inside of a medium-sized bowl and place dough inside. Flip dough over so that top is also greased.
- Cover and let dough rise in a warm place until it has doubled in size (about 2 hours).
- Punch down dough and turn out onto a lightly floured board. Knead out bubbles .
- The dough is now ready to be made into a pizza.
- Preheat oven to 450 F. Grease inside of a large skillet or baking pan with olive oil.
- Press dough into pan so that it comes up the sides a little.
- Add your favorite toppings (make it a family affair and allow everyone to join in).
- Bake pizza in preheated oven until done. This is usually 12 to 15 minutes, but baking times will vary. The crust should be golden brown and cheese thoroughly melted. Serve and enjoy.

- Transfer pan to oven and bake until top is golden brown and bubbly and bottom is golden brown and crisp when you lift it with a thin spatula, 12 to 15 minutes.
