THANKSGIVING TURKEY WITH HOLIDAY RUB

Thanksgiving Turkey with Holiday Rub image

Make this turkey rub from Food Network, which has thyme, rosemary, sage and garlic powder.

Provided by Patrick and Gina Neely : Food Network

Time 3h45m

Yield 12 to 14 servings

Number Of Ingredients 16

2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 teaspoons dried thyme
2 teaspoons dried rosemary
1 teaspoon dried sage
1/2 teaspoon garlic powder
1 (14 to 16 pound) turkey, rinsed, patted dry inside and out (neck, heart, and gizzard reserved
Salt and freshly ground black pepper
2 tablespoons olive oil
Turkey or chicken stock
2 garlic cloves, thinly sliced
2 shallots, finely chopped
3 tablespoons all-purpose flour
2 tablespoons fresh lemon juice
1/2 cup sour cream
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 325 degrees F.
  • Mix all of the dry rub ingredients in a small bowl.
  • Put the turkey on a rack in a roasting pan.
  • Generously season the turkey cavity with salt and pepper, to taste. Brush the turkey with olive oil, and rub it with the seasoning mixture. Tie the legs together loosely to hold their shape, and tuck the wing tips under.
  • Roast the turkey until an instant-read thermometer inserted into the thickest part of thigh registers 165 to 170 degrees F, about 3 hours.
  • Transfer the turkey to a platter. Tent it very loosely with foil, and let it rest for at least 30 minutes (the internal temperature will rise 5 to 10 degrees). Reserve the juices in the pan.
  • Gravy: Scrape the juices and browned bits from the roasting pan into a large glass measuring cup. Spoon off the fat, reserving 2 tablespoons. If necessary, add enough stock to the juices to measure 1 2/3 cups.
  • Heat the reserved 2 tablespoons fat in a heavy, large saucepan over medium-high heat. Add the garlic, and shallots, and saute for 2 minutes. Add the flour and whisk until golden, about 4 minutes. Add the degreased pan juices, and the 2 cups stock. Bring to a boil, whisking until smooth. Reduce the heat and simmer until the gravy is reduced to the desired consistency, about 4 minutes. Whisk in the lemon juice, and the sour cream. Season the gravy with salt and pepper, to taste. Pour the gravy into a serving bowl. Carve the turkey and arrange it on a serving platter. Serve the turkey with the gravy.

TURKEY DRY RUB

Turkey Dry Rub image

Every Thanksgiving turkey needs a rub-and this turkey rub is simple and packed with flavor. The salt and the sugar act to both flavor the meat and draw out moisture from the skin of the bird to create a crispy brown crust that is just as delicious as it is beautiful at the center of the Thanksgiving table. Because the black pepper, smoked paprika, and garlic powder are mixed in with the salt and sugar, the spices are able to penetrate into the meat of the bird and flavor the juices in the meat as it cooks. Garlic powder is an essential spice because its pungent flavor complements and enhances the succulent taste of roasted poultry with an earthy depth of flavor. The smoked paprika is a bright red spice that lends the flavor of food cooked over an open flame, and this smokiness adds interest to meat roasted in the oven. The blend of these two spices with the spiciness of black pepper prevent the meat of your precious holiday bird from being bland. To ensure that the meat absorbs as much of the turkey rub's flavor as possible, thaw your turkey two days before Thanksgiving, and then rub it evenly with this rub mixture the day before Thanksgiving. Leave the turkey uncovered in the refrigerator overnight. This time and the dryness of the refrigerator draw out the moisture in the turkey and infuse it with the flavor of the spices before being reabsorbed by the bird. This is a foolproof step for a flavorful turkey with crisp skin.

SIMON & GARFUNKEL SPICE RUB FOR POULTRY RECIPE

Simon & Garfunkel Spice Rub For Poultry Recipe image

Green herbs love poultry and visa versa. As background for this recipe, please read my article on the Science of Rubs.

Provided by Christine Bucher

Categories     Sauces and Condiments

Time 10m

Number Of Ingredients 9

1 tablespoon dried crushed parsley
2 tablespoons dried crushed sage
1 tablespoon dried crushed rosemary
1 tablespoon dried crushed thyme
1 tablespoon dried crushed oregano
1 tablespoon dried crushed basil
10 bay leaves
1 tablespoon ground black pepper
1 tablespoon sugar

Steps:

  • Measure everything and dump it into a blender; see "Measuring" note about the bay leaves. Put the lid on the blender (very important), and run it on medium for a few seconds, turn it off, and run it again. Continue pulsing about until you have a powder. Dump the whole thing in a jar and label it.
  • How to use this stuff. If the food has not been been brined, then sprinkle with salt, ½ teaspoon per pound. If it has been brined, then skip the salt. Lightly coat your chicken or potatoes or asparagus or whatever with water (the ingredients dissolve better in water than oil), sprinkle on the rub liberally, even if you are a conservative. If time permits, let the seasoned meat sit in the fridge for an hour or three.
  • Grill, smoke, or roast.

  • Easy smoked turkey rub. Here’s your new go-to, classic bbq turkey rub. It’s perfectly balanced and suitable for kids who don’t like a lot of heat. If you prefer a little extra kick there are some easy adjustments you can make.
  • The Simon and Garfunkel Spice Rub. In case you were wondering, this spice rub contains no ground up Simon and Garfunkel. This rub, created by Meathead Goldwyn, takes its name from the inclusion of parsley, sage, rosemary, and thyme.
  • Herby Smoked Turkey Rub. This rub comes with all the ingredients you would expect in a standard BBQ rub (brown sugar, smoked paprika, salt, pepper, etc), and then gives it a herby twist with rosemary, thyme, sage, and celery salt.
  • The garlic butter rub (get the best from your dry brining) This rub recipe comes in two parts, the dry brine to season the meat and the garlic butter rub to give it a deep garlicky flavor.
  • The citrus and herb butter rub. Citrus and herb rubs go together with turkey like hotdogs and cold beer. This traditional butter rub has all the tastes of the festive season, and, while it’s not going to win any awards for originality, there is something fantastic about a holiday classic done just right.
  • The Best Fried Turkey Rub. The inventor of this rub and injection combo calls it the way to make “best fried turkey IN THE WORLD,” and while that is quite a claim, the flavor combos do look amazing.
  • The Cajun Turkey Rub (for the deep Louisiana flavor) Turkey meat has a somewhat unfair reputation for being dry and bland, and if that is something you are afraid of, you need to use this rub.
  • Jerk Smoked Turkey Rub (the spicy one) Have you ever wished thanksgiving involved more eye-watering chili pepper heat? If you have, this Jamaican-style jerk rub is the answer to your prayers, as it’s full of Scotch bonnet pepper spice.
  • The Smoked Turkey Rub (the one that frees up the oven) Oven space is always at a premium when you are cooking a big meal, and there is rarely room for the vegetables once you’ve squeezed in a 15-pound turkey.
