BAKED SPICED CHICKEN

Steps:
- Preheat an oven to 400 degrees F (200 degrees C). Combine the paprika, parsley, sugar, mustard, salt, and pepper in a small bowl; set aside.
- Place the chicken pieces in a 9x13 inch baking dish, and coat with the vegetable oil; arrange skin-side up. Sprinkle evenly with the spice mixture.
- Bake the chicken in the preheated oven until no longer pink at the bone and the juices run clear, about 45 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

SPICY CHICKEN BREASTS
This is a great skinless, chicken breast recipe that can be served over salad greens or as an entree! If serving over salad greens, cut chicken into strips and top with your favorite salsa or dressing.

- In a medium bowl, mix together the paprika, garlic powder, salt, onion powder, thyme, cayenne pepper, and ground black pepper. Set aside about 3 tablespoons of this seasoning mixture for the chicken; store the remainder in an airtight container for later use (for seasoning fish, meats, or vegetables).
- Preheat grill for medium-high heat. Rub some of the reserved 3 tablespoons of seasoning onto both sides of the chicken breasts.
- Lightly oil the grill grate. Place chicken on the grill, and cook for 6 to 8 minutes on each side, until juices run clear.

- PREP/PREPARE
- For this recipe, you will need a rimmed baking sheet, lined with parchment paper, and a wire rack. The rack is optional; however, it gives the chicken a crisper crust on the bottom.
- Brining the Chicken: There are times when brining is not necessary, and other times when it is advisable. When I oven back chicken, I usually brine. A standard brine for boneless, skinless chicken breast would be about 2.5 tablespoons of salt dissolved into a quart of cold water, then immerse the breast for about 45 minutes, but no more. FYI: I you do choose to brine the chicken, then do not add the salt to the spice rub.
- Gather your ingredients (mise en place).
- Add all of the ingredients together for the spice rub, and reserve.
- Place a rack in the middle position, and preheat the oven to 425f (220c).
- Cut the chicken in half, lengthwise.
- Coat with the grapeseed oil, and sprinkle the spice rub on both sides of the chicken.
- Place on a parchment-lined baking sheet, fitted with a wire rack (if using).
- Place into the preheated oven, and bake until cooked through, and the spices are nice and brown, about 18 - 22 minutes.
- PLATE/PRESENT
- Rest the chicken for about 5 minutes, then slice and serve. Enjoy.

JUICY BAKED CHICKEN BREASTS - THAT SPICY CHICK

- Preheat oven to 350°F/175°C. Line a baking tray with a sheet of aluminum foil and brush lightly with about a half tablespoon of olive oil (or any other cooking oil you prefer). (Note: If your chicken breasts are on the larger side and over 7 ounces / 200 grams each, I recommend pounding them with a meat mallet until they are about half an inch thick to promote even cooking.)
- Combine kosher salt, freshly cracked black pepper, paprika, and garlic powder in a small bowl. Mix with a spoon or use a small whisk to combine the spices and seasonings until fully integrated.
- Brush the remaining olive oil on the chicken breasts, then sprinkle the seasoning mixture on both sides until they are fully coated. You can use your fingers to rub the seasoning into the breasts. (The oil helps to keep the chicken breasts juicy during baking and allows the seasonings to better stick to them.)
- Place the chicken breasts (plump side up) on the foil lined baking tray and bake for 20-22 minutes, turning once using tongs halfway through, or until the chicken has fully cooked through. You can make sure that they are fully cooked by piercing the thickest part of the breasts with an instant read thermometer. It is safe to consume once it reads 165°F/75°C.
