POTLUCK MEATBALLS
I've found that these mini meatballs make a hearty, "can't-miss" appetizer year round. They are always well-received at a potluck, and the only "utensil" I need to supply is toothpicks. They also make a good entree over noodles. More Potluck Appetizers »

Steps:
- Preheat the oven to 325. Line a baking sheet with aluminum foil for easy clean-up and place an ovenproof baking/cooling rack over top; spray rack generously with nonstick cooking spray.
- Whisk the egg and cream together in a medium bowl. Stir in the bread and mash until no large bread chunks remain. Set aside.
- In a stand mixer fitted with the paddle attachment, beat the pork, garlic, allspice, pepper, salt, and baking powder on high speed until smooth and pale, about 2 minutes, scraping bowl as necessary. Add the bread mixture to the mixing bowl and beat on high speed until smooth and homogeneous, about 1 minute, scraping the bowl as necessary. Add the beef and mix on medium-low speed until just incorporated, about 20 seconds, scraping the bowl as necessary.
- Using moistened hands (it's sticky and wet hands help; keep wetting them as you go), form the meat mixture into tablespoon-size round meatballs and place on the prepared rack. Bake for about 20 minutes, until just done.
- Meanwhile, in a large sauté pan, mix together all of the ingredients for the sauce. Bring to a simmer and cook gently until thickened, about 10 minutes.
- Add the baked meatballs to the sauce and stir to coat evenly. Transfer them to a serving platter, spear with toothpicks and spoon the sauce over top. Garnish with parsley if desired. Serve warm.
- Freezer-Friendly Instructions: The meatballs and sauce can be frozen in separate containers for up to 3 months. When ready to serve, reheat the meatballs in their sauce on the stovetop over medium heat until hot in the center.

AUTUMN'S POTLUCK MEATBALLS
I'd decided to make meatballs for a potluck lunch at work- but my small rural grocery store was out of chili sauce so I had to improvise. This recipe is what I came up with! If the resulting sauce is too tangy, feel free to add up to another 1/2 cup of brown sugar.

Steps:
- For the meatballs: Place the ground beef, breadcrumbs, onion, parsley, eggs, red pepper flakes and some salt and pepper in a large bowl and mix together thoroughly. Form the mixture into uniform-size balls.
- Heat the oil and butter in a large pan. When hot, begin frying the meatballs in batches, setting them aside on a plate or baking sheet when brown. You may need to drain any excess fat from the pan during the frying process. Continue frying until all the meatballs are browned. Set aside.
- For the sauce: Add the beef consomme and three-quarters of the can of beef broth to the meatball pan, reserving the remaining broth in a small bowl. Add the mustard and tomato paste to the pan, then stir and bring to the boil.
- Add the cornstarch to the reserved beef broth and whisk so there are no lumps. As the sauce starts to boil, add the cornstarch mixture. When the sauce has thickened after a few minutes, return the meatballs to the pot and stir to make sure they are all coated in sauce. Continue to simmer until the meatballs are cooked through, about 45 minutes.

- Prepare the meatballs by mixing all the meatball ingredients into large mixing bowl. I hate to say it but there’s no better kitchen utensil for mixing meatballs than your hands. Roll up your sleeves!
- Mix all your sauce ingredients and pour over meatballs. I use a spoon and place about one spoonful over each meatball.

- Cocktail Meatballs – Throw away those old kitschy cocktail meatball recipes that call for grape jelly and frozen meatballs—these are easy-to-make and so much better.
- Black Bean, Corn & Avocado Salad with Chipotle-Honey Vinaigrette – With black beans, corn, bell peppers and avocado, this Mexican salad is always a crowd-pleaser; it’s perfect for a potluck because it travels well and you can make it ahead of time.
- Roasted Garlic Guacamole – When feeding a crowd, you can never go wrong with guacamole—especially this version, which is made with roasted garlic in lieu of raw onions.
- Black Bean Dip – Inspired by a delicious black bean dip I enjoyed in Costa Rica, this recipe calls for lots of onions, garlic, jalapeños, and fresh lime juice to boost the flavor.
- Carrot Slaw with Cranberries, Toasted Walnuts & Citrus Vinaigrette – Carrot salads are great for a potluck because they keep well and present beautifully.
- Asian Chicken Noodle Salad with Ginger Peanut Dressing – Asian noodle salads are always a crowd favorite, and this one is no exception. Shredded roasted chicken and noodles are tossed in a punchy soy, ginger, and peanut dressing, then brightened up with a colorful and crunchy mix of red bell peppers, scallions, and chopped peanuts.
- Spinach & Gruyere Quiche – Quiches can be served room temperature, which makes them ideal for a potluck. This one is made with a combination of heavy cream and Gruyère, which makes it insanely rich, and a good bit of spinach, which balances out all that richness and—dare I say—makes it just a little bit good for you.
- Chocolate Banana Bread – Banana bread is usually something to eat for breakfast (or, let’s be honest, something to cut a tiny slice from every time you walk through the kitchen) but this one is so decadent, you can really serve it for dessert.
- Rum Pound Cake – Pound cake is the perfect potluck dessert because it transports easily, presents beautifully and can be cut into very thin slices. This butter and rum soaked version is incredibly moist and impossible to resist!
- Supernatural Brownies – Bake them, slice them, and pack them up: brownies are guaranteed to please. Typically brownie lovers fall into two camps: the “fudgy” and the “cakey.”
