A delicious, sweet version of candied sweet potatoes.

4 pounds sweet potatoes, quartered
1 ¼ cups margarine
1 ¼ cups brown sugar
3 cups miniature marshmallows, divided
ground cinnamon to taste
ground nutmeg to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 9x13 inch baking dish.
  • Bring a large pot of water to a boil. Add potatoes and boil until slightly underdone, about 15 minutes. Drain, cool and peel.
  • In a large saucepan over medium heat, combine margarine, brown sugar, 2 cups marshmallows, cinnamon and nutmeg. Cook, stirring occasionally, until marshmallows are melted.
  • Stir potatoes into marshmallow sauce. While stirring mash about half of the potatoes, and break the others into bite-sized chunks. Transfer to prepared dish.
  • Bake in preheated oven for 15 minutes. Remove from oven and cover top evenly with remaining marshmallows. Return to oven and bake until marshmallows are golden brown.

Slow Cooker Sweet Potatoes are so simple and delicious. Throw them in the crock pot in the morning and let them slowly cook all day long while you prepare your other dishes.

6 sweet potatoes (peeled and sliced )
½ cup orange juice
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 teaspoon salt
¾ cup brown sugar
2 cups mini marshmallows

Steps:

  • Spray slow cooker with nonstick cooking spray.
  • Spread chopped sweet potatoes in the bottom of the slow cooker.
  • In a medium mixing bowl, combine orange juice, vanilla, cinnamon, nutmeg, salt and brown sugar.
  • Pour over the top of the sweet potatoes and place lid on the slow cooker.
  • Cook on low for 4-6 hours or high for 2-3.
  • Once cooked, pour all the contents from your slow cooker into a baking dish.
  • Top with marshmallows and broil in oven until marshmallows are golden brown (mine took about 45 seconds!).

1 cup packed brown sugar
1 cup sugar
8 medium sweet potatoes, peeled and cut into 1/2-inch slices
1/4 cup butter, melted
2 teaspoons vanilla extract
1/4 teaspoon salt
2 tablespoons cornstarch
2 tablespoons cold water
Minced fresh parsley, optional

Steps:

  • In a small bowl, combine sugars. In a greased 5-qt. slow cooker, layer a third of the sweet potatoes; sprinkle with a third of the sugar mixture. Repeat layers twice. In a small bowl, combine the butter, vanilla and salt; drizzle over potatoes. Cover and cook on low for 5-6 hours or until sweet potatoes are tender., Using a slotted spoon, transfer potatoes to a serving dish; keep warm. Pour cooking juices into a small saucepan; bring to a boil. In a small bowl, combine cornstarch and water until smooth; stir into pan. Return to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Spoon over sweet potatoes. , Sprinkle with parsley if desired.

1 cup milk
1/2 cup brown sugar
1/4 cup white sugar
1 (10 ounce) bag miniature marshmallows
1 1/2 cups pecans, chopped (optional)
1 cup margarine or 1 cup butter

Steps:

  • In large bowl, heat yams in microwave to soften.
  • Add milk, margarine/butter, and both sugars. Blend until smooth. Stir in pecans, if desired.
  • Spread in deep 13x9 dish and top with mini-marshmallows (leaving room for the marshmallows to rise!).
  • Bake for 20 minutes at 350 degrees, until golden on top.

3 pounds sweet potatoes
1 cup dark brown sugar
1 stick butter
1 1/2 cups Karo Syrup

Steps:

  • Peel the potatoes and slice into 1 inch rounds or large chunks.
  • Add to a large pot and boil the sweet potatoes until just fork tender - about 15 minutes.
  • Remove from heat and immediately drain really well.
  • Transfer the tender sweet potatoes to a large skillet or electric skillet.
  • Add the remaining ingredients, brown sugar, butter & syrup. Place on medium heat until the butter and brown sugar melts and the mixture is thick and bubbly.
  • Reduce heat to low and simmer for about 1 1/2 hours, basting every 10-15 minutes.
