- In a large bowl, toss potatoes with green onions, bacon, salt and pepper. Place half of the mixture on a greased double thickness of heavy-duty foil (about 18 in. square); dot with 1 tablespoon butter. Fold foil over potato mixture and crimp edges to seal. Repeat to make a second packet., Grill, covered, over medium heat 20-23 minutes on each side or until potatoes are tender. Remove from grill., Open foil carefully to allow steam to escape. Sprinkle potatoes with cheese. Grill opened packets, covered, 3-5 minutes longer or until cheese is melted.

GRILLED POTATOES IN FOIL (POTATO PACKETS)
Foil packets are a quick and easy way to prepare potatoes for the grill, oven or even the campfire!

Steps:
- Place foil packets on the counter and spray with cooking spray.
- Wash and slice potatoes (and onions/mushrooms if using).
- Place potato slices (approx 1 potato per packet) and any optional toppings on each foil piece. Top with a generous pat of butter and salt/pepper to taste. Fold each packet closed.
- Grill over medium heat for 30 minutes or until soft.

FOIL PACKET COUNTRY POTATOES ON THE GRILL
This is one of my favorite summer potato recipes. It's so easy to make. I like to cook mine a little longer, so those potato and onion slices at the bottom of the packet are browned and buttery crispy. I like to cook these potatoes while grilling meat, so everything is done all at once without too much effort. Whenever I make this, we fight over who gets to scrape the bottom of the packet for the browned bits of potatoes and onions.

Steps:
- Preheat grill to medium heat.
- Cut two sheets of aluminum foil to 20 inches in length and arrange them cross-wise on a flat surface.
- Place 2 tbs. butter in center of foil.
- Arrange potatoes, onion and garlic atop butter in center of foil. Sprinkle with seasonings and place remaining 2 tbs. butter on top.
- Bring ends of top layer of foil together and fold downward 3-4 times toward the potato mixture, leaving enough slack so that the mixture doesn't spill too much out the sides.
- Repeat with bottom layer of foil until tightly sealed.
- Place packet on top rack of grill and cook, covered, for 30-35 minutes. Do not turn.
- Remove packet from grill with oven mitts, being careful not to tear the bottom of the packet.
- Carefully open foil and serve directly from packet.

POTATO PACKS (FOR THE GRILL)
My dad made these when I was a kid; I watched, copied and modified his creation to make this scrumptious side dish for grill out nights.

Steps:
- Put out a piece of aluminum foil large enough to envelope an entire pack (about the size of a dinner plate).
- Spread 1/8 cup better on the foil. Sprinkle half the crushed garlic on the butter. Season with salt, pepper and lemon pepper. I use salt sparingly and pepper and lemon pepper generously.
- Spread half of the onions, half of the mushrooms, half of the green pepper, and half of the jalapeno on top of the seasoned butter.
- Cover with the potato.
- Cover with the remainder of the onion, mushrooms, green pepper and jalapeno.
- Put the rest of the garlic on top. Season with salt, pepper, and lemon pepper. Spread the rest of the butter (1/8 cup) on the very top.
- Roll up the aluminum foil to cover all the ingredients. Use a second piece of aluminum foil to secure.
- Put on the grill for around 20 minutes or until done, flipping at least once.
- Open the aluminum foil up and enjoy!

- Preheat an outdoor grill for high heat.
- On a large sheet of foil, place the green beans, red potatoes, onion, and sausage. Season with salt and pepper, sprinkle with oil, and top with butter. Tightly seal foil around the ingredients, leaving only a small opening. Pour water into the opening, and seal.
- Place foil packet on the prepared grill. Cook 20 to 30 minutes, turning once, until sausage is browned and vegetables are tender.

Steps:
- When the fire is lit but not ready, lay out 8 pieces of foil (about 12 by 8 inches) and brush with olive oil.
- Shingle an eighth of the potatoes in a circle in the center of each piece of foil. Break the onion slices into rings and scatter evenly over each potato ring. Equally divide the remaining olive oil, rosemary, salt, and pepper over the potatoes.
- With the potato rings intact, bring the two large edges of foil to the center, sealing firmly.
- Fold over the other two short edges to seal. Place on a medium or medium-hot fire for 20 to 25 minutes or until the potatoes are cooked through (Cooking in foil packets is not an exact science, so remember to check one packet after 20 minutes for doneness and to make sure the bottom isn't burning.
- If necessary, finish cooking with another foil sheet under the packets.).
