6 red potatoes, cubed
1 teaspoon paprika
1 teaspoon cayenne pepper
1 teaspoon chili powder
1 teaspoon onion salt
1 teaspoon garlic powder
2 teaspoons dried parsley
2 tablespoons olive oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and spread on a baking sheet.
  • In a small bowl, or cup, combine paprika, cayenne, chili powder, onion salt, garlic powder and parsley.
  • Drizzle potatoes with oil and sprinkle with spice mixture.
  • Bake in preheated oven for 40 minutes, or until crisp, turning every 10 minutes.

3 pounds medium Yukon Gold potatoes, cut into 1-1/2-inch cubes (about 8 potatoes)
2 tablespoons olive oil
2 garlic cloves, minced
2 tablespoons smoked paprika
2 teaspoons garlic powder
1-1/2 teaspoons chili powder
1-1/2 teaspoons ground cumin
1/4 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1/8 teaspoon pepper
AIOLI:
1-1/2 cups mayonnaise
3 tablespoons lemon juice
3 garlic cloves, minced
1 tablespoon minced fresh chives plus additional for topping
1 teaspoon red wine vinegar
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 375°. Place potatoes in a Dutch oven; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, 8-10 minutes or until just tender. Drain; pat dry with paper towels. Transfer potatoes to a mixing bowl. Toss potatoes in oil and minced garlic to coat evenly. , Combine the paprika, garlic powder, chili powder, cumin, salt, pepper flakes and pepper; sprinkle over potatoes. Gently toss to coat. Transfer potatoes to 2 greased 15x10x1-in. baking pans, spreading into a single layer. Bake until crispy, about 25 minutes, stirring potatoes and rotating pans halfway through cooking., For aioli, combine ingredients until blended. Transfer potatoes to a serving platter; sprinkle with chives. Serve warm with aioli.

These Easy Seasoned Roasted Potatoes have big flavor thanks to the yummy combination of seasonings. Perfectly crispy and simple too!

4 medium gold or yellow potatoes (about 5 cups after chopping)
2 tbsp olive oil (If your potatoes are pretty large you can add an extra tbsp of oil.)
1 tsp chili powder
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
1 tsp dried parsley (Can substitute another dried herb.)

Steps:

  • Preheat oven to 425 degrees.
  • Slice your potatoes into chunks. I like to make them about 1/2 inch thick and 1 - 1 1/4 inches in diameter. This is quite a bit larger than I'd cut them for a hash. Place the sliced potatoes into a bowl and add all other ingredients. Stir to fully coat the potatoes.
  • Spread coated potatoes in a single layer on a parchment paper lined baking sheet. Place in the oven. Roast for 20 minutes. Remove from oven and flip potatoes. Place back in the oven and roast for 5 to 10 more minutes (10 minutes is perfect in my oven).

4 medium potatoes
1 teaspoon salt
2 -3 tablespoons melted butter
2 -3 teaspoons dried herbs, of your choice (if you use fresh herbs(use 2/3 tablespoons)
4 tablespoons grated cheddar cheese
1 1/2 tablespoons parmesan cheese

Steps:

  • Peel the potatoes.
  • Cut the potatoes into thin slices, but not all the way through; use a handle of a spoon to prevent knife from cutting all the way.
  • Put potatoes in a baking dish; fan them slightly.
  • Sprinkle with salt and drizzle with butter.
  • Sprinkle with herbs.
  • Bake at 425 degrees for about 50 minutes.
  • Remove from oven and sprinkle with cheeses.
  • Bake potatoes for another 10-15 minutes until lightly browned, cheeses melted and potatoes are soft inside; check with a fork.

1 teaspoon cumin seed
1 teaspoon dried red chili, crushed
1/2 teaspoon mixed dried onion
mustard seeds, and
fenugreek seeds
1/2 teaspoon fennel seed
3 garlic cloves, sliced
2 1/2 cm fresh gingerroot, sliced
2 medium onions, sliced
500 g new potatoes
1 tablespoon fresh red chile, sliced
1 tablespoon fresh green chile, slice

Steps:

  • Heat the oil in wok. Lower the heat slightly and add the cumin seeds, dried chillies, mixed onion, mustard and fenugreek seeds, fennel seeds,garlic slice and ginger. Fry for 1 minute.
  • Add sliced onion and fry for 5 minutes until the onion are golden.
  • Add the potatoes and fresh red and green chillies and mix well.
  • Cover the wok with lid. Cook over a very low heat for about 7 minutes.
  • Remove the pan from and serve hot with naan and raita.

6 tbsp. vegetable oil
1/8 tsp. ground asafoetida
2 tsp. whole cumin seeds
¼ tsp. whole fenugreek seeds
2 tsp. whole black mustard seeds
1-3 dried hot red peppers
2 tbsp. sesame seeds
¼ tsp. turmeric
2 tsp. salt
to taste ground pepper
2 tsp. ground amchur (mango powder)

Steps:

  • Boil the potatoes in their jackets. Drain and allow them to cool for 3 to 4 hours. Peel and dice them. Heat the oil in a wok over a medium flame. When very hot, put in the next seven ingredients in quick succession. (up to and including turmeric) Add potatoes. Heat to medium high and stir-fry for 5 minutes. Add salt, pepper and amchur. Stir-fry 5 minutes (pototoes with light brown spots)

1 to 2 tablespoons vegetable oil
1/2 teaspoon turmeric
1/2 teaspoon red chili powder
Coarse salt
1/2 teaspoon fenugreek seeds
1/2 teaspoon nigella seeds
1/2 teaspoon black mustard seeds
1/2 teaspoon cumin seeds
1/2 teaspoon fennel seeds
3 tablespoons freshly chopped cilantro leaves

Steps:

  • Slice the potatoes into half-inch rounds, then dice these further into small, evenly-sized cubes. Using a wok or other non-stick pan, take the minimum amount of oil needed and fry these cubed potatoes over a high heat to start with and then turn the heat down and cover. When the potatoes are a little more than half done, add the turmeric, chili powder and some salt, closely followed by the whole spices, mixed together. Stir to combine and put the lid back on once again. When the potatoes are nearly ready (and you will have to be vigilant to ensure they don't get too soft), take the lid off, turn the heat up and stir-fry to enable any excess liquid to evaporate. Garnish with fresh cilantro and serve.
