Once the highland indians had learned the art of cheese making from the Spanish, they began sprucing up their boiled potatoes with creamy cheese sauces. Potatoes with Hot Sauce is a peppery version created by Bolivian Indians. Recipe comes from Classic International Recipes. I suggest you take a test bite of the chili pepper you are using to judge how much chili pepper you want in your sauce. I've found there is quite a variety of "heat intensity" that varies even among the same variety of pepper. I like mine spicy, so sometimes I increase the chili pepper, or even add a little cayenne.

5 medium potatoes, peeled and quartered (5 cups)
1 hard-cooked egg
2 tablespoons onions, finely chopped
2 teaspoons green chili peppers, finely chopped
1 tablespoon cooking oil
1 tablespoon all-purpose flour
1/4 teaspoon salt
1 (13 ounce) can evaporated milk (1 2/3 cups)
1 cup mozzarella cheese, shredded (4 oz)
1 teaspoon lemon juice
1/4 cup peanuts, chopped (optional)
1/4 cup ripe olives, pitted and sliced (optional)

Steps:

  • Potatoes:.
  • In a covered saucepan, cook the potatoes in a small amount of boiling salted water for 20 to 25 minutes or until tender. Transfer to a serving bowl; keep warm.
  • Meanwhile, separate the egg yolk from the white. Chop the yolk and white separately. Set both aside.
  • Sauce:.
  • In a saucepan, cook the onion and chili pepper in hot oil till tender but not brown.
  • Stir in the flour and salt. Cook and stir for 1 minute.
  • Add the evaporated milk all at once; cook and stir till thickened and bubbly. Cook and stir 1 minute more.
  • Add egg yolk, cheese, and lemon juice, stirring till the cheese is melted. Pour hot sauce over the potatoes.
  • Garnish with hard-cooked egg white, peanuts, and olives, if desired.

This recipe was passed to me by a friend whose husband loved Buffalo wings and baked potatoes. I made it for the first time for my crew of boys and it was a big hit. Being a single working mom and short on time, I made some shortcuts to the recipe and to my surprise, it tasted even better.

6 tablespoons hot pepper sauce
⅓ cup olive oil
2 tablespoons garlic powder
1 tablespoon freshly ground black pepper
1 tablespoon paprika
1 ½ teaspoons salt
8 potatoes, cut into 1/2-inch cubes
2 pounds skinless, boneless chicken breast halves, cut into 1/2-inch cubes
2 cups shredded Mexican cheese blend (such as Great Value Fiesta Blend®)
1 cup crumbled cooked bacon
1 cup diced green onions

Steps:

  • Preheat oven to 500 degrees F (260 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Heat hot pepper sauce, olive oil, garlic powder, black pepper, paprika, and salt in a large skillet over low heat, stirring until thoroughly combined. Turn off heat. Toss potatoes in batches with the hot pepper sauce mixture to coat and use a slotted spoon to transfer potatoes to the prepared baking dish. Leave remaining sauce in skillet. Mix chicken into remaining sauce and allow to marinate while potatoes roast.
  • Bake potatoes until tender inside and crisp and brown outside, 45 to 50 minutes, stirring every 10 to 15 minutes.
  • Reduce oven heat to 400 degrees F (205 degrees C).
  • Spread chicken cubes over roasted potatoes. Sprinkle Mexican cheese blend, cooked bacon, and green onions over chicken. Return to oven and bake until chicken is cooked through and the cheese topping is bubbling, about 15 minutes.

1/4 tsp. ground black pepper
1 jar (15 oz.) CLASSICO Spicy Tomato & Parmesan Cream Pasta Sauce
8 slices OSCAR MAYER Bacon, cooked, crumbled

Steps:

  • Heat oven to 425°F.
  • Cut each potato into 8 wedges; place in large bowl. Add oil and pepper; toss until potatoes are evenly coated with oil mixture.
  • Spread into single layer on large rimmed baking sheet sprayed with cooking spray.
  • Bake 50 min. or until potatoes are tender and golden brown, turning potatoes every 15 min. About 5 min. before potatoes are done, cook pasta sauce and bacon in saucepan on medium heat until heated through, stirring frequently.
  • Drizzle pasta sauce mixture over potatoes.

¼ cup butter, softened
Frank's® RedHot® Original Cayenne Pepper Sauce to taste
¼ cup hot pepper sauce (such as Frank's RedHot®)

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Prick potatoes all over with a fork. Place each potato on a piece of aluminum foil large enough to cover completely. Spread 1 tablespoon butter on each potato; coat liberally with hot sauce and sprinkle with salt and black pepper. Wrap each potato tightly in foil. Place potatoes into a 13x9-inch baking pan.
  • Bake in the preheated oven until potatoes are tender, 45 minutes to an hour depending on size. Unwrap and serve.
