New Brunswick and Prince Edward Island are famous for their pototato production. This is a recipe from the PEI Potato Board, a good use for all those New Brunswick spuds.

- Preheat oven to 375°F (190°C).
- Wash potatoes.
- Halve or quarter larger potatoes.
- Cut onion into eight pieces.
- Cut peppers into one-inch pieces.
- Combine oil and seasonings in a plastic bag. Add vegetables and shake to coat with seasonings.
- Place in shallow dish and bake uncovered in the oven, until potatoes are tender, about 40-45 minutes, stirring once.

- Preheat oven to 400 degrees F (200 degrees C).
- Heat 2 teaspoons olive oil in a large skillet over medium heat, and cook and stir the sausage until browned. Transfer the cooked sausage to a large baking dish.
- Pour 1/4 cup of olive oil into the skillet, and cook the potatoes, stirring occasionally, until browned, about 10 minutes. Place the potatoes into the baking dish, leaving some oil in the skillet.
- Cook and stir the green and red peppers and onions in the hot skillet until they are beginning to soften, about 5 minutes. Add the vegetables to the baking dish.
- Pour wine and chicken stock over the vegetables and sausage, and sprinkle with Italian seasoning, salt, and pepper. Gently stir the sausage, potatoes, and vegetables together.

- Fill a large bowl halfway with cold water. Peel the potatoes and place them in the water as you go, to prevent discoloration.
- Slice the potatoes thinly (1/8-1/4 inch thick) and place slices in the bowl of water, as you go. I recommend using a mandolin or a food processor with the slicing blade attachment. Or you can slice them by hand with a sharp knife.
- Lay an absorbent dish towel on the counter and have another one or two handy. Drain the sliced potato in a mesh strainer and dump them onto a towel. Pat and blot them dry. They will brown better if you get them nice and dry.
- Heat oil in a large skillet (preferably cast iron) over high heat, until hot but not smoking. Add the potato slices and immediately toss them until they're all coated with oil. Let the potatoes cook, undisturbed, for 3-5 minutes, or until the bottom pieces look brown around the edges. Mound the peppers on top and add a pinch or two of salt. Flip the potatoes over with a spatula, so some raw potatoes and peppers are on the bottom of the skillet. Leave them undisturbed for another 3-5 minutes, until they are nice and brown on the bottom. Continue to brown and toss potatoes for 5-10 minutes longer, until about half of them are crisp and brown and the rest are soft and creamy.
- Serve hot. Season, to taste, with salt.

- Boil the potatoes in lightly salted water until just fork tender, about 8 to 10 minutes. (Do not overcook or mixture will become mushy)
- Drain the potatoes and set aside.
- In a large frying pan, heat 2 tablespoons of the oil over medium heat until lightly smoking, and then add the pancetta, peppers, and onions.
- Cook until the peppers and onions begin to soften, stirring every once in a while, about 8 to 10 minutes.
- Add the garlic, and continue to cook until the mixture begins to brown, about 3 to 4 minutes more.
- Add the potatoes to the pan along with the rest of the oil, salt, pepper, and red pepper flakes and continue to cook, gently folding over the mixture as it cooks once or twice.
- After about 6 to 7 minutes, once the potatoes begin to color, Add the parsley leaves and gently mix.

- First, char the pepper. Rest the whole pepper over the flame of a gas burner. Let it get fully black and charred before rotating to a new side. Once the entire pepper is charred, transfer to a bowl covered with beeswax wrap or cling wrap. Let the pepper steam in the bowl for about 10 minutes.
- While the pepper sits, cook the potatoes. Heat a heavy-bottomed pan over medium heat and add the oil. Once the oil is hot, add the potatoes. Let them cook for 10 to 15 minutes, not stirring too often so that they develop some nice brown color. Once they’ve browned and are starting to get more tender, add the onions and a big pinch of salt. Let them cook for another 10 to 15 minutes.
- While the onions and potatoes are cooking together, peel the pepper. You can remove the pepper’s charred skin with your hands or a paper towel. Do not rinse it under running water—this will wash away all the charred flavor you just developed. Once it’s peeled and deseeded, slice it into ½-inch-thick strips. Add these to the onion and potato mixture. Taste the mixture and adjust for seasoning, salting as needed. The potatoes should be fork-tender by now, but if they need another 5 minutes or so that’s fine—all the flavors will meld together while they finish cooking. You can use those last few minutes to prep your toppings (grate cheese, pick cilantro leaves, warm tortillas).
- To assemble, spoon some of the potato-onion-and-pepper mixture into a warm tortilla. Top with a little salsa, shredded cheese, cilantro, and hot sauce if desired.
