SWEET POTATO-TURKEY MEATLOAF
I initially created this recipe after one my grandmother used to make with beef and regular mashed potatoes. Instead, I substituted mashed sweet potatoes and used ground turkey. It tastes even better the next day when slices are grilled in a pan with butter, then place on bread slices to make a sandwich. The biggest secret to the taste is the sweetness from the sweet potato!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 2 quart baking dish.
- Bring a pot of lightly salted water to a boil. Add the sweet potato, and cook until soft, about 10 minutes. Drain the sweet potatoes, and mash or whip until smooth.
- Mix the ground turkey together with the egg, sweet onion, garlic, barbecue sauce, ketchup, Dijon mustard, and whole wheat bread crumbs in a large mixing bowl. Season to taste with salt and pepper. Add the sweet potatoes, and stir until evenly combined. If the mixture seems too wet, add more bread crumbs. Use your hands to form the turkey mixture into a loaf shape and place in the prepared baking dish.
- Bake in the preheated oven 1 hour. Slice the loaf to serve.

Steps:
- Preheat the oven to 425 degrees F. Pierce the sweet potatoes all overwith a fork and microwave until tender, about 15 minutes.
- Meanwhile, coat a rimmed baking sheet with cooking spray. Combine the turkey, onion, panko and egg in a bowl. Add half each of the ketchup, hoisin sauce and ginger and season with salt and pepper. Mix with your hands until just combined. Form into a 9-by-11-inch rectangle on the prepared baking sheet. Mix the remaining ketchup, hoisin sauce and ginger in a small bowl with 2 tablespoons water; brush over the meat. Bake until golden and cooked through, 12 to 15 minutes. Turn on the broiler and broil until the glaze is just caramelized, 1 to 2 minutes.
- Mix the butter, half of the scallions, 1/2 teaspoon salt, and pepper to taste in a small bowl. Split the potatoes and top with the scallion butter. Slice the meatloaf and serve with the potatoes. Sprinkle with the remaining scallions.
BEST TURKEY MEATLOAF
After much trial and error trying to make a more healthy meatloaf, I came up with this recipe. It is important to make this on a baking sheet so the liquids can be drained off the meatloaf. Also, do not put the topping on before the meatloaf has cooked for 30 minutes. Turkey creates a lot of juices, so if you put the topping on first it will become watery and runny.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a jelly roll pan.
- Mix ground turkey, buttery round cracker crumbs, milk, onion, egg, salt, garlic, and black pepper in a bowl; shape into a loaf and place on the prepared jelly roll pan.
- Mix ketchup, brown sugar, and Worcestershire sauce in a separate bowl; set aside.
- Bake meatloaf in preheated oven for 30 minutes; remove from oven and drain liquids. Top meatloaf with ketchup topping. Return loaf to oven and continue baking until no longer pink in the center, about 30 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

Steps:
- To make the meatloaf: Preheat the oven to 350 degrees F.
- Spray the ring mold pan with the nonstick cooking spray, set aside. Slice off the top 1/3 of the head of garlic. Place on a piece of aluminum foil and spray lightly with cooking spray. Place in the oven and roast for 45 minutes.
- While the garlic is in the oven, start the meatloaf: Heat the oil in a large skillet over medium heat. Add the onions, celery, and apples, cook until softened, about 5 minutes, stirring occasionally. Transfer the vegetables to a large bowl. Add the remaining meatloaf ingredients and mix well. Place the meatloaf mixture in the prepared ring mold. Bake until cooked through, about 30 minutes.
- Meanwhile: make the mashed potatoes: In a large saucepan, cover the potatoes with cold water and add 1 teaspoon of the salt. Bring to a boil over high heat, then lower the heat to maintain a simmer. Cook until fork tender, about 30 to 60 minutes depending upon the size of the potatoes. We've found that boiling the potatoes whole, with the skin on gives the potatoes more potato flavor.
- Halve the potatoes crosswise. Put the halves in a ricer cut-side down, and press the potato through the ricer into a bowl. The flesh should easily pass through the holes and the skins remain in the ricer. Discard the skin, and repeat with the remaining potatoes. (Alternatively, peel the cooked potatoes and put through a food mill or mash with a hand-held potato masher.) Immediately add the buttermilk and roasted garlic, to taste, and combine well. Season with the remaining 1 teaspoon of salt and pepper, to taste.
- When the meatloaf is done, turn on the broiler. Invert the ring mold onto an ovenproof platter, or, if a baking sheet was used, carefully transfer meatloaf to the platter using a large spatula. Using a spatula, cover the meatloaf on all sides with mashed potatoes, as if frosting a cake. If using a pastry bag, add decorative swirls to the top. Place the platter under the broiler until potatoes are nicely browned, about 12 minutes.
- To make the chutney: Combine all the ingredients in a small bowl.
- Special Equipment: large ring mold pan, pastry bag and tip (optional) .
- *Cooks Note: Yukon gold potatoes have a great buttery appearance when mashed which is a great way to fool the eye when cooking and eating lower fat foods.

POTATO TURKEY MEATLOAF
Lean and delicious, ground turkey makes a good substitute for higher-fat meats like beef and pork. The mild taste doesn't overwhelm the flavours and seasonings added to the dish. This hearty meatloaf is almost a meal in itself.

- Boil potatoes in salted water for 30-35 minutes, until very soft. Drain potatoes, set in a large bowl, and cool for 30 minutes. When cool, peel and grate potatoes, using the large holes on a hand cheese grater or in your food processor with the shredding blade attachment. (You can boil the potatoes up to a day ahead and store them in the fridge)
- In a large bowl combine grated potatoes, ground turkey, garlic, parsley, capers, anchovies, oregano, 1 teaspoon salt, 1/4 teaspoon pepper, and 3 tablespoons flour. Use your hands to fully combine everything.
- Sprinkle about 1/4 cup of flour on a cutting board or work surface. Pat the meat mixture together and set it on the floured surface. Roll it, coating it completely with flour, and shape it into a loaf that’s about 3 inches high (make sure it’s a good size to fit into your pot)
- Heat ⅓ cup olive oil over medium heat in a large heavy pot or Dutch oven with a lid. When oil is hot but not smoking, carefully transfer the meatloaf (I suggest using two spatulas) to the pot. Sauté for 2 minutes and then gently and carefully turn the meatloaf over and sauté for 2 minutes on the other side. Pour in the wine. Lift the loaf up a bit with the spatulas to let some of the wine slip underneath. Cover the pot. Lower the heat to a simmer. Cook for 15 minutes, shifting the loaf once or twice to allow the wine to get under it. Pour the pureed tomatoes over and around the meatloaf. Sprinkle in a pinch of salt and a few grinds of pepper. Cover the pot and simmer for 20 minutes more, basting the loaf, from time to time, with the sauce. Remove the pot from the heat and let the meatloaf rest, covered for a ½ hour.
