POTATO, TOMATO, SQUASH BAKE



Potato, Tomato, Squash Bake image

Number Of Ingredients 13

1 TBSP olive oil
1 TBSP butter
3 cloves fresh garlic (crushed)
1 med-lg yellow onion (diced)
2-3 russet potatoes (peeled or unpeeled, your choice)
2 zucchini
2 yellow squash
3 to matoes
1 tsp salt
1/2 tsp pepper
1/2 tsp dried thyme
Additional 1 TBSP olive oil
1/2 cup parmesan cheese (grated)

Steps:

  • In large saute pan, over med heat, add 1 TBSP olive oil and butter. When butter is melted, add diced onion and sauté until tender. Add garlic and sauté for another 2-3 minutes.
  • In large baking pan, pour onion/garlic mixture on bottom of pan.
  • Slice potatoes, zucchini, yellow squash, and tomatoes into 1/4" slices.
  • Arrange veggies on top of onion mixture.
  • Drizzle with 1 TBSP olive oil.
  • Sprinkle with salt, pepper, and thyme.
  • Cover with foil and bake at 375* for 45 minutes. Remove foil, top with parmesan cheese and bake for another 15-20 minutes.
  • **total baking time will vary on thickness of slices. Adjust as needed till fork tender.

5 teaspoons extra-virgin olive oil
2 garlic cloves, minced
1 pound Yukon gold potatoes, peeled
1 medium zucchini (about 8 ounces)
2 vine-ripened or other ripe tomatoes (about 3/4 pound), sliced into 1/4-inch rounds
1/4 teaspoon coarse salt
Freshly ground pepper
1 teaspoon finely chopped fresh thyme
2 ounces finely grated Cantal or cheddar cheese

Steps:

  • Preheat oven to 375 degrees with rack in upper third. Coat a 9-by-13-inch gratin dish with 1 teaspoon oil, and sprinkle with garlic. Using a mandoline or a very sharp knife, slice potatoes and zucchini as thinly as possible into rounds. Arrange potatoes, zucchini, and tomatoes in overlapping layers around prepared dish, and sprinkle with the salt and pepper. Drizzle with remaining 4 teaspoons oil, and sprinkle with thyme and cheese.
  • Cover with foil; bake until potatoes are tender, 35 to 45 minutes. Remove foil; continue baking until top is golden brown, about 25 minutes more. Remove from oven; and serve immediately.

2 tablespoons olive oil, (plus extra for drizzling)
1 or 2 large onions, (sliced thin)
2 medium tomatoes, (sliced ¼-inch thick)
2 yellow squash, (sliced ¼-inch thick)
2 medium butter potatoes, (sliced-¼ inch thick)
sea salt and freshly ground pepper
1 tablespoon fresh thyme leaves, (or 1 teaspoon dried thyme)
2 tablespoons freshly grated Parmesan

Steps:

  • Preheat oven to 375°F.
  • Heat oil in a medium skillet, over medium heat. Add the onion slices and sauté until lightly browned.
  • Lightly grease or spray a casserole dish. Arrange the caramelized onions on the bottom and layer the potato, tomato and squash, edges overlapping, on top. Season with salt and pepper, sprinkle with thyme and Parmesan and drizzle with olive oil.
  • Cover the dish with foil and bake for 30 minutes. Remove the foil and bake another 20-30 minutes or until the potato is tender.

2 medium red potatoes, peeled and cubed
1 medium yellow summer squash, diced
3 tablespoons finely chopped onion
1 tablespoon butter
Dash salt and pepper
1/2 cup shredded sharp cheddar cheese
3 bacon strips, cooked and crumbled

Steps:

  • Place the potatoes in a small saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer for 5 minutes. Add squash; cover and simmer 5 minutes longer or until vegetables are tender. Drain. Place potatoes and squash in a bowl; mash., In a small skillet, saute onion in butter. Add to potato mixture. Season with salt and pepper. Transfer to a greased 2-cup baking dish (dish will be full). Top with cheese. Bake, uncovered, at 350° for 10 minutes or until cheese is melted. Sprinkle with bacon.

4 large potatoes, peeled & thinly sliced
2 small tomatoes, peeled & thinly sliced
1 small onion, thinly sliced
30 g butter, cut into thin pieces
salt & freshly ground black pepper
1/2 cup milk
1/2 cup cream
1/2 cup chicken stock
1 cup grated cheddar cheese

Steps:

  • Layer potato, tomato& onion in a greased, ovenproof baking dish, finishing with a potato layer.
  • Dot each layer with pieces of butter and season with salt& pepper to taste.
  • Combine milk, cream& stock and pour over potato mixture.
  • Top with cheese.
  • Dot with any remaining butter.
  • Bake in preheated 350F oven for 1 hour or until potato is tender& golden brown.

4 small potatoes, peeled and thinly sliced
1 small butternut squash, peeled, seeded and thinly sliced
1 tablespoon water
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 pound uncooked bulk pork sausage
1 small onion, chopped
2 tablespoons all-purpose flour
1-1/2 cups heavy whipping cream, divided
1 cup shredded cheddar cheese

Steps:

  • In a microwave-safe bowl, combine the potatoes, squash and water. Cover and cook on high for 3-4 minutes or until crisp-tender. Place half of the mixture in a greased 2-qt. baking dish. Sprinkle with salt and pepper. Crumble sausage over potato mixture. Top with onion and remaining potato mixture., In a small bowl, combine flour and 1/4 cup cream until smooth; stir in remaining cream. Pour over potato mixture. Cover and bake at 350° for 30 minutes. Uncover; bake for 20-30 minutes or until potatoes are tender. Sprinkle with cheese; bake 5 minutes longer or until cheese is melted.

750g even-sized potato , such as Desirée or Maris Piper
750g tomato
4-5 tbsp olive oil

Steps:

  • Heat the oven to 190C/fan 170/gas 5. Thinly slice the potatoes either by hand or in the food processor (no need to peel them). Put in a pan with water to cover, bring to the boil, simmer for 3 mins, then drain well. Slice the tomatoes.
  • Brush oil over the base and sides of a 1.5 litre ovenproof dish. Layer up half the potatoes, seasoning and drizzling with oil as you go, then cover with half the sliced tomatoes. Repeat the layers, finishing with tomatoes.
  • Bake for 45-55 mins, until the top is lightly browned. Serve warm or at room temperature. Can be reheated.

This savory casserole is an almost classic gratin dauphinois (potatoes au gratin), with squash standing in for half of the potatoes and low-fat milk substituting for cream. It is a very comforting dish that can be baked ahead and reheated.

1 large garlic clove, cut in half
1 1/4 pounds russet potatoes or Yukon golds (or add purple potatoes to the mix), scrubbed, peeled if desired and sliced about 1/4 inch thick
1 1/4 pounds winter squash, such as butternut, peeled and sliced about 1/4 inch thick
1 teaspoon fresh thyme leaves
1 teaspoon chopped fresh rosemary
1 cup, tightly packed, grated Gruyère cheese (4 ounces)
Salt to taste
Freshly ground pepper
2-1/2 cups low-fat milk

Steps:

  • Preheat the oven to 375 degrees. Rub the inside of a 2-quart gratin dish or baking dish with the cut side of the garlic, and lightly oil with olive oil or butter. Slice any garlic that remains and toss with the potatoes, squash, thyme, rosemary, half the cheese and a generous amount of salt and pepper. Arrange in an even layer in the gratin dish.
  • Pour the milk over the potatoes and squash, and press the vegetables down into the milk. Place in the oven, and bake one hour. Every 20 minutes, remove the gratin dish and press the potatoes and squash down into the liquid with the back of a large spoon. After one hour, sprinkle on the remaining cheese and bake for another 30 minutes, until the top is golden and the sides crusty. Remove from the oven, and allow to sit for 10 to 15 minutes before serving. Serve hot or warm.

2 tablespoons extra virgin olive oil
1 1/2 pounds medium or small zucchini or other summer squash, thinly sliced or diced depending on what shape squash you use
2 garlic cloves, minced
1 pound ripe tomatoes, grated on the large holes of a box grater, or peeled, seeded and diced
Salt
freshly ground pepper
1 to 2 tablespoons chopped or slivered fresh basil (to taste)

Steps:

  • Heat 1 tablespoon of the olive oil over medium-high heat in a wide, heavy skillet. Add the zucchini. Cook, stirring or shaking the pan, until the zucchini is lightly seared and beginning to soften, three to five minutes. Remove from the pan, and set aside.
  • Add the remaining olive oil to the pan, then the garlic. Cook, stirring, just until fragrant -- less than 30 seconds. Stir in the tomatoes. Cook, stirring, until the tomatoes have begun to cook down, about five minutes. Return the zucchini to the pan, add salt and pepper to taste, and reduce the heat to medium. Cook, stirring often, until the zucchini is tender and translucent and the tomatoes have cooked down to a fragrant sauce. Stir in the basil, and taste and adjust seasonings. Remove from the heat and serve hot, or allow to cool and serve at room temperature.
