3/4 cup process Cheddar cheese sauce (from 15-oz jar)
1/2 cup shredded Cheddar cheese (2 oz)
2 cups frozen bell pepper and onion stir-fry (from 1-lb bag)
2 cups refrigerated cooked diced potatoes with onions (from 20-oz bag)
1 lb fully cooked smoked beef sausage, cut into 1 1/2-inch pieces

Steps:

  • Heat gas or charcoal grill. Cut 4 (18x12-inch) sheets of heavy-duty foil; spray with cooking spray.
  • In medium bowl, mix cheese sauce and cheese. Stir in stir-fry vegetables and potatoes. Arrange 4 sausage pieces and 1 cup potato mixture on center of each foil sheet. Bring up 2 sides of foil so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
  • Place packets on grill. Cover grill; cook over medium-low heat 20 to 25 minutes, rotating packets 1/2 turn after 10 minutes, until potatoes are tender. To serve, cut large X across top of each packet; carefully fold back foil to allow steam to escape.

Prepare a great dinner without the mess with this smoked sausage and potatoes foil packet dinner recipe!

1 lb red potatoes
1 large yellow onion
1 red bell pepper (or green bell pepper)
1 lb smoked sausage (cut into 2" pieces)
1 Tbsp olive oil
salt (to taste)
4 large heavy-duty aluminum foil

Steps:

  • Preheat an outdoor grill to medium-high or an oven to 400 degrees. Scrub potatoes well then pat dry using a kitchen towel. Cut potatoes into 1" cubes and place in a large mixing bowl. Dice onion and bell pepper into large 1" pieces.
  • Drizzle veggies with olive oil and season with salt. Toss to coat completely in oil and distribute salt. Place ¼ of the veggie mixture into the center of one sheet of foil then add ¼ of the smoked sausage on top of the veggies.
  • Fold long sides of foil up and over sausage mixture and bring edges together. Roll the foil together, moving downward until you're about 1"-2" from top of sausage mixture. Fold both short ends together to seal the packet, but make sure to leave enough space inside the packet for steam expansion.
  • Place packets directly on grill or on a baking sheet in the oven. Grill 20-25 minutes or bake 30-35 minutes in the oven or just until the potatoes are tender. Remove from grill or oven and allow packets to rest for 5 minutes. Carefully open packets to let steam escape before digging in.

1 large potato, cut into wedges
1/2 each medium green, sweet red and yellow pepper, cut into 1-inch pieces
1 small onion, chopped
2 teaspoons lemon juice
2 teaspoons olive oil
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1/8 teaspoon salt

Steps:

1 medium sweet yellow pepper
1 package (14 ounces) smoked turkey kielbasa, sliced
2 large potatoes, cut into wedges
1 medium onion, chopped

Lemon wedges, optional

Steps:

3 cups frozen potatoes O'Brien with onions and peppers (from 24-oz bag)
3/4 cup honey-mustard dressing
2 cups frozen mixed vegetables (from 1-lb bag)
1 lb ring cooked kielbasa or Polish sausage, cut into 4 pieces

Steps:

  • Heat gas or charcoal grill. Cut 4 (18x12-inch) sheets of heavy-duty foil; spray foil with cooking spray. Place 1/4 of potatoes and vegetables side by side on center of each sheet. Top each with 2 tablespoons dressing.
  • Make cuts along outside edge of each kielbasa piece at 1/2-inch intervals almost but not completely through other side. Fan kielbasa over potatoes and vegetables. Top each with 1 tablespoon remaining dressing.
  • Bring up 2 sides of foil so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal. At this point, packets can be refrigerated up to 24 hours.
  • Place packets, seam side up, on grill. Cover grill; cook over medium heat 20 to 30 minutes, rearranging packets several times during cooking, until potatoes and vegetables are tender.
  • To serve, cut large X across top of each packet; carefully fold back foil to allow steam to escape.

16 oz. baby red potatoes
12 oz. fully cooked smoked turkey sausage, (cut into slices about 1/4-inch thick)
12 oz. green beans or yellow beans, (ends trimmed (I used a blend of both))
8 oz. baby carrots, (thicker ones halved through the length)
1 small yellow onion, (halved and sliced)
4 tsp minced garlic ((4 cloves))
1/4 cup olive oil
1 Tbsp Italian seasoning
Salt and freshly ground black pepper
2 Tbsp chopped fresh parsley
Grated parmesan, (for serving (optional))

Steps:

  • Preheat oven to 400 degrees. Place red potatoes on a large plate and microwave for 3 minutes, turning once halfway through. Once cool enough to handle cut into quarters. Add potatoes, sausage, beans, carrots, onions and garlic to a large mixing bowl. Add in olive oil, Italian seasoning and season with a fair amount of salt and pepper to taste.
  • Cut 4 pieces of 16 by 12-inch heavy duty aluminum foil. Lay each piece separately on a flat surface. Divide sausage mixture evenly among sheets of foil, creating a somewhat rectangular shape with the mixture. Wrap sides of foil in then fold 2 times to seal while leaving room for heat to circulate, then wrap ends up folding twice to seal.
  • Lay foil packs side by side on a 18 by 13-inch baking sheet. Bake in preheated oven until veggies are tender, about 35 - 40 minutes. Carefully open packets (they'll steam!). Sprinkle with parmesan and parsley. Serve warm.
