- In a large bowl, combine sausage, biscuit baking mix and cheese. Form into walnut size balls and place on baking sheets.

SWEET POTATO SAUSAGE BALLS

- Preheat oven to 375°. Line rimmed baking sheets with parchment paper. Set aside. In a medium skillet, cook smoked sausage over medium-high heat until browned, approximately 7 minutes. Using a slotted spoon, set sausage aside, reserving rendered fat in pan. Add shallot and jalapeño; cook until softened, approximately 5 minutes. Set aside. In a large bowl, stir together flour, cornmeal, baking powder, salt, and red pepper. Add sweet potato and cream cheese, stirring to combine. Add Cheddar, breakfast sausage, and shallot mixture, stirring to combine. Shape mixture into 1½-inch balls; place on prepared pans. Bake until browned and cooked through, 15 to 18 minutes. Serve with smoked sausage and pepper jelly.

CRUNCHY POTATO BALLS
Cooking is not one of my favorite things to do, so I'm always looking for simple and tasty recipes to feed our growing family (three sons - 8,5 and 7 months). These potato balls make a good snack or appetizer (my two older boys love them with any meal!), and they're a good way to use up leftovers. In fact, I often find myself peeling a few extra potatoes just to make sure there will be leftovers. I've also substituted ground-up hot dogs or sausage for the ham.

I didnt have any bisquick mix for the sausage balls so I made them with mash potatoes!! These are really good, quick to gobble up. They are also good cold the next day or for a quick fry for breakfast.

- Preheat oven to 350 °F.
- Bake the potatoes until tender, then peel and mash them. Stir in the brown sugar, orange juice, zest and nutmeg.
- In a separate bowl, toss the coconut with the sugar and cinnamon. Press mashed potatoes around each marshmallow, creating a 2 to 3-inch diameter ball. Roll the balls in the coconut mixture. Bake for 15 to 20 minutes. Watch carefully for the last few minutes of cooking; the expanding marshmallows can cause the potato balls to burst open.

I fix this every Christmas, one of my many adopted sons, Christopher has to have an extra making of this recip. So as you can guess I bake double-well if you saw Chris how could you turn down those puppy dog eyes!!!
