With sausage, bacon, eggs and potatoes, this frittata is one hearty meal! Although I double the recipe for my large family, we never have any leftovers. As good as this dish is, you can experiment to customize it for your family. Try using ham, bell peppers, chorizo­-the sky's the limit!

1/2 pound bulk pork sausage
6 bacon strips, diced
1-1/2 cups finely chopped red potatoes
1 medium onion, finely chopped
8 large eggs
2 teaspoons dried parsley flakes
3/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a large cast-iron or other ovenproof skillet, cook sausage over medium heat until no longer pink. Remove and set aside. In the same skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels; drain, reserving 2 tablespoons drippings. , In the drippings, saute potatoes and onion until tender. In a large bowl, whisk the eggs, parsley, salt and pepper. Return sausage and bacon to the skillet; top with egg mixture. , Cover and cook over low heat until eggs are almost set, 8-10 minutes. Uncover; broil 6 in. from the heat until eggs are set, about 2 minutes. Cut into wedges.

1/2 cup milk
2 cups shredded cheese
Salt and pepper
1 tablespoon olive oil
1 pound country-style ground pork sausage
4 cups broccoli florets
thinly sliced
1 medium onion
chopped

Steps:

  • Preheat oven to 350˚F
  • In a large mixing bowl, whisk eggs, milk and cheese, and season with salt and pepper
  • In a large oven-proof 12-inch skillet or cast-iron pan, heat the olive oil over medium-high heat, add the sausage, broccoli and onions and season with salt and pepper, then cook until sausage is cooked through, 8 to 10 minutes
  • Pour egg mixture over top
  • Bake until there is a slight wobble in the center of the frittata, 20 to 25 minutes, as the eggs will continue to cook
  • Let stand 5 to 10 minutes before slicing

1/2 cup heavy cream
4 ounces goat's cheese
1/2 onion, chopped
8 ounces bob evans savory sage pork sausage
1 (14 ounce) bag frozen broccoli
salt and pepper

Steps:

  • Preheat oven to 400°F Whisk eggs and milk in a medium bowl. Mix in the goat's cheese; season with salt and pepper and set aside.
  • Heat oil in a large skillet, preferably castiron, over medium heat. Add onion and sausage and cook, stirring occasionally, until onion is softened and sausage is brown, 6-8 minutes. Microwave broccoli according to package directions and add to skillet; season with salt and pepper.
  • Reduce heat to low and pour reserved egg mixture over vegetables. Cook, shaking pan occasionally, until edges are just set, 10-12 minutes. Place skillet in preheated oven for 15 minutes or until center is just set.
  • Cut frittata into wedges and serve warm or room temperature.

This egg Frittata recipe is quick and easy to make, make ahead friendly, versatile and restaurant delicious! Although frittatas feel special, they are the ultimate clean-out-the-fridge meal. They are fabulous for breakfast, brunch, lunch or even dinner, and a delicious way to feed a crowd. This frittata recipe is creamy, soft and custardy loaded with bacon, veggies and cheese for an explosion of texture and flavor. You can follow my recipe as written (my fav!) or I've included how to make a frittata with any veggies/protein you have on hand for the ultimate "how to make frittatas" guide!

12 large eggs
1/3 cup heavy cream
1 tablespoon freshly chopped basil ( or 1 tsp dried)
1 teaspoon dried parsley
1/2 tsp EACH paprika, ground mustard, salt, pepper
4 dashes hot sauce
1 cup freshly grated Gruyere cheese
1 cup freshly grated mozzarella cheese (divided)
8 oz. thick cut bacon
3-5 cloves garlic (minced)
1 medium onion (halved then thinly sliced)
1 cup sweet potatoes (peeled, chopped into ½" chunks)
2 cups chopped broccoli (about 1-inch pieces)
1 red bell pepper (chopped)
1 Roma tomato (seeded, chopped)

Steps:

  • Working in two batches, cook bacon in a 12-inch well-seasoned cast iron skillet or oven proof nonstick pan over medium-low heat, flipping a couple times until browned and crispy. (I prep my veggies and egg mixture while the bacon is cooking, see below.) Transfer bacon to paper towel lined plate. Let bacon rest and then crumble; set aside.
  • Meanwhile, add chopped potatoes to a microwave safe bowl and add water to reach ¼" up the sides. Cover with a microwave safe lid and microwave for 4 minutes. Uncover and set aside.
  • Beat the eggs, heavy cream, seasonings and hot sauce together in a medium bowl (don't overbeat). Stir in the basil, all of the Gruyere cheese and ½ cup mozzarella; set aside.
  • Preheat oven to 350 degrees F.
  • Drain all but 1 ½ tablespoons bacon grease from skillet. Heat over medium-high heat. Add onions and sauté for 3 minutes. Add broccoli and bell peppers and cook an additional 4 minutes or until onions are caramelized and broccoli is tender-crisp; add garlic and sauté 30 seconds.
  • Spread vegetables into an even layer, making sure the ingredients are evenly distributed. Set aside 2 tablespoons crumbled bacon (to top the baked frittata) then evenly layer the vegetables with remaining bacon, sweet potatoes and tomatoes. Pour the egg mixture over the vegetables and spread into an even layer, pushing down any vegetables so they are submerged. Top evenly with remaining ½ cup mozzarella cheese.
  • Cook over medium heat for about 3 minutes until the sides are just set then transfer skillet to the oven. Bake uncovered for 18-22 minutes at 350 degrees F, or until the cheese is melted and the center barely jiggles.
  • Rest for 5-10 minutes, then top with remaining bacon, slice and serve warm.

1½ cups Russett potatoes, (washed and diced into ½-inch pieces)
2 cups broccoli florets
6 large eggs
1 teaspoon salt
¼ teaspoon ground black pepper
¼ cup milk
1 tablespoon olive oil
½ cup onion, (coarsely chopped)
1 Roma tomato, (thinly sliced)
¼ cup Asiago or Parmesan cheese, (grated)

Steps:

  • To a large pot of salted, boiling water, add the potatoes and cook until fork-tender, about 5 to 7 minutes. Use a slotted spoon to remove the potatoes and set aside.
  • Maintain the boil and add the broccoli. Let cook for a few seconds, up to a minute, until bright green. Drain and set aside.
  • In a large bowl, whisk together the eggs and milk until when the whisk is removed, no egg whites remain on the whisk. Season with salt and pepper, whisking to combine.
  • In a large, oven-safe skillet, heat the oil over medium heat until shimmering. Sautee the onion until softened and nearly translucent.
  • Add the potatoes and broccoli and cook for 1 minute.
  • Reduce the heat to medium-low and pour in the egg mixture. Let sit undisturbed until the egg along the edge of the skillet begins to set and is almost firm.
  • Top with the sliced tomatoes and sprinkle on the cheese.
  • Place under the broiler for 4 to 5 minutes until the center is firm when shaken. Serve warm.

Nonstick cooking spray, for the pan
Olive oil, as needed
1 pound loose breakfast sausage
1 Spanish onion, finely diced
1 large russet potato, diced
1 head broccoli, stem removed, cut into small florets
Kosher salt and freshly ground black pepper
3/4 cup whole milk
1/2 cup heavy cream
10 large eggs
1/2 bunch fresh dill, roughly chopped

Steps:

  • Preheat the oven to 400 degrees F. Grease a 9-by-13-inch casserole pan with cooking spray.
  • Set a medium pan over medium heat and add 1 tablespoon olive oil. Add the sausage and cook, breaking it up with the back of a wooden spoon or spatula, until cooked through and beginning to brown, about 5 minutes. Remove to a bowl and set aside. Add the onion to the pan and saute until translucent and the browned bits of sausage in the pan have been picked up by the onion, about 5 minutes -- this will add lots of flavor! Once the onions are cooked, add the potatoes. Cook until they are tender and just beginning to brown, about 7 minutes. If necessary, add more olive oil so the potatoes don't burn or stick to the bottom of the pan. Remove the potatoes and onions to the bowl of sausage. Coat the pan with a bit of olive oil and add the broccoli. Saute until just tender, about 5 minutes. Season with salt and pepper. Transfer to the sausage bowl.
  • Add the milk, cream, eggs and some salt and pepper to a separate medium bowl and whisk to combine.
  • Transfer the sausage and vegetable mixture to the prepared casserole pan. Toss and distribute evenly on the bottom of the pan. Gently pour the egg mixture over the top. Bake until the frittata is puffed and beginning to brown and the egg is set in the middle, about 30 minutes. Allow to set for 5 minutes before slicing. Garnish with the dill and serve. The frittata is delicious hot out of the oven, room temperature or even cold!
