Based on Tortilla Espanola, this Spanish dish is traditionally accompanied by garlic mayo, but it is also delicious on its own.

1 tablespoon olive oil
1/2 medium onion, thinly sliced
1 red bell pepper, stem, ribs, and seeds removed, then thinly sliced in strips
2 russet potatoes (about 1 pound), peeled and cut into thin slices
Coarse salt and ground pepper
8 large eggs
2 teaspoons chopped fresh rosemary

Steps:

  • Preheat oven to 400 degrees. In an 8-inch ovenproof nonstick skillet, heat 1 teaspoon oil over medium heat. Add onion and bell pepper, and cook, stirring occasionally, until onion is lightly browned, about 5 minutes. Transfer to a bowl; set aside.
  • Heat remaining 2 teaspoons oil in skillet. Add potatoes; season generously with salt and pepper. Cook over medium heat, tossing often, until potatoes are tender and lightly browned, about 10 minutes. Transfer potatoes to bowl with onion mixture; toss to combine. Return mixture to skillet; flatten with a metal spatula.
  • In a large bowl, beat eggs with rosemary, 1/2 teaspoon salt, and 1/8 teaspoon pepper. Pour over potato mixture; tilt pan to distribute evenly. Bake until set, 15 to 20 minutes. Cut into wedges, and serve.

6 slices bacon or pancetta, chopped
1 tablespoon olive oil
1 ½ cups chopped hot and sweet peppers
salt and ground black pepper to taste
½ teaspoon red pepper flakes, or more to taste
1 ½ cups cubed cooked potatoes
12 eggs, beaten
2 ounces crumbled feta cheese

Steps:

  • Place bacon and olive oil in a large skillet over medium heat. Cook until bacon is nearly crisp, 5 to 7 minutes. Add peppers; cook and stir over medium heat until softened, about 3 minutes. Remove from heat and drain excess grease from the pan. Season with salt, black pepper, and red pepper flakes; stir to combine.
  • Return pan to medium heat, add potatoes and stir until warmed through, about 2 minutes. Pour in eggs and slowly stir to form large, soft curds, about 5 minutes. Sprinkle feta cheese over the top and stir gently to incorporate.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Place pan under the preheated broiler and cook until the top is set and feta cheese is browned, about 5 minutes.

Potato and Red Pepper Frittata is delicious any time of day. This is one of my favorite easy, last minute go-to meals and ever so versatile!

Number Of Ingredients 10

1 small onion (diced (or 1/2 onion))
3 tbsp. olive oil
2 large potatoes (peeled and cut into 1 cm cubes)
1 red pepper (diced)
8 large eggs
1/2 cup Parmesan cheese (grated)
2 tbsp. milk
2 tbsp. parsley (chopped)
1/2 tsp salt (plus extra sprinkled on the potatoes and peppers)
black pepper (to taste)

Steps:

  • Add olive oil to your skillet, heat on medium heat and sauté the diced onion for 2 minutes.
  • Add cubed potatoes, a pinch of salt and stir. Reduce heat to low, cover and cook potatoes for 10-15 minutes, stirring occasionally, until tender.
  • Uncover and stir in the diced red pepper, a pinch of salt, and black pepper (to taste). Cover and cook 5 minutes longer.
  • Preheat your oven to broil. Meanwhile, in a medium sized bowl beat the eggs, Parmesan cheese, milk, parsley and salt and pepper.
  • Uncover the skillet and add an extra drizzle of oil to the pan if the bottom is dry. Pour the egg mixture evenly over the vegetables. Let cook about 2 minutes until the underside begins to set.
  • Transfer the skillet to the oven and broil until the top is golden brown and puffy, about 4-5 minutes. Check on the frittata every minute and rotate the pan for even browning of the top.
  • Remove the skillet from the oven. Use a spatula to carefully transfer the frittata to a serving plate. Cut into wedges and serve hot, warm or at room temperature.

Being onion lovers, I added a whole onion rather than 1/2 as the recipe stipulated. NOTE: It's okay if potatoes are not cooked evenly. Some will be browned; others only transparent. The original recipe suggests using an 8-inch skillet.

4 tablespoons butter, divided
1 garlic clove, minced
1/2 pound red potatoes (about 5 small), thinly sliced

1/3 cup 2% milk
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup shredded Gruyere or Swiss cheese

Steps:

  • In a 10-in. ovenproof skillet, saute onion and rosemary in 1 tablespoon butter until tender. Add garlic; cook 1 minute longer. Remove from the pan and set aside. In the same skillet, cook potatoes in 2 tablespoons butter until tender and golden brown. Remove and keep warm., In a large bowl, whisk the eggs, milk, salt and pepper. Egg frittatas are my answer to an easy, inexpensive meal solution whether I'm having it for breakfast, lunch or dinner. I made these with bell pepper and potato and served with a side of berries or fruit. For dinner, I serve with a salad on the side and call it a meal!

4 thin slices green bell pepper (sliced into 1/4-inch thin slices crosswise)
4 large eggs
4 large egg whites
kosher salt and pepper (to taste)
1 teaspoon olive oil
1/4 cup minced shallots
1 (7 oz) medium peeled Yukon Gold Potatoes, diced into 1/2-inch pieces
1/4 tsp garlic powder
1/4 tsp paprika

Steps:

  • Preheat the oven to 400°F.
  • Crack the eggs and egg whites into a large bowl. Add salt and fresh cracked pepper and beat until blended.
  • Heat a 10-inch nonstick oven safe skillet over medium heat. Add the oil and shallots to the pan and cook until golden, 2 to 3 minutes.
  • Add the potatoes, season with salt, garlic powder, paprika and black pepper. Cover and cook the potatoes over medium-low heat, stirring occasionally, until crisp and tender, about 12 to 15 minutes.
  • Pour the egg mixture into the skillet. Carefully arrange the bell peppers on top to create a shamrock pattern if desired. Reduce the heat to low and cook until the edges are set, 6 to 8 minutes.
  • Transfer the skillet to the oven and bake until the frittata is completely set and cooked through, 8 to 10 minutes.
  • Remove from the oven and transfer onto a large plate. Cut into 4 wedges and serve.

2 tablespoons olive oil
1 red onion, sliced
12 ounces medium to small red potatoes, cooked and cut into medium dice
6 eggs, lightly beaten
1 cup feta cheese, crumbled
salt & freshly ground black pepper

Steps:

  • Preheat grill to high, or turn on oven broiler.
  • Heat oil on medium heat in large flame-proof frying pan.
  • Add onion and saute for 5 minutes until softened, stirring occasionally.
  • Add potatoes and cook for a further 5 minutes until golden, stirring to prevent sticking.
  • Spread mixture evenly over bottom of pan.
  • Pour beaten eggs, lightly seasoned with salt and pepper, over potato and onion mixture.
  • Sprinkle the cheese on top and cook over medium heat for 5-6 minutes until the eggs are just set and base of frittata is lightly golden.
  • Place pan under grill or broiler (protect the pan handle with a double layer of foil if it is not flameproof) and cook the top of the frittata for about 3 minutes until it is set and lightly golden.
  • Serve warm or cold, cut into wedges.

6 eggs
2tbsp milk
Salt and freshly cracked black pepper
1 head of broccoli
1tsp olive oil
1 red pepper, deseeded and diced
100g cheddar cheese, grated

Steps:

  • Take the broccoli and snap off tiny florets before popping them into a saucepan of boiling water. Cook for 5mins.
  • Meanwhile, in a large bowl whisk together the eggs, adding the milk, 50g of the cheese and season.
  • In a deep frying pan, fry the pepper in the oil until softened. Drain the broccoli and add to the pan with the pepper. Pour over the egg mixture and cook for 3mins so that the bottom layer and sides begin to cook.
  • Pop the frying pan under the grill to cook the top half of the frittata. This should take another 5mins. When it starts to look golden, remove and scatter the remaining 50g of cheese on top and return to under the grill to melt. Allow to cool before cutting into slices.
