I had some asparagus and ham to use so I came up with this combination for lunch today!

- Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
- Heat the olive oil in a large skillet over medium heat; cook and stir the shredded potato and onion in the hot oil until the potatoes begin to brown, about 5 minutes.. Season with salt and pepper. Add the asparagus and ham and continue cooking until the asparagus is tender, another 5 to 7 minutes; transfer to the prepared baking dish. Whisk the eggs and milk together in a small bowl; pour evenly over the dish. Scatter the mozzarella and white Cheddar cheeses over the top of the potato mixture.
- Bake in the preheated oven until set in the middle, 20 to 25 minutes. Garnish with the basil to serve.

In 1975, I took a trip to Spain to visit my nephew who was in the Air Force. While touring the small towns and villages, we could always buy a fresh slice of potato frittata. It was so tasty and filling, I just had to make my own version of it when I returned home!

SPANISH-STYLE POTATO AND ONION FRITTATA
Spain has one of my favorite omelets made from potatoes, cheese and onions called a "tortilla." Not to be confused with a Mexican tortilla, a Spanish tortilla is like the perfect mash-up of a baked potato and scrambled eggs. The Spanish serve it like an appetizer, but I love making it into an omelet. The key is to season every layer with salt and pepper at each stage. Small yellow potatoes are a bit more work to peel and dice, but they're sweeter than larger russet potatoes.

- Preheat the oven in broiler mode and place a rack 10 to 12 inches (25 to 30.5 centimeters) below the heating element.
- Beat the eggs in a bowl and add 1/2 teaspoon of salt, 1/4 teaspoon of pepper and 1/4 cup (25 grams) of the Parmesan cheese.
- Place the peeled and diced potatoes in a microwave-safe bowl, then toss with 2 tablespoons (30 milliliters) of the olive oil and season with 1/4 teaspoon salt. Cover tightly with plastic wrap and microwave on high for 6 to 9 minutes total, or until fork tender.
- Meanwhile, heat the remaining 2 tablespoons (30 milliliters) of olive oil and the butter over medium heat in a heavy 10-inch (25-centimeter) omelet pan. Add the onion and a generous pinch of salt. - Steam the potatoes until tender, about eight minutes, and set aside.
- Meanwhile, heat 1 tablespoon of the olive oil over medium heat in a heavy 10-inch nonstick skillet, and add the onions and a generous pinch of salt. - Uncover the pan, and slide under the broiler for a minute or two (watch closely) to set the top. Remove from the heat. Let the tortilla set in the pan for a few minutes, then slide out onto a serving plate. Allow to cool to room temperature, and cut into small diamonds to serve as hors d'oeuvres.

- Gather the ingredients.
- Peel the potatoes and slice thinly (about 1/4 inch thick) using a mandoline or a very sharp knife, or cut them into 1/2-inch cubes.
- Place the cut potatoes into a bowl and cover them with salted water. Soak for about 15 minutes.
- Slice the onion thinly.
- In a large, deep, nonstick, ovenproof skillet, heat 2 tablespoons of the oil over medium heat. Add the sliced onion and cook until the onion is soft, fragrant, and turning golden.

- In a large pot of lightly salted boiling water, boil the potatoes for about 5 min, until just tender.
- In the meantime, in a large bowl whisk the eggs until well combined, add in chopped parsley and season with salt and pepper.
- Drain well the potatoes and add them into the bowl with the eggs. Fold in the cheese (if using) and lightly mix all ingredients.

- Preheat oven to 400ºF. On a large baking sheet mix together sliced potatoes, onions, and olive oil. Arrange potatoes in a single layer potatoes and season with salt and pepper.
- Roast for 20 minutes, flipping potatoes halfway through. Remove from oven when potatoes are golden brown. Turn down the oven to 375ºF. Set potatoes aside to cool slightly.
- When the potatoes and onions are cool enough to handle, arrange them in a greased pie plate (see pic in post). Spread half the potatoes and all the onions on the bottom of the pie plate. Arrange remaining potatoes, standing up and overlapping, around the edge to form a "potato crust."

- Peel, wash, and cut the potatoes into cubes. Slice the onion.
- In a bowl, combine the eggs, salt, and pepper. Beat with a whisk until well blended. Set aside.
- In saute pan, heat the olive oil over medium heat, add the cubed potatoes and sliced onions, reserving a few onion slices. Stirring often, saute until softened and lightly crispy, about 5 minutes.
- Pour the egg mixture over the vegetables making sure to cover them all. Reduce the heat to medium/low and cook until the eggs are set around the edges. With a spatula, I poke the egg mixture in different spots, so that the uncooked eggs run down under the bottom.

- At this point, invert a plate big enough to cover the surface over the top of the pan. Then, invert the plate and pan together, so the frittata is on the plate.
- Slide the frittata back into the pan with the cooked side up.
- Cook until the bottom is set, about 2 minutes.
- Turn off heat and invert it again, if you wish, or slide the frittata directly onto a board or a serving dish, then cut into wedges with a pizza cutter.
- Serve immediately, or cool to room temperature before serving. You can pair it with a side salad. We made an arugula and tomato salad, simply dressed with evo oil, salt, pepper, and a squeeze of lemon.

- Add the potatoes to a saucepan, cover with water, bring to a boil, cook them for 5 minutes, remove them from the water and allow them to cool completely. If your potatoes are really big, you should cut them in half before boiling them. Cut them into large cubes once they are cooled.
- In a 10” skillet, add the olive oil, onions and partially cooked potatoes, cook them over medium heat for about 15 to 20 minutes or until the potatoes are fully cooked through (partially cover the pan with a lid, it helps them cook through faster) season them with salt, pepper and paprika.
- Season your eggs with salt and pepper, whisk them well, add them to the potato mixture, stir the eggs around for a minute, cover the skillet with a lid and cook until the frittata is about 3/4 of the way cooked through. Meanwhile, preheat your broiler.
- Sprinkle the cheese over the top, place the frittata under the broiler and cook until the top is a deep golden brown. Remove from the broiler, top with the parsley and chives and serve!
