Typical of Baden-Baden and the Baden-Wurttemberg state in southwestern Germany, schupfnudeln is a kind of spaeztle (homemade pasta) that gets its name from the Upper German word 'Schupfen,' meaning 'to shove, push, throw or chuck.' They are traditionally handmade by rolling out potato dough on a board and cutting the dough into noodles. Simple and easy to make, they are delicious and go well with almost anything: roast pork, racks of lamb, bits of bacon, sauerkraut, and any cabbage dishes.

1 ½ pounds russet potatoes
½ cup all-purpose flour
1 egg
1 tablespoon chopped fresh parsley
½ teaspoon salt
¼ teaspoon freshly ground nutmeg
¼ cup lard or other cooking fat

Steps:

  • Place whole potatoes in their skins into a large pot of boiling water; boil for 25 to 30 minutes. Remove potatoes, and discard water. When cool enough to handle, peel potatoes, and place on a lightly floured surface. Mash potatoes with a rolling pin.
  • Place mashed potatoes into a large bowl. Stir in flour, egg, parsley, salt, and nutmeg. Knead well to form a smooth dough. Then roll out the dough to a thickness of about 1/2 inch. Cut flattened dough into thin strips, about 1 1/2 inches long. Gently roll out the strips, or stretch them until the ends taper. Set aside for 15 minutes.
  • In a large skillet, heat lard over medium heat. Place the potato strips into the skillet, and fry until golden brown on both sides.

1 1/2 cups mashed potatoes, cold
1 egg
1/8 teaspoon cream of tartar
Dash of nutmeg
Pinch of salt
1-1 1/4 cups flour
4 tablespoons butter, divided
1/2 cup breadcrumbs, dry, divided
Salt to taste
Garlic powder, to taste
Parsley, to taste

Steps:

  • In medium bowl, beat together mashed potatoes, egg, cream of tartar, nutmeg and salt until smooth. Gradually add flour, blending well until dough is stiff, yet somewhat sticky. On floured board, using about 1 1/2 tablespoons dough, roll into finger-shaped noodles; set on tray in one layer. In large saucepan, bring salted water to boil. Pour in half the noodles and boil until they float to top. Reduce heat to medium, simmer 3 minutes. Drain, rinse and repeat with other half. Heat skillet over medium heat; add 2 tablespoons butter and 1/4 cup bread crumbs; stir to brown lightly. Season crumbs with dash salt, garlic powder and parsley. Add half the boiled noodles, tossing carefully to coat. Lower heat to warm, cover and cook 10 minutes. Repeat with other half.

2 to 3 green onions, cut crosswise into 2 inch long pieces
1 medium onion (1 cup), sliced thinly
4 to 5 white mushrooms, sliced thinly
1 medium carrot (¾ cup), cut into matchsticks
½ red bell pepper, cut into thin strips (optional)
ground black pepper
kosher salt
vegetable oil
4 ounces spinach, washed and drained
4 ounces of dangmyeon (sweet potato starch noodles)

Steps:

  • Put the beef and shiitake mushrooms into a bowl and mix with 1 clove of minced garlic, 1 teaspoon sugar, ¼ teaspoon ground black pepper, 2 teaspoons soy sauce, and 1 teaspoon of toasted sesame oil with a wooden spoon or by hand. Cover and keep it in the fridge.
  • Crack the egg and separate the egg yolk from the egg white. Remove the white stringy stuff (chalaza) from the yolk. Beat in a pinch of salt with a fork.
  • Add 1 teaspoon of vegetable oil to a heated nonstick pan. Swirl the oil around so it covers the pan, and then wipe off the excess heated oil with a kitchen towel so only a thin layer remains on the pan. To keep the jidan as yellow as possible, turn off the heat and pour the egg yolk mixture into the pan. Tilt it around so the mixture spreads thinly. Let it cook using the remaining heat in the pan for about 1 minute. Flip it over and let it sit on the pan for 1 more minute. Let it cool and slice it into thin strips.
  • Bring a large pot of water to a boil. Add the spinach and blanch for 30 seconds to 1 minute, then take it out with a slotted spoon or strainer. Let the water keep boiling to cook the noodles.
  • Rinse the spinach in cold water to stop it from cooking. Squeeze it with your hands to remove any excess water. Cut it a few times and put it into a bowl. Mix with 1 teaspoon soy sauce and 1 teaspoon toasted sesame oil. Put it into a large mixing bowl.
  • Put the noodles into the boiling water, cover and cook for 1 minute. Stir them with a wooden spoon so they don't stick together. Cover and keep cooking for another 7 minutes until the noodles are soft and chewy.
  • Strain and cut them a few times with kitchen scissors. Put the noodles into the large bowl next to the spinach. Add 2 teaspoons toasted sesame oil, 1 teaspoon soy sauce, and 1 teaspoon sugar. Mix well by hand or a wooden spoon. This process will season the noodles and also keep the noodles from sticking to each other.
  • Heat up a skillet over medium high heat. Add 2 teaspoons vegetable oil with the onion, the green onion, and a pinch of salt. Stir-fry about 2 minutes until the onion looks a little translucent. Transfer to the noodle bowl.
  • Heat up the skillet again and add 2 teaspoons vegetable oil. Add the white mushrooms and a pinch of salt. Stir-fry for 2 minutes until softened and a little juicy. Transfer to the noodle bowl.
  • Heat up the skillet and add 1 teaspoon vegetable oil. Add the carrot and stir-fry for 20 seconds. Add the red bell pepper strips and stir-fry another 20 seconds. Transfer to the noodle bowl.
  • Heat up the skillet and add 2 teaspoons vegetable oil. Add the beef and mushroom mixture and stir fry for a few minutes until the beef is no longer pink and the mushrooms are softened and shiny. Transfer to the noodle bowl.
  • Add 1 minced garlic clove, 1 tablespoon soy sauce, 1 tablespoon sugar, ½ teaspoon ground black pepper, and 2 teaspoons of toasted sesame oil to the mixing bowl full of ingredients. Mix all together by hand.
  • Add the egg garnish and 1 tablespoon sesame seeds. Mix it and transfer it to a large plate to serve.

8 ounces sweet potato noodles
1/2 bunch spinach (about 4 ounces), rinsed and trimmed
2 cloves garlic, minced
1 tablespoon plus 1 1/2 teaspoons Asian sesame oil
1/4 teaspoon salt
1 tablespoon vegetable oil
6 ounces beef rib-eye, cut into 1/4- to 1/2-inch-thick strips
1/4 cup plus 1 teaspoon soy sauce
1/4 medium onion, sliced
3 to 4 pyongo or shiitake mushrooms, sliced
1 carrot, shredded or cut into thin strips
3 green onions, cut into 1-inch pieces
1/4 cup sugar
Toasted sesame seeds for garnish

Steps:

  • Cook the sweet potato noodles in a large pot of boiling water for 4 to 5 minutes. Immediately drain and rinse thoroughly under cold water. Be sure not to overcook the noodles, or they will lose their chewy texture. If you like, cut the noodles with scissors into 6- to 7-inch lengths for easier eating.
  • Blanch the spinach in boiling water. Rinse immediately under cold water, squeeze the water from the leaves and form into a ball, and then cut the ball in half. Combine the spinach, half the garlic, 1/2 teaspoon of the sesame oil, and 1/4 teaspoon salt in a small bowl. Set aside to let the flavors soak in.
  • Heat the vegetable oil in a large skillet over medium-high heat. Add the beef, the remaining garlic, 1 teaspoon of the soy sauce, and 1 teaspoon of the sesame oil. Stir-fry until the beef is cooked, 3 to 4 minutes. Add the onion, mushrooms, and carrot and cook until the onion is translucent, about 3 minutes. Add the green onions and stir-fry for another minute. Remove from the heat.
  • In a large bowl, thoroughly combine the noodles, beef mixture, spinach, remaining 1/4 cup soy sauce, 1 tablespoon sesame oil, and the sugar. Serve warm, sprinkled with sesame seeds.

2 eggs
1 teaspoon salt
¼ teaspoon nutmeg
3 cups flour
1 tablespoon butter
½ cup bacon, diced
1 cup chicken broth
½ cup white wine
1 bunch green onion, chopped
water, to boil
salt, for boiling water

Steps:

  • Peel potatoes. Cut them into 1-inch (2 ½ cm) slices and boil them in salted water for 25 minutes or until they are tender.
  • After boiling, take them out and let them cool for 10 minutes, allowing them to steam to remove excess moisture.
  • Mash potatoes until no lumps remain.
  • Add eggs, salt, nutmeg, and 2 cups (250 grams) flour, and knead into a dough. If dough is too sticky, add more flour until it holds its shape but is still smooth.
  • Put a piece of dough on a floured surface and roll into a 1-inch (2.5 cm) thick log.
  • Cut in 1-inch (2.5 cm) pieces and roll them carefully in your floured palm for a noodle shape. Repeat with the remainder of the dough.
  • Boil noodles in a large pot with salted water. Stir carefully once or twice to make sure noodles don't stick to bottom of the pan. Once they float on the surface, they are cooked and ready to be taken out.
  • In a medium-sized pan, melt the butter.
  • Add noodles and bacon and fry until both are golden brown on all sides.
  • Add chicken broth and white wine and let reduce for a few minutes until sauce becomes slightly creamy.
  • Top with green onions before serving.
  • Enjoy!

The first time I tried the Korean Stir-Fried Glass Noodles a.k.a Japchae was when my manager brought the dish in for a potluck a few years ago. It was literally one of The Best things I've tried, made me go back for refills.

2 lb Beef
1 lb Sweet Potato Noodles
3 medium Carrots
1 white Onion
1/2 bn Green Onions
6 Garlic Cloves
1/2 lb Spinach
4 tbsp Sesame Oil
1 tbsp Olive oil
6 tbsp Soy Sauce
3 tbsp Brown Sugar

Steps:

  • Prepare the ingredients for the recipe.
  • Prepare the ingredients for the sauce.
  • Bring water to a boil, add a bit of oil. Add noodles and cook them for 5-6 minutes. Drain when cooked.
  • Preheat skilled to high heat. Cook the pre-sliced beef until it's golden brown. Season beef with half portions of the following - soy sauce, sesame oil and brown sugar, while it's cooking.
  • Place noodles in a large bowl, top them with cooked beef.
  • Dice onion into long strips. Cut carrots into strips and chop green onion. Preheat an oiled skilled and toss in the carrots and onion.
  • When the veggies soften up, add in the remaining half portions of the following - soy sauce, sesame oil and brown sugar. Add in pressed garlic, green onions and cook for a few minutes until it's softened.
  • Add diced spinach into the mixture and turn off the heat imminently.
  • Add all vegetables to the noodles and toss everything together.
  • Serve while it's still warm. This dish also reheats well.

16 oz spiralized sweet potatoes (or about 2 large sweet potatoes)
1 tbsp olive oil
2 cloves garlic clove (minced)
1/2 tbsp oregano
1 cup marinara sauce of choice
1/4 cup low fat milk
Salt and pepper (to taste)
8 oz crimini mushrooms (sliced)
2 tbsp olive oil (or olive oil)
4 6 oz skinless boneless chicken breasts
2 tsp poultry seasoning mix (or you can combine equal parts onion powder, garlic powder, mustard powder and cumin)
Fresh parsley (chopped, for serving)
Grated Parmesan cheese (for serving)

Steps:

  • In a large skillet over medium-high heat, heat olive oil, then add garlic, oregano, and marinara sauce. Sautee for a couple minutes until well blended and aromatic.
  • Then add the milk and stir to combine for a couple minutes. Add in the sweet potato noodles and season with salt and pepper. Let cook for 5-7 minutes, tossing with tongs to combine with the sauce. Divide the sweet potato noodles into four plates.
  • Wipe off the sauce from the skillet and heat half of the basting oil, then cook the mushrooms with salt and pepper to taste. Cook for 5-7 minutes until browned and softened. Divide between the four plates
  • In the same pan, add remaining basting oil and heat until the oil sizzles.
  • Add the seasoning to the chicken on both sides, then sautee the chicken in the pan for 3-4 minutes per side until juices run clear and chicken is browned on both sides. Divide the chicken into the four plates, and slice if you desire.
  • Serve with parsley and grated Parmesan cheese, if you desire.

1 teaspoon vegetable oil
¾ cup boiling water, or as needed

2 tablespoons rice vinegar
4 teaspoons ketchup
¼ teaspoon sesame oil
1 teaspoon white sugar
1 tablespoon Sriracha sauce
1 tablespoon vegetable oil
6 cloves garlic, minced
1 teaspoon red pepper flakes, or to taste
¼ cup thinly sliced green onions
¼ cup chopped fresh cilantro, or to taste

Steps:

  • Combine 1 cup potato starch, salt, and vegetable oil in a bowl. Add a splash of boiling water at a time, stirring between additions, until you get a perfectly textured dough.
  • Transfer to a work surface dusted with a little potato starch. Working quickly while the dough is still warm, knead, adding more potato starch if necessary, until smooth and elastic.
  • Bring a large pot of lightly salted water to a boil. Set out a large bowl of cold water.
  • While the water is boiling, roll dough to a thickness of 1/8 inch. Cut into 1/4-inch noodles with a pizza cutter. Separate noodles.
  • Add potato noodles (in batches if desired) and cook until they float, about 1 minute. Transfer to the bowl of cold water. Repeat to cook remaining noodles.
  • Whisk oyster sauce, soy sauce, rice vinegar, ketchup, sesame oil, sugar, and Sriracha together in a bowl.
  • Heat vegetable oil in a skillet over medium-high heat. Add garlic and sizzle for 15 seconds. Add 1 teaspoon red pepper flakes and green onions; stir-fry for a just few seconds. Before the garlic starts to brown, add in the potato noodles. It's okay that some water comes into the pan as it will stop the cooking process and prevent the garlic from burning.
  • Add sauce and stir until noodles are coated. Cook until noodles are heated through and sauce starts to simmer, 1 to 2 minutes. Turn off the heat and stir in 1/4 cup chopped cilantro.
  • Divide noodles into 2 bowls and garnish with more cilantro and red pepper flakes.

  • Soak Korean glass noodles (Dangmyeon or Vermicelli) and any dried mushrooms in room temp water for 2- 3 hours. You can also soak both mushrooms and glass noodles overnight.
  • Clean and cut other vegetables: julienne carrots, onions and cut green onions into similar lengths as carrots and onions. Split lengthwise in half if the white part of green onion is thicker than a pencil.
