SWEET POTATO MUFFINS



Sweet potato muffins image

These tasty muffins are the perfect brekkie, and sure to keep you feeling full till lunch.

olive oil
600 g sweet potatoes or ½ a butternut squash
4 spring onions
1-2 fresh red chillies
6 large free-range eggs
3 tablespoons cottage cheese
250 g wholemeal self-raising flour
50 g Parmesan cheese
1 tablespoon sunflower seeds
1 tablespoon poppy seeds

Steps:

  • Preheat the oven to 180°C/350°F/gas 4. Line a 12-hole muffin tin with paper cases or 15cm folded squares of greaseproof paper, then lightly wipe each one with oiled kitchen paper.
  • Peel the sweet potatoes or squash and coarsely grate into a large bowl. Trim the spring onions, then finely slice with the chilli and add to the bowl, reserving half the chilli to one side.
  • Crack in the eggs, add the cottage cheese and flour, then finely grate in most of the Parmesan and season with sea salt and black pepper. Mix until nicely combined.
  • Evenly divide the muffin mixture between the cases. Sprinkle over the sunflower and poppy seeds, then dot over the reserved slices of chilli.
  • Use the remaining Parmesan to give a light dusting of cheese over each one, then bake at the bottom of the oven for 45 to 50 minutes (if using squash, it'll be a bit quicker - check after 35 minutes), or until golden and set.
  • These are amazing served warm 5 minutes after taking them out of the oven, and good kept in the fridge for a couple of days. Enjoy 2 muffins per portion.

Fluffy Sweet Potato Muffins image

Plan to prepare the sweet potatoes at least an hour-and up to 3 days ahead-before you start making the muffins so it has time to cool. See the Notes for options for the sweet potato. These are very lightly sweet. Add 1/4 cup brown sugar if desired to make them sweeter.

1 cup mashed sweet potato ((very smooth and cool or at room temperature))
1 cup milk
1/4 cup melted unsalted butter ((slightly cooled; 1/2 stick))
1/4 cup maple syrup
1 egg ((lightly beaten))
2 teaspoons pure vanilla extract
1 cup all purpose flour
3/4 cup whole wheat flour
2 teaspoons baking soda
1 teaspoon cinnamon ((or pumpkin pie spice)
1/4 teaspoon salt
optional: chocolate chips or fresh lemon zest

Steps:

  • Preheat the oven to 375 degrees F and grease a standard size 12 cup nonstick muffin tin well. (I use classic Pam spray.)
  • Add the sweet potato, milk, butter, maple syrup, egg, and vanilla to a medium bowl. Stir together, going slowly and gently, until fully combined together.
  • Stir in the flours, baking soda, cinnamon, and salt.
  • To add chocolate chips, sprinkle a few on top of each muffin before baking. To add lemon zest (without chocolate), stir 1 tablespoon fresh lemon zest into the batter.
  • Divide among the prepared muffin tin, using about 1/4 cup batter in each, and bake for 16-20 minutes or until a cake tester inserted into the center of a muffin comes out cleanly. (In my oven it was right at 18 minutes. To make as mini muffins, bake for about 12-14 minutes.) Let cool for a minute in the pan, then transfer to a wire rack to cool.
  • Serve slightly warm or at room temperature.

3 cloves garlic, minced
2 tablespoons all-purpose flour
¾ cup milk
½ cup freshly grated Parmesan cheese
salt and ground black pepper to taste
2 large potatoes, peeled and thinly sliced

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray 12 muffin cups with cooking spray or grease with butter.
  • Heat butter in a saucepan over medium heat. Cook and stir garlic in the melted butter until fragrant, about 1 minute. Add flour to garlic mixture; cook and stir until mixture is smooth and thickened, about 2 minutes.
  • Slowly pour milk into flour-butter mixture while continuously stirring with a whisk until sauce is smooth and thickened, about 5 minutes. Remove saucepan from heat and stir Parmesan cheese into sauce until cheese melts from the heat of the sauce; season with salt and pepper.
  • Divide the potatoes among the 12 prepared muffin cups and spoon cheese sauce over potatoes.
  • Bake in the preheated oven until potatoes are tender, about 25 minutes.

I adapted a pumpkin muffin recipe to come up with this delectable sweet potato concoction that is a true muffin, and not a cake! I think the sweet potato lends even more flavor than pumpkin. Added bonus: this recipe just happens to be dairy free, a plus for those who are intolerant to dairy.

1 cup cooked, mashed sweet potato
½ cup olive oil
⅓ cup water
2 eggs, beaten
1 ⅔ cups all-purpose flour
1 teaspoon ground cinnamon

½ cup chopped pecans

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin pan or line with paper liners.
  • Combine sugar, sweet potato, olive oil, water, and eggs in a bowl. Combine flour, cinnamon, baking soda, baking powder, and salt in a second bowl. Add flour mixture and pecans to the sweet potato mixture. Fold gently until just moistened, being careful not to overmix. Spoon batter into the prepared muffin cups, filling each 3/4 full.

Steps:

  • Preheat oven to 350°. In a large bowl, whisk the first 8 ingredients. In another bowl, whisk eggs, sweet potatoes, honey, coconut oil, olive oil and vanilla until blended. Add to flour mixture; stir just until moistened., Fill 12 greased or paper-lined muffin cups three-fourths full. Combine topping ingredients; sprinkle over batter.   • In a bowl, beat egg and milk. Combine the flour, sugar, baking powder and salt; stir into egg mixture just until moistened. Fold in potatoes and parsley.   • Preheat oven to 350℉ (180℃) F. Coat a 12-cup muffin pan generously with non-stick cooking spray. Peel potatoes, grate them through the large holes of a box grater into a large bowl. Then squeeze grated potatoes in small batches between your hands over the sink to remove excess water. This incorporates bits of potato skin throughout the latke providing a significant boost to the potato flavor. Extra crispy potato latkes To achieve latkes that are light but not greasy with creamy interiors and a crispy potato outer shell, remove as much water as possible from the shredded potatoes before cooking. Wring the shredded potatoes in a kitchen towel which will remove excess moisture. Then microwave the shredded potatoes for 30 seconds on high, fluff with a fork and repeat until the potatoes are just warmed through but not hot. This process will release more moisture from inside the potato shreds and cause the starch in the potatoes to form a gel.

2 medium onions, chopped
1 1/4 teaspoons paprika
1 3/4 pounds baking potatoes, peeled
2 large eggs, lightly beaten
1 teaspoon salt, or to taste
1/2 teaspoon freshly ground black pepper

Steps:

  • Preheat oven to 400 degrees. Use a little of the oil to grease a nonstick 12-muffin tin.
  • Heat 1 tablespoon vegetable oil in a heavy nonstick skillet. Add the onions, and saute over medium heat until softened, about 10 minutes. Stir in 1 teaspoon paprika; remove from heat.
  • Coarsely grate the potatoes by hand or in a food processor. Put them in a large strainer, and press out excess liquid. Transfer them to a bowl, and stir in the onions, eggs, salt and pepper.
  • Put a scant 1/3 cup of the potato mixture in each muffin tin. Smooth the tops lightly, brush with the remaining oil and sprinkle with a little paprika. Bake about 40 minutes, until brown at the edges and firm.
  • Remove the muffins and serve at once, or leave in the pans to keep warm for 15 minutes or so.
