VEGETABLE BEEF CASSEROLE
This easy one-dish recipe has been a family favorite ever since my husband's aunt handed it down to me 35 years ago. Try adding whatever vegetables you have on hand. A simple salad goes nicely with this dish. -Evangeline Rew, Manassas, Virginia

Steps:
- In a 3-qt. casserole, layer half the potatoes, carrots, celery, green beans and onion. Crumble half the uncooked beef over vegetables. Sprinkle with 1/2 teaspoon each thyme, salt and pepper. Repeat layers. , Top with tomatoes. Cover and bake at 400° for 15 minutes. Reduce heat to 350°; bake about 1 hour longer or until vegetables are tender and meat is no longer pink. Sprinkle with cheese; cover and let stand until cheese is melted.

- Cut beef into thin strips (beef is easier to cut if partially frozen, about 1 1/2 hours). Heat oil and garlic pepper in 10-inch nonstick skillet over medium-high heat. Cook beef in oil, stirring occasionally, until brown.

GROUND BEEF AU GRATIN POTATOES WITH VEGETABLES
I had leftovers from Recipe#78028,and didn't just want to heat them up and use them as the same side dish. So, I cooked up ground beef with onions,and seasonings. Added some leftover veggies and came up with what I think turned out to be a pretty good recipe. Submitted to Food.com (a.k.a. " ZAAR " )on January 3rd.2012

Steps:
- Preheat oven to 350 degrees, and lightly grease or spray a 1 1/2 quart baking dish with cooking spray.
- Add beef,onion, and seasoning to a large skillet and over medium heat, cook meat until no longer pink.
- Drain, and return meat to skillet.
- Add potatoes and vegetables to meat,stirring well to combine.
- Place mixture into prepared pan, and sprinkle with cheese.
- Bake for 30 minutes or until bubbly and cheese is melted.

LOADED VEGETABLE MEATLOAF
Steps:
- Heat oven to 350 F.
- In a large bowl, combine the ground beef and pork; blend well.
- Peel the onion and chop it finely . Remove the seeds and stem from the bell pepper and chop it finely.
- Peel and shred the potato and carrots.
- Add the chopped and shredded vegetables to the meat along with the vegetable broth , salt, herb seasoning , pepper, and breadcrumbs.
- Beat the egg lightly and add it to the bowl with half of the ketchup (1/3 cup).
- Use your hands to blend all of the ingredients.
- Pack the meat and vegetable mixture into a lightly greased 9-by-5-by-3-inch meatloaf pan or loaf pan, or shape the mixture into a loaf shape and place in a rimmed, foil-lined baking pan.
- Bake the meatloaf in the preheated oven for 1 hour.
- Carefully pour off and discard excess grease and spread the remaining 1/3 cup of ketchup over the top of the loaf; bake for about 20 to 30 minutes longer.

- This is for the BBQ.
- In tin-foil wrap (you may need two pieces folded together):.
- Slice the potatoes.
- Slice the onions.
- Dice the pepper.
- Slice the kielbasa.
- Mix it all together.
- Add a few pads of butter and then add garlic powder and onion salt to your liking.
- Wrap.
- Put on the BBQ about 25 minutes on each side.
- Poke with fork to see if done.
