CREAMY POTATO KALE GRATIN RECIPE BY TASTY

Steps:
- Thinly sliced the potatoes, roughly ¼-inch (5mm) thick.
- Remove stems from kale and cut into ¾ inch-1 inch (2 cm) pieces.
- For the Béchamel sauce, add butter and garlic to a saucepan on medium heat and sauté until aromatic.
- Add flour and mix until mixture browns slightly.
- Add milk, salt, and pepper and simmer on low heat until mixture thickens.
- In a medium-sized oven dish, lay a hefty bed of kale adding olive oil, salt, and pepper and gently mixing.
- Starting from one side layer your potatoes across the kale covering the entire dish.
- Gently press the potatoes and kale mixture down to make more room in the dish.
- Drizzle half of the Béchamel sauce across all of the potatoes.
- Repeat the process and add another layer of kale, olive oil, salt, pepper, and potatoes and cover with remaining sauce.
- Garnish to taste with parmesan, Gruyère, and bread crumbs
- Bake at 350°F (180°C) for 30 minutes covered. Remove cover and bake an additional 30 minutes.

The ultimate side dish, this recipe is perfect for alongside Christmas dinner or any time you're entertaining.This gratin has added bacon and kale for some extra flavour and goodness. You can use a mandolin to get perfect potato slices - just be careful of your fingers! - Heat a drizzle of oil in a large frying pan on medium heat. Cook bacon for a few minutes or until starting to turn crispy. Set aside.
- Add onion to bacon fat and cook for a few minutes until soft, then add garlic and thyme, and continue cooking for 2 minutes more. Add chopped kale and continue cooking for a few minutes until kale has wilted.
- Preheat oven to 200°C. Grease a medium-large baking dish with butter. Roughly layer one third of the potato slices over the base of the dish (slightly overlapping) and season with a little salt and pepper. Spoon over half the kale mixture and sprinkle over half the bacon. Arrange half of remaining potato slices on top and season with salt and pepper. Add remaining kale mixture and then the bacon. Finally, top with the last layer of potato slices.
- Pour over cream. Season with salt and pepper. Cover with foil and bake for 45 minutes or until potato is almost tender. Remove foil, sprinkle over cheese and bake for a further 20-30 minutes until potatoes are cooked all the way through and cheese is golden and bubbling. Allow to stand for 10-15 minutes before serving.
DIANE'S COLCANNON
While colcannon seems to be associated with St. Patrick's Day, I love the combination of potatoes, cabbage, onion, and bacon all through the cooler months of fall and winter! I attend an annual St. Paddy's Day party and this is the dish I'm always asked to bring...and I'm happy to say that the bowl comes home empty every time!

Steps:
- Place potatoes in a saucepan with enough water to cover. Bring to a boil, and cook for 15 to 20 minutes, until tender.
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, reserving drippings, crumble and set aside. In the reserved drippings, saute the cabbage and onion until soft and translucent. Putting a lid on the pan helps the vegetables cook faster.
- Drain the cooked potatoes, mash with milk and season with salt and pepper. Fold in the bacon, cabbage, and onions, then transfer the mixture to a large serving bowl. Make a well in the center, and pour in the melted butter. Serve immediately.

Steps:
- Preheat oven to 350°. Butter a 2-quart shallow baking dish.
- Wash, derib and coarsely chop the kale.
- Place in a pot with a little bit of water and steam until almost tender, 5 minutes or so. Check to make sure it's not burning.
- Peel and cut potatoes and onions into 1/8-inch thick rounds.
- If desired, saute onions until lightly browned. It gives more flavor, I think.
- Drain kale and let stand until cool enough to handle. Press out excess water.
- Build up alternating layers of potatoes, onions and kale (two layers each) in baking dish, beginning and ending with potatoes and dotting each onion layer with butter, minced tarragon, salt, pepper and garlic powder.
- Pour half-and-half over top, cover and bake in oven until potatoes are tender and almost all liquid is absorbed, 30-45 minutes.
- Place under broiler, if desired, to brown the top.

POTATO-BACON GRATIN
This potato and bacon gratin was created by Rob Chalmers, a chef de cuisine at Lucques who had a great love of food and a big Boston attitude to go along with it. When he first told me about this gratin, I thought he was joking. That much fat in one pan might put even me over the edge. But lo and behold, bacon, potatoes, and cream really do taste good together!

- Preheat the oven to 350°F.
- Cut the bacon into 3/8-inch-thick slices, and stack them in two piles, then cut the bacon crosswise into 3/8-inch even-sided rectangular shapes, or lardons.
- Heat a large sauté pan or Dutch oven over medium-high heat for a minute. Swirl in the olive oil and add the bacon. Cook the bacon about 5 minutes, stirring often, until tender and lightly crisped. Remove to a plate with a slotted spoon, reserving the bacon fat in the pan.
- Add the onions, 2 teaspoons thyme, 1 teaspoon salt, and some pepper to the pan. Cook 15 minutes, stirring and scraping with a wooden spoon, until the onions start to caramelize. Turn the heat down to low, and continue to cook, about 10 minutes, stirring often, until the onions are a deep golden brown. Remove from the heat and set aside.
- Use a mandoline to slice the potatoes into 1/16-inch-thick rounds. Pour 1/2 cup cream evenly onto the bottom of a 9-by-9-inch (or equivalent) gratin dish. Place one layer of potatoes side by side, slightly overlapping, on the bottom of the dish. Spread a third of the onions over them and scatter a third of the bacon on top. Arrange a second layer of potatoes, drizzle a 1/4 cup cream over it, and season with 1/4 teaspoon salt, a healthy pinch of pepper, and 1 teaspoon thyme. Press the potatoes down with your fingers, letting the cream soak up through the layers. This will ensure that the cream is evenly distributed and coats the potatoes well.
- Arrange another layer of potatoes on top, followed by another third of the caramelized onions and the bacon. Drizzle over another 1/4 cup cream, and continue with two more layers of potatoes. Drizzle with 1/2 cup cream and season with 1/4 teaspoon salt and a pinch of pepper. Press the potatoes down with your fingers again. Scatter the rest of the onions and bacon over the potatoes, and drizzle with 1/3 cup cream. Season one last time with 1/4 teaspoon salt, 1 teaspoon thyme, and a pinch of pepper. The cream should cover the potatoes but not be "soupy." Add more cream if the gratin seems dry.
- Cover tightly with aluminum foil. Bake 1 1/2 hours, until the potatoes are tender when pierced. Remove from the oven, and carefully uncover. Turn the oven up to 425°F and return the gratin to the oven. Cook another 20 minutes or so, until the top is nice and golden brown (as in "gratinéed").
