1 small onion, chopped
1 cup cubed fully cooked ham
2 small potatoes, chopped
2 small tomatoes, chopped
3 green onions, chopped
3 tablespoons minced garlic
3 large eggs, beaten
salt and ground black pepper to taste
⅓ cup shredded Cheddar cheese, divided

Steps:

  • Heat vegetable oil in a skillet over medium heat; cook and stir onion, ham, potatoes, tomatoes, green onions, and garlic in the hot oil until potatoes are tender, 15 to 20 minutes. Transfer vegetable mixture to a plate.
  • Pour eggs into the same skillet and season with salt and pepper. Tilt skillet until eggs cover the entire bottom; cook over low heat until eggs are set in the middle, about 5 minutes. Spoon about 1/4 cup vegetable mixture onto 1 side of the omelet; sprinkle half the Cheddar cheese over vegetable mixture. Fold the other half of omelet over the filling. Top omelet with remaining Cheddar cheese.

1 large baking potato
6 eggs
1 teaspoon salt
½ teaspoon ground black pepper
¼ cup chopped fresh parsley
2 tablespoons olive oil
1 onion, chopped
¼ cup chopped red bell pepper
¼ cup chopped fresh mushrooms
½ cup chopped ham
1 tomato, sliced
¼ cup shredded Cheddar cheese

Steps:

  • Bring a medium pot of salted water to a boil. Add potato and cook until tender but still firm, about 15 minutes. Drain, cool, peel and slice.
  • Preheat oven to 350 degrees F (175 degrees C). Beat together eggs, salt, pepper and parsley.
  • In a cast iron skillet, heat olive oil over medium-high heat. Saute onion and red pepper until soft, then stir in mushrooms. When mushrooms start to shrink, add the chopped ham, potato and tomato slices. Pour in the egg mixture; gently stir to combine.
  • Sprinkle cheese on top of eggs and place skillet in preheated oven. Bake until eggs are firm, about 10 to 15 minutes. Allow to cool briefly before serving.

1 package (17-1/4 ounces) frozen puff pastry, thawed
1/4 cup butter, cubed
3 cups sliced red potatoes
1 cup thinly sliced onion
1/4 teaspoon salt
1/4 teaspoon pepper
OMELETS:
6 large eggs, lightly beaten
1/4 cup minced fresh parsley
2 tablespoons water
Dash each salt and pepper
2 tablespoons butter
FILLING:
2 cups shredded cheddar cheese
1-1/2 cups cubed fully cooked ham
1 large egg, lightly beaten
1 tablespoon water

Steps:

  • On a lightly floured surface, roll each puff pastry sheet into a 12-in. square. Place one square in a 10-in. quiche dish; set dish and remaining pastry aside., In a large skillet, melt butter. Add potatoes, onion, salt and pepper; cover and cook for 10-12 minutes or until potatoes are tender and golden brown, stirring occasionally. Set aside., In a large bowl, beat the eggs, parsley, water, salt and pepper. In a 10-in. skillet, melt 1 tablespoon butter; add half of the egg mixture. Cook over medium heat. As eggs set, lift edges, letting uncooked portion flow underneath. Continue cooking until set. Slide omelet onto a baking sheet. Repeat with remaining butter and egg mixture to make a second omelet., Sprinkle 1 cup cheese over prepared pastry. Top with one omelet and half of the potato mixture. Layer with ham and the remaining potato mixture, cheese, omelet and puff pastry. Trim pastry to fit dish; seal and flute edges., In a small bowl, combine egg and water; brush over pastry. 1 onion
1 garlic clove
100 grams ham
2 eggs
1 vegetable oil
parsley

Steps:

  • Cut the potatoes into small cubes. Peel the onion and garlic and chop into small cubes. Heat the oil in a pan and sweat the garlic and onions until translucent. Add the potatoes, season with salt and pepper and sauté while turning.
  • Chop the ham into small pieces and add to the pan. Whisk the eggs, season with salt and pepper and pour evenly over the vegetables and ham. Leave to thicken over medium heat. Garnish with finely chopped parsley, fold the omelet over and serve hot.

6 large potatoes (3 pounds)
1 (10 ounce) package pie crust mix
6 ounces cheddar cheese (grated)
3 tablespoons all-purpose flour
1 large onion, slice
1 -2 cup leftover ham, pieces (cubed)
2 garlic cloves, minced
1 1/4 teaspoons salt
1/4 teaspoon pepper
1/8 teaspoon ground nutmeg
1 cup milk
1 tablespoon butter or 1 tablespoon margarine
1 egg yolk
1/2 cup half-and-half cream

Steps:

  • Scrub potatoes, pare and slice very thin.
  • Put potatoes in a large glass bowl and cover with cold water; set aside.
  • Prepare pie crust mix according to package directions; wrap in plastic and set aside.
  • Using a food processor or food grater, coarsely grate Cheddar cheese. Put in a small bowl; add flour and toss to mix well.
  • Preheat oven to 350°F.
  • Lightly grease a shallow two quart oval, round or rectangular baking dish.
  • Drain potatoes thoroughly; pat dry with paper towels. Alternately layer potatoes with sliced onion, ham and cheese-flour mixture, sprinkling with garlic, salt, pepper and nutmeg as you layer.
  • Pour on milk; dot with butter and set aside.
  • On a lightly floured surface, roll pastry out to a 15 x 11 inch rectangle, or a 13 inch circle, depending on the size and shape of your baking dish. Gently lift pastry and place on baking dish to cover potato mixture completely.
  • Turn edges of pastry under and flute decoratively with your fingers. Cut four gashes in pastry to allow steam to escape while baking.
  • Mix egg yolk with one tablespoon of the half and half cream; brush over the pastry to glaze.
  • Bake 60 minutes or until pstry is golden brown and potatoes are done.
  • Remove from oven; pour remaining half and half cream through the vents in the top of the pastry. Let stand 15 minutes before serving.

350g new potatoes
375g ready-rolled puff pastry
100g crème fraîche
50g thinly sliced ham
125g brie or camembert cheese, halved and sliced
green salad , to serve (optional)

Steps:

  • Boil the potatoes in salted water for 8-10 mins, until tender but still firm. Leave to cool, then slice.
  • Heat the oven to 200C/180C fan/ gas 6. Unroll the pastry with its baking parchment on a baking tray. Reserve 1 tbsp of the crème fraîche, then spread the rest over the pastry, leaving a 2cm border around the edge. Season. Layer the potatoes, ham and cheese over half of the pastry, seasoning the potatoes as you go.
  • Fold over the other half of the pastry and use a fork to seal the edges. Trim with a knife for a neat finish - the pie should look like a big sausage roll. Mix a little water into the reserved crème fraîche, then brush all over the pastry. Make a few cuts along the length, then bake for 35-40 mins until golden. Leave to cool for 10 mins, then serve with a salad, if you like.

I originally got this recipe from a magazine(maybe Taste of Home?). Everyone loved it and it has become one of my husbands favorite meals. I made a big batch when my in-laws were visiting once and my mother-in-law ate on it for 3 days! It's all she wanted for breakfast AND lunch until it was all gone!

1 pkg frozen puff pastry, thawed
1/4 c butter
3 c peeled, sliced potatoes(sometimes i leave the skins on)
1 c thinly sliced onion
1/4 tsp salt
6 eggs, lightly beaten
2 Tbsp water
salt and pepper
2 c shredded cheddar cheese
1 1/2 c fully cooked cubed ham
1 egg lightly beaten with 1t water

Steps:

  • 1. Preheat oven to 375
  • 2. On lightly floured surface, roll each puff pastry sheet to a 12 in. square. Place one sqare in lightly greased 10 in quiche dish or 10 in. glass cake pan. Set aside.
  • 3. Cook potates, onion,and salt in the 1/4c melted butter for 10-12 minutes, stirring occasionally until potatoes are tender and starting to brown. Set aside.
  • 4. Combine the beaten eggs with the 2T water, salt and pepper to taste. Heat and spray a 10 in skillet or omelet pan and add half of the eggs. Cook omelet, lifting edges to let uncooked eggs flow underneath. Cook until set, then slide from pan onto a plate. Repeat with remaining egg.
  • 5. Sprinkle 1c of the cheese over the pastry in the dish. Top with one of the omelets, the potatoes, the ham, another cup of cheese and the other omelet. Carefully place the remaining rolled puff pastry sheet on top of fillings. Flute edges of pastry and trim. Brush top with the egg/water mixture.
  • 6. Bake 30-35 minutes until pastry is golden brown. Let stand 10 min. before cutting into wedges to serve.
